3 tablespoons olive oil
1 ½ tablespoons red wine vinegar
1 lime, juiced
1 teaspoon chili powder
½ teaspoon paprika
½ teaspoon onion powder

1 pound skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces

Steps:

  • In a small bowl, whisk together the olive oil, vinegar, and lime juice. Season with chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Place the chicken in a shallow baking dish with the sauce, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
  • Preheat the grill for medium-high heat. Thread chicken onto skewers, and discard marinade.
  • Lightly oil the grill grate. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.

400 g chicken tenderloins
1/3 cup lime juice
1 teaspoon garlic, finely chopped
2 teaspoons finely chopped ginger
1 tablespoon soy sauce
1 teaspoon red chile, finely chopped
2 green onions, chopped
fresh cilantro leaves
lime wedge

Steps:

  • Combine all of the ingredients (except chicken) in a large bowl and whisk together.
  • Add the chicken and stir to coat completely in marinade.
  • Cover the bowl and refrigerate for at least 1 hour.
  • Drain the chicken and discard marinade.
  • Heat a frying pan over medium-high heat and spray with cooking oil.
  • Add chicken and cook for about 3 minutes each side or until cooked through.
  • This could also be cooked on the grill.
  • Serve hot or cold over salad or rice noodles, sprinkled with the cilantro leaves and lime wedges on the side.

LIME, CHILLI AND COCONUT CHICKEN

This is my version of a Thai style dish. I certainly wouldn't call it authentic by any standards, but it's still popular with those who have eaten it! If you don't like or don't have lime, you can substitute lemon and get a very similar taste. Also please feel free to add or remove chile to your liking - my husband doesn't like very hot food, so this is a fairly mild version. If you don't have fresh ginger, you can also use the minced variety that comes in a jar. The serving size is listed as 2-4 as we don't eat a lot of meat, so for the 2 of us this will do 2 meals. However, if you don't serve this with veggies and eat a large amount of meat, it may only do 2 meals.

1 lime, juice and zest of
1/2 lemon, juice of
2 tablespoons sweet chili sauce
1/2 teaspoon soy sauce
1 large garlic clove, finely chopped
1 teaspoon fresh ginger (grated or finely chopped)
1 mild chile, finely chopped (seeds removed)
1 tablespoon sesame oil
2 chicken breasts
0.5 (400 ml) can light coconut cream

Steps:

  • Mix all ingredients except coconut milk and chicken breasts together in a plastic container big enough to also fit chicken into.
  • Slice chicken breasts into strips - you should get about 4-6 strips from each chicken breast, depending on the size.
  • Put the chicken breasts into the container with the marinade and mix well, making sure all chicken strips are thoroughly coated with the marinade.
  • Seal the container and place it in the fridge for at least an hour.
  • Remove from the fridge and heat a frying pan on medium-high heat on the stove.
  • Take the chicken strips out of the marinade, and scrape all the marinade off. Put the chicken in the pan and cook.
  • After one side of the strips are browned, turn over. Then tip the remaining marinade into the pan, around the chicken.
  • Cook chicken and marinade for a few seconds, then add coconut milk. Allow to boil, then turn down and simmer for 2-3 minutes, then serve with steamed rice and veggies.

4 cups warm water
1/4 cup kosher salt
1/4 cup sugar
1/4 cup lime juice
1 (4 to 5-pound) chicken, cut into 10 pieces
4 dry pasilla chiles, stems and seeds removed
4 dry ancho chiles, stems and seeds removed
1 teaspoon salt
1 teaspoon garlic powder
2 limes, zested
Vegetable oil, for frying
2 cups all-purpose flour
1/2 cup cornstarch
Kosher salt and freshly ground black pepper
2 eggs
1/4 cup milk
Lime wedges, for garnish
Honey, for dipping

Steps:

