FLAKY PASTRY PESTO CHICKEN

320 g sheet of all-butter puff pastry, (cold)
4 x 120 g free-range skinless chicken breasts
4 heaped teaspoons green pesto
400 g ripe cherry tomatoes, on the vine
400 g green beans

Steps:

  • Preheat the oven to 220ºC/425ºF/gas 7.
  • Unroll the pastry, cut it in half lengthways, then cut each half widthways into 8 equal strips.
  • Flatten the chicken breasts by pounding with your fist until the fat ends are the same thickness as the skinny ends.
  • Place them in a roasting tray, season with sea salt and black pepper, spread over the pesto, then lay 4 overlapping strips of pastry over each breast, tucking them under at the edges. Brush with a little olive oil.
  • Lightly dress the tomato vines in olive oil, season and put into a second tray. Place the chicken tray on the top shelf of the oven with the tomatoes below, and cook for 20 minutes, or until the pastry is golden and the chicken is cooked through.
  • Meanwhile, line up the beans, trim off just the stalk ends, then cook in a pan of boiling salted water for 7 minutes, or until tender.
  • Remove the chicken to a board with half the tomatoes, squashing the rest in the tray and discarding the vines. Drain and toss in the beans, taste and season to perfection.
  • Slice the chicken at an angle and serve on top of the beans, with the whole tomatoes.

This is not at all hard to put together, it's an amazing dish to serve to dinner guests and I have done so many times over the years and have always receive rave reviews from everyone at my table and you will too! --- to save time saute the onion, garlic and mushrooms up to a day ahead, the cream cheese and Dijon mustard mixture may be increased slightly -- I always serve this with recipe#149547 drizzled over or on the side of the plate, you will *love* this!

2 sheets puff pastry (thawed for about 20 minutes)
8 small boneless skinless chicken breasts, uncooked
2 tablespoons butter
2 tablespoons oil
seasoning salt (can use white salt)
pepper
1 large onion, finely chopped (can use 2 onions)
1 tablespoon fresh minced garlic (optional)
1/2 lb fresh button mushroom, sliced (can increase if desired)
2 tablespoons finely chopped fresh parsley
1 (8 ounce) package cream cheese, softened (you may reduce the amount if desired)
2 tablespoons Dijon mustard
1 egg, slightly beaten

Steps:

  • Season the chicken breast with seasoning salt and pepper on all sides.
  • Heat butter and oil in a skillet.
  • Brown the breasts on all sides until almost completely cooked through; transfer to a plate.
  • To the same skillet add in onions, garlic and sliced mushrooms; saute until the mushrooms lose their moisture and the onions are tender.
  • Stir in parsley.
  • On a floured surface, roll out each puff pastry sheet to a 14-inch square.
  • Cut into four even 7-inch squares (you should have 8 squares total).
  • Place each breast over each puff pastry square.
  • Set oven to 375 degrees.
  • In a small bowl combine the softened cream cheese with mustard, then spread over EACH breast.
  • Then top with about 2-3 tablespoons mushroom/onion mixture.
  • Brush the edges of each pastry square with water.
  • Wrap pastry around the chicken breast, pressing edges to seal tightly.
  • Place seam-side down on greased baking sheets.
  • Brush the tops with egg wash.
  • Bake for about 20 minutes, or until puffed and golden brown.
  • Serve with mushroom sauce over the Wellington or on the side of the plate.
  • Delicious!

  • Heat oven to 430 degrees F.
  • Combine cheese, basil, garlic, salt and pepper in processor until smooth and basil is finely chopped.
  • Unfold both pieces of pastry carefully.
  • Roll out on lightly-floured surface to 14 x 10 inch rectangle about 1/8 inch thick.
  • Cut in half crosswise into 7 x 10 inch rectangle; repeat with second sheet of pastry.

