2 sticks (1 cup) unsalted butter, at room temperature
1/4 cup cream cheese
1/4 cup grated pepper jack
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh flat leaf parsley
1 teaspoon smoked paprika
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
2 pounds boneless, skinless ground chicken (mix of white and dark meat)
2 cups all-purpose flour
4 eggs, beaten
2 cups seasoned Italian breadcrumbs
2 cups panko bread crumbs
Kosher salt and freshly ground black pepper
Oil, for frying

Steps:

  • For the compound butter: Add the butter, cream cheese, pepper jack, dill, parsley, paprika, garlic, 2 tablespoons salt and 1 tablespoon pepper to a food processor and pulse, occasionally scraping down the sides, until well combined. Place the compound butter on a piece of plastic wrap and roll it in a tube shape about 2-inches in diameter, twisting the ends to secure. Place it in the freezer until completely solid, at least 3 hours.
  • Divide the chicken into four 8-ounce patties. Remove the log of compound butter from the freezer and place it in the center of the chicken. Wrap the chicken around the compound butter and seal to form it tightly and evenly around--like a large egg shape.
  • For the breading: Preheat the oven to 350 degrees F. Place a rack on top of a baking sheet.
  • Set up a dredging station with the flour, beaten eggs, seasoned Italian breadcrumbs and panko. Season each with 2 tablespoons salt and 1 tablespoon pepper. Dredge the chicken lightly in the flour, egg, then Italian breadcrumbs. Pass the chicken back through the egg and then finally in the panko for a second coating. Place on the prepared rack.
  • Fill a pot with 2 to 3 inches of oil and heat to 350 degrees F. Fry the chicken until golden brown, 2 to 3 minutes per side. Place the chicken back on the rack and bake until cooked through, 5 to 6 minutes. Let the chicken rest for 1 to 2 minutes before serving.

2 teaspoons extra-virgin olive oil
2 Cornish hens (1 1/4 to 1 1/2 lb each), rinsed and patted dry
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 cup bottled mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon finely grated fresh lemon zest
2 tablespoons finely chopped fresh chives

kitchen string; a small (13- by 9-inch) roasting pan; an instant-read thermometer

Steps:

  • Put oven rack in middle position and preheat oven to 500°F.
  • Trim off and discard about 1/4 inch from top of garlic heads to expose cloves, then put heads on a sheet of foil. Spoon oil over garlic, then wrap up foil tightly to enclose. Roast garlic on oven rack until very soft, about 40 minutes.
  • Meanwhile, season hens inside and out with 1 teaspoon salt and 1/4 teaspoon pepper. Tie legs together with string and tuck wing tips under. Transfer to roasting pan and roast alongside garlic until hens are golden brown and thermometer registers 170°F when inserted into leg joint, 30 to 40 minutes. Let stand, loosely covered with foil, 15 minutes.
  • Unwrap garlic carefully and cool slightly, then squeeze pulp into a bowl. Add remaining ingredients (including salt and pepper plus 2 tablespoons pan juices from hens if desired) and stir until combined well.
  • Halve hens lengthwise. Serve with aioli.

1 tablespoon chopped fresh parsley
5 cups honey-sweetened corn flake cereal
3 tablespoons chopped fresh parsley

6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
¼ cup buttermilk

Steps:

  • In a small bowl, stir together the butter, 1/8 teaspoon garlic powder, and 1 tablespoon of parsley. Spread the butter mixture 1/2 inch thick onto a piece of aluminum foil, and place in the freezer to harden.
  • Place the cereal in a large plastic resealable bag, and crush with a rolling pin. Add the remaining parsley, 1 1/2 teaspoons garlic powder, paprika and salt, seal the bag, and shake to mix.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  • Remove the slab of butter mixture from the freezer, and slice into 6 strips. Place one strip onto the center of each pounded chicken breast, roll up and secure with toothpicks. Dip rolled chicken breasts into buttermilk, then into the cereal mixture. Place coated breasts into the prepared baking dish.
  • Bake, uncovered, for 30 to 40 minutes until chicken is no longer pink, and the juices run clear. The outside should be crispy and golden.

Steps:

  • Preheat the oven to 400°F (200ºC). Line a baking sheet with parchment paper and set a wire rack inside.
  • Drain and rinse the artichokes. Pat them dry.
  • In a medium bowl, combine the bread crumbs and vegetarian Parmesan cheese.

Steps:

  • Mix spread, chives and garlic powder; shape into 3x2-inch rectangle. Cover and freeze about 30 minutes or until firm.

1 lemon (zest and 2tsp juice)
2 eggs
250g breadcrumbs
2 chicken breasts
200g plain flour
Large handful parsley
2 large tbsp mayonnaise
1tsp Dijon mustard
Salt (to taste)
1 bulb garlic + 5 cloves
Pepper (to taste)
1tsp smoked paprika

Steps:

  • Preheat your oven to 180ºC/160ºC fan. Peel the outer, white skin off of the bulb of garlic and chop of the top. Then drizzle over olive oil and wrap in tin foil. Roast for 40 minutes
  • Meanwhile, roughly chop the garlic cloves, chicken and the parsley and zest the lemon
  • Place the chopped ingredients into a food processor to blitz on high until well combined, adding salt and pepper as you do so
  • Fill one bowl with flour, another with breadcrumbs, and crack the eggs into a third and breat them with a fork. Form the chicken mixture into small balls and coat in flour, then egg, then breadcrumbs. Repeat with all of the chicken
  • Set the mini kievs aside on a plate and leave to rest in the fridge and make the aioli. When the garlic is cool enough to handle, squeeze the cloves into a bowl and mash with a fork, then mix with mustard, paprika, lemon juice, mayonnaise, salt and pepper
  • Pour enough oil to shallow fry into a pan and, once hot, fry the mini kievs for around 7 minutes or until golden brown, turning halfway
  • Once done, place the kievs on a paper towel to soak up excess oil, serve with the aioli and enjoy!

4 focaccia rolls, or other good-quality round crusty sandwich roll
4 slices provolone
Romaine lettuce
2 tomatoes, sliced
1 red onion, sliced
Aioli, recipe follows
1/4 cup chopped basil
2 egg yolks*
Salt

1 tablespoon Dijon mustard
2 cups safflower oil
1 tablespoon lemon juice

Steps:

  • Combine the ginger, garlic, green onions, chile flakes, and peanut oil. Add the chicken and toss to coat. Marinate overnight in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Remove the chicken from the marinade and place in a small roasting pan or on a baking sheet. Roast the chicken for 15 to 20 minutes, or until cooked through. Cut the chicken crosswise into very thin slices.
  • Raise the oven temperature to 450 degrees F.
  • Slice the rolls horizontally and place on a baking sheet with the top half cut-side down and the bottom half with cut-side up. Place 1 slice of provolone on the bottom half of each roll. Cook until the cheese is melted and the rolls are lightly toasted, about 3 minutes.

  • In a food processor or blender, combine the garlic, basil, egg yolks, salt, pepper, and Dijon mustard and process to combine. With the machine running, add the oil in a slow, steady stream until it is all added and the mixture is emulsified. Add the lemon juice and check the seasoning.

  • Form the breading: Add the flour onto a shallow plate, crack the eggs in another shallow plate and whisk, and in a third bowl the breadcrumbs. Roll the frozen chicken first into the flour and make sure it is coated evenly, then roll it into the eggs and finally roll it through the breadcrumbs. Repeat with all the chicken pieces.