  • Brine: In a large bowl add the water, salt, sugar and lime juice, stirring to dissolve. Add the chicken and refrigerate, covered, for 12 hours or overnight.
  • Rub: Tear the chiles roughly into 1-inch pieces and toast in a pan over medium heat until fragrant, about 5 minutes. Let cool slightly, then transfer them to a food processor along with the salt, garlic powder and lime zest. Pulse into a coarse powder. Remove the rub to a large bowl.
  • Remove the chicken from the brine and pat dry. Add chicken to the rub and coat all of the pieces well. Let rest on the countertop until chicken comes to room temperature or up to 2 hours.
  • In a deep-fryer or heavy-bottomed pot, heat enough oil to come halfway up the sides of the pot, to 350 degrees F.
  • Set up a dredging station: Put the flour, cornstarch and a pinch of salt and pepper in a paper bag. In a large bowl whisk the eggs, milk and a pinch of salt and pepper, to taste. Dredge the chicken, 1 piece at a time, to the paper bag and toss. Remove with tongs, dip in the egg wash then return them to the paper bag for a second toss. Shake off the excess flour and add the chicken pieces to the oil in batches, making sure to keep frying temperature at around 350 degrees F. Fry the chicken until golden brown and cooked through, about 10 to 12 minutes depending on piece of chicken. Remove the chicken to a paper towel lined plate to drain. Arrange the chicken on a serving platter and season with salt, to taste, and a spritz of lime juice. Serve with honey for dipping.

Steps:

  • Add the coriander to pestle and mortar and crush then add the rest of the spices and mix thoroughly. Rub the chicken with oil and rub in the spice mixture. Then rub the lime zest on top. Leave to one side.
  • Add a little oil to a medium saucepan. Fry the onion and half the sliced garlic for a few minutes then add the chicken stock. Add the rice and cook per packet instructions. Add the kale about 5 minutes before the rice is cooked.
  • Meanwhile heat a griddle pan and cook the chicken turning once. While cooking heat a little oil in a small saucepan and fry the rest of the garlic and all the chilli. After a few minutes add all the lime and lemon juice and cook on a high heat until thickened slightly then remove from the heat.
  • Pile half the rice on each plate and place a chicken breast on each pile. Finish with half the chilli lime dressing on top and serve.

9 ounces clear honey
4 in fresh gingerroot, finely grated
2 fat garlic cloves, crushed

6 ounces sweet chili sauce

2 1/2 cups white wine

Steps:

  • Put the turmeric, honey, ginger, garlic, lime zest and juice and chili sauce into a bowl, then whisk to combine. Make several deep slashes through the skin and flesh of each chicken breast, then add them to the bowl and stir to coat in the mixture. Cover with plastic wrap and leave in the fridge overnight.
  • Preheat the oven to 425°F Lift the chicken breasts from the marinade and put them, skin side up, in a roasting tin just large enough to hold them in a single layer (any larger and the marinade will burn).
  • Spoon over 4tbsp of the marinade and roast for 30-35min until the chicken is golden and cooked through. Keep warm.
  • Put the leftover marinade into a pan with the wine and bring to the boil. Bubble for 10-12min until reduced by half and syrupy. Serve the chicken with the sauce.

Thai Chicken
- 4 skinless chicken breasts
- 3 tbsp dark soy sauce
- Spray oil
Chilli Lime Sauce
- 2 tbsp Thai fish sauce
- 3 tbsp Bottlegreen Aromatic Sweet Lime Cordial
- 1 large red chilli (depending on spiciness liked)
- 4 spring onions, trimmed and chopped
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1 tbsp shredded coriander leaves

Steps:

