Chicken Kisses Food

CHICKEN KISHK

Steps:

• In large pot, combine chicken parts and enough water to cover by two inches. Cover, set over high heat, and bring to boil. Lower heat and simmer 20 minutes. Using tongs, transfer chicken to cutting board. When cool enough to handle, remove skin and bones and cut meat into small pieces. Refrigerate until ready to use.
• In medium bowl, whisk together yogurt and flour. Whisk in milk. Strain through sieve lined with cheesecloth into large bowl. Cover and set aside at room temperature 1 hour.
• In medium skillet over moderately low heat, heat oil. Add onion and sauté until golden yellow, about 10 minutes. Remove from heat and set aside, reserving cooking oil as well as onions.
• In large saucepan over high heat, bring stock to boil. Add garlic, salt, and pepper, and boil, uncovered, 5 minutes. Lower heat to moderately low and stir in yogurt mixture. Simmer, whisking constantly, until sauce thickens, about 5 minutes. Stir in chicken and 1 tablespoon onions and simmer until just heated through, about 5 minutes.
• To serve, pour into deep serving dish and sprinkle with remaining onions and cooking oil.

CHICKEN KISSES

Steps:

• Preheat an outdoor grill for medium high to high heat and lightly oil grate.
• Take two pieces of aluminum foil about 12 to 15 inches each and lay them down in a cross pattern, one over the other. Place the chicken breast, onion, potato, green bell pepper and barbecue sauce in the center of the foil. Bring up all eight corners of the foil and twist the top together to resemble a "kiss".
• Grill each package over medium high heat for 30 minutes, or until internal chicken temperature reaches 180 degrees F (80 degrees C).

CAJUN KISSES

Steps:

• Cut tops off of jalapeno peppers and remove seeds.
• Stuff pepper with small amount of cheese, then 1 shrimp and then fill the remainder with more cheese.
• Wrap pepper with a strip of bacon, using a toothpick to secure in place.
• Place each "kiss" on a broiler pan.
• Broil until bacon is crispy.
• Drain on a paper towel and serve on a plate with sour cream for the dipping.

GRILLED CHICKEN KISSES

Steps:

• Tear off 6 sheets of heavy duty aluminum foil about 20 inches long. Spray center of foil with cooking spray. Place sliced potatoes, about one potato per packet, onto center. Season with cajun spice and pepper, to your taste ( or use your favorite seasonings) Place about 1/2 cup of baby carrots onto potaoes.
• Put about 1/4 of a cup of the barbecue sauce on top. Then, place a chicken breast on top of potatoes, carrots, and sauce. Season chicken with the cajun spices and pepper. Place onion rings, as many as you like, on top of chicken. Finish off the packet with another 1/4 cup of the barbecue sauce over the onions.
• Gather up the foil around the chicken and veggies, and twist the top tightly to seal. It should resemble a BIG candy kiss. Repeat steps for all packets. Place on a medium hot grill. Mine is gas, I have it at about 350. I just leave them on the grill for 45 minutes All of these portions can be easily adjusted to each packet. Be careful when opening them.
