2 teaspoons cornstarch
1/2 cup fat-free milk
4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon olive oil
1 tablespoon butter
1/2 pound sliced fresh mushrooms
1/2 medium onion, thinly sliced
1/4 cup sherry or chicken broth
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Mix cornstarch and milk until smooth. Pound chicken with a meat mallet to 1/4-in. thickness., In a large nonstick skillet, heat oil over medium heat; cook chicken until no longer pink, 5-6 minutes per side. Remove from pan., In same pan, heat butter over medium-high heat; saute mushrooms and onion until tender. Stir in sherry, salt and pepper; bring to a boil. Stir cornstarch mixture and add to pan. Return to a boil; cook and stir until thickened, 1-2 minutes. Return chicken to pan; heat through.

For the yogurt sauce:
1 shallot, finely chopped
2 sprigs tarragon, plus 2 teaspoons chopped
1/2 teaspoon black peppercorns, crushed
1 tablespoon white wine vinegar
1 cup plain whole-fat Greek yogurt
2 tablespoons fresh lemon juice
1 tablespoon olive oil
Kosher salt
For the mushrooms and assembly:
1 tablespoon coriander seeds
1 teaspoon kosher salt
1 teaspoon mustard powder
1 teaspoon paprika
12 ounces maitake or oyster mushrooms, torn into large pieces
2 tablespoons olive oil
Torn tarragon sprigs (for serving)
Special Equipment
A spice mill or a mortar and pestle

Steps:

  • Make the yogurt:
  • Bring shallot, tarragon sprigs, peppercorns, vinegar, and 1/3 cup water to a boil in a small skillet over medium heat and cook until liquid is nearly evaporated, 8-10 minutes. Let cool. Discard tarragon sprigs and transfer mixture to a small bowl. Add yogurt, lemon juice, oil, and chopped tarragon and mix well; season with salt.
  • To assemble:
  • Prepare a grill for medium heat. Finely grind coriander seeds in spice grinder or with mortar and pestle. Transfer to a small bowl and mix in salt, mustard powder, and paprika.
  • Drizzle mushrooms with oil in a medium bowl; gently toss to coat. Season with rub. Grill, turning occasionally, until browned and tender, 6-8 minutes. Serve over yogurt topped with tarragon.
  • Do Ahead
  • Yogurt can be made 3 days ahead. Cover and chill.

2 boneless chicken breasts
1 teaspoon dried basil
1 teaspoon dried thyme, ground
1 teaspoon salt
2 tablespoons olive oil
3 cups mushrooms, sliced
1/2 teaspoon garlic, minced
1 tablespoon olive oil
1/4 cup white wine
1/2 cup heavy cream
1/4 cup parmesan cheese
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Pound chicken breasts with a meat mallet to flaten.
  • Sprinkle chicken breasts with salt, basil and thyme. Using a large saucepan over low heat, saute chicken breasts in olive oil until juices run clear -- approximately 10-15 minutes. Turn heat off, cover with lid and allow chicken to remain in pan for 10 minutes.
  • In a small saucepan saute mushrooms in olive oil. Add minced garlic and wine.
  • Remove chicken from large saucepan to a plate.
  • Place mushroom mixture in large saucepan and stir to loosen brown bits from bottom of pan. Allow mushrooms to simmer approximately 2 minutes.
  • Add heavy cream. In a small cup, dissolve cornstarch with cold water and add to cream. Heat and stir until sauce thickens.
  • Place chicken breasts back in pan and spoon sauce over chicken. Allow chicken to reheat. Sprinkle parmesan cheese on top. Serve with pasta of choice.

2 tablespoons pine nuts, toasted in a dry skillet
2 tablespoons olive oil
1 garlic clove, minced
3 -4 boneless skinless chicken breast halves, one half per person, cut into 1-inch cubes
1/4 cup dry white wine (chardonnay)
1 bunch asparagus, clean and trimmed, cut into 2 inch pieces
4 ounces fresh mushrooms, sliced
1 (6 ounce) jar artichoke hearts, plain, drained
4 ounces black olives, sliced, drained
1 cup bearnaise sauce, ie.Knoor package
salt, to taste
pepper, to taste
12 -16 ounces fresh spinach linguine or 12 -16 ounces black pepper linguine, cooked to package directions

Steps:

  • Warm skillet, toast pine nuts in a dry skillet until golden brown. Watch closely taking care not to burn. Remove from skillet and set aside to cool.
  • Prep all your ingredients.
  • Cut chicken into 1" cubes or bite sized pieces. Season with salt and pepper.
  • In the mean time, start boiling water for pasta, add salt to the water and boil pasta until al dente,per package directions.
  • Warm skillet over medium heat, add olive oil and garlic, sautee for 1 minute. To same skillet, add chicken and cook until no longer pink.
  • Add asparagus, sliced mushrooms, artichoke hearts and wine to the skillet and steam through until crispy tender.
  • Meanwhile: In a small sauce pan, make bearnaise sauce according to package directions. Pour over chicken medley. If the sauce is too thick, add more white wine. Top with toasted pine nuts, olives. Warm through.
  • Serve over pasta and serve immediately.

This is a very nice meal. Serve with mashed potatoes and a favorite vegetable. You can use any chicken parts you prefer, we like dark meat so I use legs and thighs. You may also add other seasonings.