  • Place the chicken breasts between cling-film and beat out to an even thickness. On the skin side, using a sharp knife, lightly score a criss-cross. Place the chicken in a dish and pour soy sauce over the chicken. Turn to coat all over. Set aside for 20 minutes.
  • Put the fish sauce and Lime Cordial into a bowl. Remove the seeds from the chilli and chop finely. Add the chilli to the bowl and mix together with chopped spring onions, soy sauce and sesame oil. Just before serving, stir in the coriander.
  • To cook the chicken, heat a griddle pan. When it is almost smoking hot, lift the chicken from the pan, drain the excess soy sauce, and then lightly spray the chicken with oil. Place the chicken in the pan to cook over a medium high heat for 3 minutes until it lifts easily from the pan and is marked from the griddle. Turn at an angle and cook another 2-3 minutes until marked.
  • Turn the chicken breasts over and cook for 3-4 minutes (depending on the thickness of the chicken) until cooked through. Transfer chicken to a plate and spoon over the sauce.
  • Serve with some stir-fried vegetables and boiled rice.

LIME & CORIANDER CHICKEN

Everyone will think you've used chilli, but the fieriness of this dish is simply crushed black pepper

1 medium chicken (about 1.6kg/3lb 8oz)
3 garlic cloves
2 tbsp black peppercorn
juice 2 limes , plus 1 lime cut into wedges, to serve
bunch of coriander , few nice sprigs reserved, the rest finely chopped

Steps:

  • First, spatchcock the chicken so that it will sit flat on the barbecue. All this means is using a pair of kitchen scissors or a sharp kitchen knife to cut down either side of the parson's nose to completely remove the backbone. Then, place the chicken, breast side up, on a chopping board and push down hard to flatten with your hands. Use a sharp knife to make lots of deep slashes in the chicken, about three in each breast and two in each leg.
  • In a mortar and pestle, crush the garlic and peppercorns together to a grey, mushy paste. Stir the lime juice into the paste, then the chopped coriander. Put the chicken in a dish and massage the marinade into the chicken. Cover with cling film and refrigerate for at least 2 hours, but preferably overnight.
  • To cook the chicken, fire up the barbecue. When the flames die down and the coals are hot and glowing, lay the chicken on the barbecue, skin side up, and sprinkle with salt. You will be tempted to keep prodding it and lifting it up, but leave it alone. After 25 mins, the chicken will look like it's cooked through, but flip it over and give the skin side 10 mins to brown. Lift the chicken onto a chopping board and leave to rest for a few minutes.
  • You can now carve conventionally but I like to get a cleaver and chop it straight down into thick slices. Pile it up on a platter and serve scattered with fresh coriander and lime wedges.

zest and juice 3 limes
3 tbsp fish sauce
3 tbsp soft light brown sugar
2 hot red chillies , thinly sliced (see tip, below)
1 tbsp extra virgin olive oil
2 garlic cloves , crushed
1 tsp turmeric
handful coriander stems, finely chopped
8 chicken leg or thigh pieces, skin on
bunch spring onion , shredded lengthways
½ cucumber , halved, deseeded and cut into long strips
200g baby tomato , halved
handful coriander
handful Thai basil leaves
2 ripe avocados , sliced
handful toasted cashews or peanuts

Steps:

  • Whisk together the lime zest and juice, fish sauce, sugar and chillies until the sugar dissolves. Pour 1/3 of this mix into a bowl, add the oil and set aside (this will be the dressing). Put the remainder into a large food bag with 1 tsp salt, the garlic, turmeric and coriander stems. Slash each piece of chicken down to the bone a few times, then add to the marinade and squish it around well in the bag. Chill for at least 2 hrs, or ideally up to 24 hrs.
  • Heat oven to 180C/160C fan/gas 4 (if barbecuing, get the coals ready). Lift the chicken from the marinade and into a roasting tin. Roast for 30 mins until cooked through but not yet completely tender.
  • If you're barbecuing, transfer the chicken from its tin to a hot barbecue for 10 mins more, turning once crisp (otherwise continue roasting in the oven). Spread the spring onions, cucumber and tomatoes over a platter, add the chicken, then finish with the herbs, avocados, nuts and dressing.