3 pounds chicken tenders
½ cup flour
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon paprika
4 tablespoons butter
4 tablespoons olive oil
2 (8 ounce) packages white mushrooms, sliced
⅓ cup chopped shallots
3 cloves garlic, minced
2 ½ cups water
2 ½ teaspoons roasted beef base (such as Better then Bouillon®)
2 ½ cups Madeira wine
½ tablespoon cornstarch
1 tablespoon water
2 tablespoons chopped fresh parsley

Steps:

  • Place chicken tenders between 2 pieces of plastic wrap and pound with a meat tenderizer to flatten slightly.
  • Mix together the flour, salt, pepper, and paprika in a shallow bowl. Coat chicken pieces in flour mixture and set aside on a sheet pan until all pieces have been coated.
  • Melt 2 tablespoons butter and 2 tablespoons olive oil in a large skillet over medium heat. Place half of the chicken in the pan and cook until browned, about 5 minutes per side. Remove chicken to a sheet pan. Heat the remaining butter and oil in the pan, and repeat with the remaining chicken pieces. Set chicken aside.
  • Combine mushrooms and shallots in the same skillet and cook until the mushrooms release their juices, about 5 minutes. Add garlic and cook for 1 more minute. Transfer mixture to a bowl and set aside.
  • Bring 2 1/2 cups water to a boil in the same skillet and whisk in beef base until dissolved. Add Madeira wine, bring to a boil, and cook until mixture has reduced by about 1/3. Return mushrooms, shallots, and garlic to the skillet and let simmer.
  • Mix cornstarch and cold water together in a small bowl. Add to the skillet and boil until sauce thickens slightly, at least 1 minute.
  • Return chicken to skillet, reduce heat to low, and cook until chicken is no longer pink in the center and the juices run clear, 7 to 10 minutes more. Remove from heat, sprinkle with parsley, and serve.

4 boneless skinless chicken breasts
Kosher salt and cracked black pepper
3 tablespoons olive oil
2 cups sliced cremini mushrooms
3 cups Madeira wine
2 cups low-sodium beef broth
2 sprigs fresh thyme, plus more for garnish

Steps:

  • Sprinkle each chicken breast liberally with salt and pepper. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Cook the chicken until browned, 4 to 6 minutes per side. Transfer to a plate and cover with foil.
  • Add the remaining 2 tablespoons oil to the same skillet over medium-high heat and saute the mushrooms until softened, 2 minutes. 6 tournedos, 6 ounces each (fillet steaks, 1 1/2 inches thick)
6 tablespoons unsalted butter
2 shallots, minced
1 pound mushrooms, finely chopped
4 tablespoons heavy cream
Salt and freshly ground black pepper
2 pounds puff pastry
1 egg with 1 tablespoon of water, lightly beaten, for egg wash
Sauce Madeira, recipe follows
Watercress, for garnish
1 cup Madeira
2 tablespoons minced shallots
1 teaspoon minced thyme leaves
1 cup veal stock
2 tablespoons butter
Salt and pepper

Steps:

  • In a large skillet, over high heat, saute tournedos in 3 tablespoons butter for 30 seconds on each side. Set aside to cool completely.
  • In the same skillet, with the remaining 3 tablespoons of butter, cook shallots and mushrooms until all liquid evaporates. Add cream, salt and pepper. Reduce over moderate heat to a thick puree. Cool.
  • Preheat oven to 450 degrees F.
  • Divide pastry into 6 equal portions. On a lightly floured board, roll out each portion to a rectangle approximately 6 by 12 inches and 1/4 inch thick. Place each tournedo on one side of a pastry rectangle, leaving enough room to fold over.
  • Top each tournedos with mushroom puree. Brush edges of the pastry with egg wash and then fold it over and shape it to the contours of the meat. Cut away excess pastry and decorate as desired.
  • Glaze the tops of the pastry with egg wash.
  • Bake the tournedos 15 to 20 minutes, or until the pastry is golden brown.
  • Arrange each tournedo on a heated plate and garnish with watercress. Nap the sauce Madeira around the tournedos.
  • In a saucepan, bring Madeira, shallots, and thyme to a boil. Reduce to a simmer and cook until only 1/3 cup remains. Add the stock; continue to reduce, over medium heat, until slightly thickened. Whisk in the butter. Season, to taste, with salt and pepper.
  • Yield: Makes about 1 cup