8 pieces chicken thighs
1 (10 3/4 ounce) can cream of mushroom soup
2 (4 ounce) cans mushrooms, use juice
1 small onion, chopped
1 teaspoon garlic salt or 1/2 teaspoon garlic powder
1 1/2 cups flour
water

Steps:

  • Mix soup, onion, mushrooms with juice, and garlic in a bowl.
  • Spray skillet with non stick cooking spray.
  • Dip chicken in flour to coat.
  • Add 1/2 cup water to skillet and heat till hot.
  • Add coated chicken and brown.
  • Add more water if necessary but.
  • Add NO MORE than 1/2 cup of water at a time each time water disappears.
  • Put chicken in a prepared 9 x 9 baking dish.
  • (Different chicken pieces may use different size dish).
  • Spread soup mixture over the top of chicken.
  • Cover dish with foil.
  • Bake in a 325 degree oven for 30 minutes or till chicken juices run clear and chicken is tender at the bone.
  • DO NOT ADD WATER TO SOUP.
  • You can use fresh mushrooms if you like.
  • Consistency of gravy will change.

12 ounces boneless skinless chicken breasts, white chicken pieces (breasts or tenders)
1 cup chicken stock
1/4 cup green apple, finely cut or grated
1/4 cup onion, finely diced or grated
1/4 cup egg substitute (1 egg)
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cornstarch
1/4 cup skim milk
1/2 cup panko breadcrumbs
1/4 teaspoon paprika
1 tablespoon butter
1 tablespoon flour
1/2 cup skim milk
dried tarragon (to taste)
black pepper
salt

Steps:

  • Boil chicken 15 minutes in broth until chicken is tender.
  • Remove chicken from broth; strain and reserve broth. Set aside.
  • Position knife blade in food processor bowl and place chicken in processor bowl; pulse 15-30 seconds or until chicken is finely chopped, but not smooth. Set aside.
  • Briefly saute apple and onion in a large skillet coated with cooking spray to soften. Remove from heat.
  • Stir in chicken, egg substitute, salt, and pepper.
  • Combine cornstarch, milk, and 1/4 cup reserved broth in a small saucepan.
  • Cook over medium heat, stirring constantly, until mixture begins to boil; boil 1 minute, stirring constantly.
  • Stir sauce into chicken mixture; shape into 6 croquettes.
  • Combine panko and paprika; roll croquettes in crumbs, and place on a baking sheet coated with cooking spray.
  • Bake at 375* for 20-25 minutes or until heated. Broil last 2 minutes of heating for crunchiness of panko.

  • Non-traditional (Modified) Bearnaise Sauce: Over low heat, mix flour and butter well, until smooth.
  • Cook 1 minute, stirring constantly.
  • Gradually stir in chicken broth and milk; cook over medium heat, stirring constantly, until thickened and bubbly.
  • Stir in tarragon, salt, and pepper.

I found this recipe somewhere on the internet, I don't think it was Recipe Zaar because I looked for it but didn't see it. Turned out great and wanted to share it.

4 large boneless skinless chicken breasts
1/4 cup all-purpose flour, divided
2 tablespoons margarine
1 cup sliced mushrooms
1 cup low sodium chicken broth
1/2 teaspoon salt
1/8 pepper, to taste
1/3 cup mozzarella cheese
1/2 cup parmesan cheese
1/4 cup scallion
1/4 cup sherry wine

Steps:

  • Flatten chicken if needed as you want it to fry quickly.
  • Measure flour onto a flat plate and lightly coat chicken. Preserve 1/2 tablespoon of flour and set aside.
  • Melt margerine in a large skillet and brown chicken two to three minutes each side and place in a greased baking dish.
  • Preheat oven to 375.
  • Saute mushrooms in the same skillet (do not wash as you want to preserve the juices) until tender.
  • Add chicken broth, salt, and pepper and bring to a boil. Let boil for 3 minutes, add sherry and remaining 1/2 tablespoon of flour. Be sure to gradually add the flour by sprinkling in and mixing while allowing it to dissolve. Adding it too fast will result in clumps of flour in your mushroom sauce. Let the mixture reduce by half of your original liquid.
  • Pour mixture over chicken and bake uncovered in oven for 12-15 minutes.
  • Remove chicken from oven and layer half of the parmesan cheese, then sprinkle on green onions. Add the remaining parmesan and mozzarella on top and bake for an additional five to six minutes.

2 egg yolks, lightly beaten
1 tsp. lemon juice
dash of cayenne pepper
3 chicken breasts, halved
2 Tbsp. minced onion
1/2 tsp. garlic salt
1/4 tsp. paprika

Steps:

  • In a small saucepan over medium heat, combine the minced onion, vinegar and tarragon. Simmer, stirring constantly, until liquid has evaporated. Add mushrooms and 4 Tbsp. butter. Cook until lightly browned and pour in 1/3 cup cream. Bring to a boil. Stir a small amount into the egg yolks, whisking rapidly to incorporate. Return the mixture to saucepan. Cook, whisking constantly, until it begins to thicken. Whisk in remaining cream or add more to thicken. Add lemon juice and cayenne to taste. Meanwhile, preheat oven to 400°F and place chicken in ungreased baking pan, coat each piece with remaining butter. Sprinkle onion, garlic salt, and paprika over chicken, and bake uncovered for 15-20 minutes. Pour sauce over cooked chicken and serve with asparagus, carrots and fresh kiwi.
