Steps:
- Cut chicken breast halves in half.
- Heat oil& margarine in a skillet until hot.
- Combine the flour& pepper and coat the chicken.
- Cook chicken until brown, about 4 minutes on each side.
- Arrange in ungreased baking dish.
- Top with ham slices and sprinkle with mushrooms and cheese Pour reserved mushroom liquid into skillet.
- Cook over medium heat, about 30 seconds, stirring occasionally.
- Stir in wine and cook 30 seconds more.
- Pour over cheese.
- Cook uncovered in a 400 degree oven until cheese is melted, about 8 minutes.

After I tried ham salad with cheese, I never wanted to make plain ham salad again! This is my own recipe, which suits my family's taste. You might try combining the ingredients by hand if you prefer a more chunky texture.

- Combine all ingredients in a food processor and pulse until blended. You may need to stir a little more by hand to make sure that the mayo and mustard are blended in thoroughly.
- Serve on bread or crackers.

Steps:
- Cut pounded chicken into 8 thin cutlets. Lay out 4 cutlets; top each with 1 slice of ham and 1 slice of cheese, and then top with a second cutlet.
- Coat a large nonstick skillet with cooking spray and saute layered chicken-ham-cheese over medium-high heat, carefully turning once, for 8-10 minutes, until golden and cooked through. Remove to a plate and keep warm.
- Respray pan and saute mushrooms and shallot over medium-high heat, stirring for 3 minutes. Add wine to deglaze pan, stirring to scrape up any brown bits, until it's reduced by half.
- Add chicken broth and tarragon and simmer for 2 minutes. Stir in any chicken juices that have accumulated on plate and add salt and pepper to taste.

CHICKEN, HAM AND CHEESE DELIGHT
This is a wonderful dish and so easy. You can also use chicken breast. I also like to bake these in small indivisual baking dishes but you could put this in a casserole dish as well. Also a very elegant dish in presentation. I hope your family enjoys it as much as mine did.

Steps:
- Flatten chicken tender with a meat mallet.
- Sprinkle chicken with garlic powder.
- Dip chicken in egg then into bread crumbs.
- Fry chicken in oil until golden brown.
- Grease indivisual baking dishes with pam.
- Place 3 chicken tenders in each indivisual baking dish.
- Top with ham. (I like to fry mine in a little butter, just to give a little crispiness).
- Top ham with cheese.
- Place in oven and broil until lightly golden.

Steps:
- Flatten each piece of chicken slightly, using a meat mallet or rolling pin.
- Sprinkle the chicken with salt and parsley flakes; place in a shallow dish. Pour the teriyaki sauce over the chicken, turning to coat. Cover the chicken and chill 1 hour.
- Drain the chicken. Place a folded ham slice and a folded cheese slice on each chicken breast; fold the breast in half, and secure with a wooden toothpick.
- Cook the chicken, covered with the grill lid, over medium-hot coals (350 degrees to 400 degrees) for 10 to 15 minutes or until the chicken is done, turning once.
- Remove the wooden toothpicks, and place the chicken on the bottom half of each bun with mustard and lettuce. Cover with the tops of the buns.

- Place the chicken skin-side down on a board. With a sharp knife cut the chicken almost in half from the side, cutting parallel to the board, and leaving the other side joined. Open up like a book and lightly bash flat.
- Season well and arrange a slice of cheese and a slice of ham or salami on top, folding them if necessary to fit. Place a sage leaf on top and close the chicken, again as you would a book.
- Cover chicken with plastic wrap and lightly bash the edges to help them seal. Leave wrapped in plastic until required.
