CHICKEN KALE CURRY WITH BROWN RICE
Looking to tweek an old favorite for cleaner eating, this is the result. Add raisins, flaked coconut or chopped nuts to individual servings to suit personal tastes. Try it out!

Steps:
- Prepare brown rice on stovetop or in rice cooker.
- Melt butter in a large skillet over medium to medium high heat.
- Add garlic onion and chicken and saute for 7 minutes.
- Add carrots, ginger, curry, soup base, coconut milk and 1.5 cups water (reserving 1/2 cup for use with corn starch). Cover and let simmer for 7-10 minutes.
- Prepare slurry with remaining half cup water and cornstarch and slowly pour into sauce, mixing well. Let simmer 10 more minutes to thicken.
- Stir kale into sauce, mixing throughout. Heat through (3-5 minutes), then reduce heat.
- Serve Chicken Kale Curry sauce over brown rice and ENJOY!

Steps:
- Pierce the sweet potatoes with a fork or knife point in several places, then bake in a pre-heated 400 degree oven for about 1 hour, or until tender. Set aside.
- Slice the chicken breast into small cubes, approximately 1 inch thick.
- Heat the oil in a deep pot, carefully add the chicken pieces. Allow to cook undisturbed on once side for about 3-4 minutes, or until golden brown. Flip the chicken and allow to brown on the other side. Remove the chicken to a bowl and set a side.
- To the hot pan, add the onions and cook, stirring occasionally, on medium-low heat until they soften and start to take on color.
- Add the dried spices, stir and cook for 1-2 minutes.
- Stir in the tomatoes, sugar, and water. Raise the heat to high and bring to a boil. Stir, cover, reduce heat and simmer gently for 20 minutes.
- Add the reserved chicken, chickpeas, chopped kale and simmer until the greens are tender, 3-8 minutes. Then turn off the heat and let cool for about 10 minutes before serving.
- Cut each sweet potato in half.
- To serve, top a sweet potato half with the curry, a spoonful of yogurt, and chopped cilantro or mint (if using).

Steps:
- Heat the oil in a frying pan over a high heat and fry the chicken for 3 mins. Stir in the chorizo and cook for 2 mins more until the chicken is light golden and the chorizo has released its fat. Scoop the chicken and chorizo into a bowl using a slotted spoon, leaving as much oil in the pan as you can. Set aside.
- Tip the leek and red pepper into the pan and cook for 2 mins, stirring frequently until slightly softened. Add the kale and fry for 1 min more until the leaves have just started to wilt at the edges.
- Drizzle in the soy sauce and vinegar and scatter in the rice, breaking up any large chunks with a wooden spoon. Stir the chicken and chorizo back into the pan and toss everything together to combine. Cook for 3 mins until the rice is heated through, then serve.

- Boil the rice in a medium saucepan with 3 and 1/2 cups of water over medium-high heat. Once the water boils, reduce the heat to medium low. When the water has evaporated (about 15-20 minutes), turn off the heat and cover the rice to allow it to soften more.
- Bring the chicken breasts to boil in a saucepan with 3 cups water over medium-high heat, enough water to cover the chicken breasts. When the water has boiled, reduce the heat to medium-low, and let the chicken cook for another 15-20 minutes, depending on the size of the meat. Cut into the chicken to see if it has been fully cooked (the meat inside should not be pink). Turn off the heat, drain the water, and let the chicken cool. When it is cool enough to handle, shred the chicken with your hands.
- Remove the stems from the kale, and chop the leaves into smaller pieces. They don’t need to be too small. Using a paper towel, dry the leaves to get out excess moisture. Drier leaves ensure that the kale chips will turn out crunchier. In a large mixing bowl, toss the kale with 1 tablespoon of olive oil, 1/2 tablespoon of sesame oil, and 1 and 1/2 tablespoons of soy sauce. Massage the liquids into the kale. If the leaves still look dry, add a bit more olive oil. Lay the kale onto lined baking sheets in a single layer, and bake for about 12 minutes, or until the kale starts to brown.

- Heat a large saute pan over medium-high. Add 1 tsp olive oil to pan, sear chicken for 3 minutes per side. Remove to a plate and reserve.
- Add remaining olive oil and onion, cook, stirring often, until browned, about 3 minutes. Add garlic, 1 tsp curry powder, smoked paprika and 1/4 tsp of salt. Cook for 30 seconds. Add kale and rice, cook for 1-2 minutes, stirring frequently until kale is slightly wilted.
- Pour in chicken broth, stirring to scrape up brown bits from bottom of the pan, bring to a boil (it should boil almost immediately). Return chicken to pan on top of rice and kale.