8 ounces fresh spinach, stems removed,rinsed,drained
2 tablespoons butter
1/3 cup chopped shallot
6 ounces fresh shiitake mushrooms
6 ounces button mushrooms
3/4 cup dry red wine
1 teaspoon dried tarragon
1 (17 1/4 ounce) package puff pastry sheets, thawed
1 egg, beaten
2 tablespoons butter
3 shallots, minced
2 tablespoons flour
1 cup reduced-sodium chicken broth
1 cup beef broth
1/2 cup madeira wine, plus
1 tablespoon madeira wine

Steps:

  • Preheat broiler.
  • Place chicken breasts on baking sheet and season with salt and pepper.
  • Broil until almost cooked through, about 4 minutes per side.
  • Chill until cool, about 30 minutes.
  • Preheat oven to 375^F.
  • In a large nonstick saucepan, saute spinach over medium heat until just wilted, about 3 minutes.
  • Transfer to a bowl.
  • In the same skillet, melt butter over medium high heat and add shallots.
  • Saute until tender, about 3 minutes.
  • Add all of the mushrooms and saute until beginning to soften, about 2 minutes.
  • Add wine and tarragon and simmer until almost all of the liquid has evaporated, about 7 minutes.
  • Season and cool.
  • Oil a large heavy baking sheet.
  • Roll out each sheet of puff pastry to 12 inch squares.
  • Cut each square in half crosswise to form four 12x6 inch rectangles.
  • (If the chicken breasts are large, either cut to fit the pastry or roll out the pastry into larger squares.) Place chicken breasts crosswise at the short end of the rectangle.
  • Spoon the spinach on top of chicken.
  • Spoon mushroom mixture on top of spinach.
  • Fold long sides of rectangle over chicken and roll up jellyroll style.
  • Pinch edges to seal.
  • Brush pinched edges with beaten egg.
  • Place pastries seam side down on prepared baking sheet.
  • Brush with beaten egg.

  • Place on plates and spoon sauce over.
  • For the Madeira Sauce: In a medium saucepan, melt butter over medium high heat.
  • Add minced shallots and saute until golden, about 3 minutes.
  • Add both broths and the 1/2 cup Madeira.
  • Boil until reduced to sauce consistency, about 15 minutes.
  • Strain into small saucepan and add additional tablespoon of Madeira.
  • Season.
  • The sauce can be prepared well in advance and kept covered in the refrigerator.

This is a different take on my more extravagant beef wellington, an elegant meal that is far more cost effective and it looks and tastes wonderful. Were I have put the pate feel free to use proper fois gras which is what I use in my beef wellington, but of course that is triple the price of getting chicken or duck liver pate. I also bought morel mushrooms to go in the sauce these are a more expensive mushroom but no where near the cost of black truffles, which I use in my wellington recipe. I could not get fresh when I made this so I bought a 20g dried packet and used about half as it was just for two, I yielded around 11/2-2 Tablespoons of chopped morels (didn't measure exact.)

2 lamb fillets
90 g chanterelle mushrooms, finely chopped
4 swiss brown mushrooms, finely chopped
25 g butter
2 green onions, sliced finely
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh thyme leave
1 tablespoon double cream
salt and pepper
50 g pate (chicken or duck liver, I used duck)
1 sheet puff pastry
2 pancakes, large enough to cover fillets
1/2 cup madeira wine
1 teaspoon beef stock
1 teaspoon cornflour
10 g dried morels, soaked in water and chopped (see note above)

Steps:

  • Melt butter in a pan add mushrooms, cook until soft, add onion, cooking stirring until onion softens, add herbs, cream and salt and pepper, cook until liquid has evapourated., set to one side.
  • Lightly flour a surface and roll out puff pastry, cut in half so you have 2 separate sheets, enough to cover both fillets completely, depending on the size of your fillets, you will either use all or have a little left over. I usually make some jam tarts if this is the case.
  • Take a lamb fillet and spread half the pate over the top and sides of the meat, press half the mushroom onto the pate.
  • Take a pancake and place it on top of the mushroom mixture, carefully turn it over laying it, pancake, mushroom side down onto the pastry, fold up the other part of the pancake to cover underside of lamb, fold remaining pastry over the pancake to form a little parcel, brush joining ends of pastry with milk or eggs to seal. Decorate top of pastry if desired.
  • Place lamb parcels on a lightly oiled baking tray and bake in pre-heated oven of 200 degrees Celsius for 30-40 Min's or until pastry is browned and risen.
  • Sauce:.
  • Bring Madeira and stock to the boil, mix a little water with the cornflour add to sauce and stir until it thickens slightly, add morels and stir to combine.
  • To Serve: I served mine over parsnip mash and vegetables and drizzled with the sauce.

