1 box (16 oz.) dry, small elbow macaroni, cooked and drained
1/4 cup cornstarch
2 teaspoons salt
1/2 teaspoon ground black pepper
2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk
2 cups water
1/4 cup butter or margarine
3 cups (12 oz.) shredded sharp cheddar cheese
1 cup (4 oz.) shredded Monterey Jack or hot pepper Monterey Jack cheese
1 pinch paprika

Steps:

  • Preheat oven to 375°F. Grease 13x9-inch baking dish or disposable baking pan.
  • Combine cornstarch, salt and pepper in large saucepan. Stir in evaporated milk, water and butter. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil for 1 minute. Remove from heat. Stir in cheeses until melted. Place macaroni into prepared dish. Pour cheese sauce over macaroni; stir to coat. Sprinkle with paprika.

1-1/4 cups butter, divided
3/4 cup all-purpose flour
2 teaspoons salt
3 quarts milk
3 pounds sharp cheddar cheese, shredded
1-1/2 cups dry bread crumbs

Steps:

  • Cook macaroni according to package directions until almost tender., Meanwhile, preheat oven to 350°. In a large stock pot, melt 1 cup butter. Stir in flour and salt until smooth. Gradually stir in milk. Bring to a boil; cook and stir until thickened, 2 minutes. Reduce heat. Add cheese, stirring until melted. Drain macaroni; stir into sauce., Transfer to 3 greased 13x9-in. baking dishes. Melt remaining butter; toss with bread crumbs. Sprinkle over casseroles. , Bake, uncovered, until golden brown, 35-40 minutes.

1/2 cup butter
3/4 cup all-purpose flour
5 pounds elbow macaroni
10 cups milk, divided
2 pounds Colby cheese, shredded
2 pounds sharp Cheddar cheese, shredded
1 teaspoon salt
1/2 teaspoon white pepper
1 cup seasoned bread crumbs or crumbled buttery crackers
1/2 cup melted butter

Steps:

  • Preheat oven to 350 degrees F. Make a roux by melting butter, add flour and stir, then cook over low heat for 2 to 3 minutes while stirring constantly. Set aside to cool. Cook macaroni according to package directions. Drain and put into a disposable foil pan. While macaroni is cooking, heat 8 cups of the milk, add the Colby and Cheddar cheeses and cook over medium heat while stirring to melt cheese. Add the salt and white pepper to the cheese mixture. Add the roux and stir until well thickened. Add this cheese sauce to the cooked macaroni and mix well to coat macaroni. Pour in the remaining 2 cups milk. Combine the bread or cracker crumbs with the melted butter and sprinkle over the top of the macaroni. You may prepare it this far, refrigerate, and bake it later. Bake at 350 degrees F for about 30-45 minutes or until bubbly in the middle.

2 cups cooked macaroni

1/2 green onion, chopped
1/4 cup ancho chile powder
1/4 cup bourbon paprika
1/4 cup salt
1/4 cup granulated sugar
3 tablespoons brown sugar
1 1/2 tablespoons crushed red pepper
3/4 teaspoon ground cumin
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
2 pounds brown sugar
4 cups ketchup
1 cup red wine vinegar
1/4 cup dry mustard
1/4 cup hot sauce
4 teaspoons bourbon paprika
4 teaspoons ground black pepper
4 teaspoons salt
2 dashes Worcestershire sauce
1 stick (8 tablespoons) butter
1/4 cup all-purpose flour
4 cups milk
2 cups heavy cream
1 tablespoon salt
1/2 tablespoon black pepper
2 pounds shredded white Cheddar

Steps:

  • Preheat the oven to 250 degrees F.
  • Rub the pork with the BBQ Rub, then place in a pan with the vinegar. Cover with plastic and foil, then roast for 3 to 4 hours. Let cool, then remove the fat cap and bone and shred the pork.
  • Heat 3 ounces pulled pork. Place the macaroni and Cheese Sauce in a saucepan and cook on medium heat until hot. Place the macaroni and cheese in a bowl, then top with the pork, BBQ sauce, smoked Cheddar and green onion. (Reserve the remaining ingredients for more servings or another use.)
  • Combine the chile powder, paprika, salt, granulated sugar, brown sugar, crushed red pepper, cumin, garlic powder, onion powder, cinnamon and ginger in a bowl.
  • Place the brown sugar and ketchup in a bowl and mix well. Add the vinegar, mustard, hot sauce, paprika, pepper, salt, Worcestershire and 1 cup water and continue to mix until well blended and the sugar has dissolved.
  • Melt the butter in a pot, then add the flour, stirring until smooth. Cook for 3 minutes. Add the milk, cream, salt and pepper. Cook on medium heat, stirring often, until thickened. Turn off the heat and add the cheese. Stir until melted.

1 lb macaroni
1 tablespoon oil
1 (10 ounce) bag frozen peas
3 cups ham, chopped
2 tablespoons butter
1/4 cup flour
4 cups milk
2 cups cheddar cheese
3 ounces cream cheese
salt, to taste
pepper, to taste
garlic salt, to taste
1 teaspoon ground mustard
1/2 cup crouton, crushed

Steps:

  • Boil macaroni in water with 1 Tbsp oil in very large pot until tender.
  • Add frozen peas for last minute of boiling time.
  • Drain and keep warm.
  • While macaroni is boiling, melt butter in medium sized bowl in microwave.
  • Add flour to butter and stir until most of lumps are gone.
  • Add milk all at once and stir to get butter paste incorporated.
  • Microwave on high 8 to 10 minutes, stirring every 2 minutes.
  • After first 2 minutes add cream cheese.
  • Continue to stir every 2 minutes until cream cheese is melted in and sauce becomes thick.
  • Add 1-1/2 cups cheese and stir until melted.
  • Mix in salt, pepper, garlic salt and ground mustard.
  • Add to macaroni mixture and stir until sauce is mixed well.
  • Pour into a 9x13-inch casserole.
  • You will probably have enough to fill it and then some. I use two or three 8x8-inch squares.
  • Top with additional cheese and crushed croutons, bake 30 minutes at 350°F.
  • If freezing, leave out last step until ready to bake.