MADEIRA SAUCE:
2 cans (10-1/2 ounces each) condensed beef consomme, undiluted
2 tablespoons tomato paste
1/2 teaspoon beef bouillon granules
2 tablespoons butter, softened
2 tablespoons all-purpose flour
1/2 cup Madeira wine
FILLING:
2 cups chopped fresh mushrooms
4 shallots, chopped
1/4 pound sliced deli ham, chopped
1/4 cup minced fresh parsley
1 package (17.3 ounces) frozen puff pastry sheets, thawed
2 tablespoons 2% milk
1 large egg, lightly beaten, optional

Steps:

  • Preheat oven to 475°. Place the tenderloin in a greased 15x10x1-in. baking pan; fold ends under tenderloin. Bake, uncovered, for 20-25 minutes or until browned. Cover and refrigerate for at least 2 hours or until chilled., For sauce, in a large saucepan, combine the consomme, tomato paste and bouillon granules. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until reduced to 2 cups. , Combine butter and flour until smooth. Stir into sauce, a teaspoon at a time. Bring to a boil; cook and stir for 2 minutes or until thickened. Recipe courtesy Wolfgang Puck. Episode: Holiday Entertaining, Wolfgang-style. This is a very elegant way to serve your beef tenderloin. I have always loved preparing it this way, it is great for company and really not that difficult. The pastry is pre-made.

6 (6 ounce) filet of beef (steaks, 1 1/2 inches thick)
6 tablespoons unsalted butter
2 shallots, minced
1 lb white mushroom, finely chopped
4 tablespoons heavy cream
salt & freshly ground black pepper
2 lbs puff pastry (2 boxes of frozen puff pastry)
1 egg, with
1 tablespoon water, lightly beaten, for egg wash
watercress, for garnish
1 cup madeira wine
2 tablespoons minced shallots
1 teaspoon minced thyme leaves
1 cup veal stock
2 tablespoons butter
salt and pepper

Steps:

  • FILET OF BEEF WITH PUFF PASTRY:.
  • In a large skillet, over high heat, saute tournedos in 3 tablespoons butter for 30 seconds on each side.
  • Set aside to cool completely.
  • In the same skillet, with the remaining 3 tablespoons of butter, cook shallots and mushrooms until all liquid evaporates.
  • Add cream, salt and pepper.
  • Reduce over moderate heat to a thick puree.
  • Cool.
  • Preheat oven to 450 degrees F.
  • Divide pastry into 6 equal portions.
  • On a lightly floured board, roll out each portion to a rectangle approximately 6 by 12 inches and 1/4 inch thick.
  • Place each tournedo on one side of a pastry rectangle, leaving enough room to fold over.
  • Top each tournedos with mushroom puree.
  • Brush edges of the pastry with egg wash and then fold it over and shape it to the contours of the meat.
  • Cut away excess pastry and decorate as desired.
  • Glaze the tops of the pastry with egg wash.
  • Bake the tournedos 15 to 20 minutes, or until the pastry is golden brown.
  • Arrange each tournedo on a heated plate and garnish with watercress.
  • Pour (very lightly) the sauce Madeira around the tournedos.
  • SAUCE MADEIRA:.
  • In a saucepan, bring Madeira, shallots, and thyme to a boil.
  • Reduce to a simmer and cook until only 1/3 cup remains.
  • Add the stock; continue to reduce, over medium heat, until slightly thickened.
  • Whisk in the butter.
  • Season, to taste, with salt and pepper.
