Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Heat olive oil and garlic in a small saucepan over low heat until warmed, 1 to 2 minutes. Transfer garlic and oil to a shallow bowl.
- Combine bread crumbs and Parmesan cheese in a separate shallow bowl.
- Dip chicken breasts in the olive oil-garlic mixture using tongs; transfer to bread crumb mixture and turn to evenly coat. Transfer coated chicken to a shallow baking dish.
- Bake in the preheated oven until no longer pink and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- In a large skillet, brown the chicken pieces in oil and cook for about 15 minutes over medium heat.
- Crush garlic cloves and squeeze over chicken. Cover skillet and cook over low heat for 10 minutes each side. Remove cover, sprinkle with red pepper flakes and salt to taste, add water and simmer over low heat until water evaporates and the chicken pieces are sticky and yummy!

- Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, 8 to 10 minutes. Drain, and reserve pasta.
- Whisk the cornstarch and chicken broth together in a bowl until smooth. Set aside until needed.
- Heat the olive oil in a skillet over medium heat. Add the garlic and chicken; stir and cook until the chicken is no longer pink and juices run clear, about 10 minutes. Stir in the onion, and green and red peppers; cook until tender, about 5 minutes. Stir in the tomatoes, and simmer for 10 minutes. Pour in the chicken broth mixture and wine, if desired, and season with oregano and basil. Stir in the cooked pasta, and simmer over medium heat until thoroughly heated through, about 5 minutes. - Preheat oven to 375 degrees F (190 degrees C).
- In a small saucepan melt butter/margarine with garlic. Dip chicken pieces in butter/garlic sauce, letting extra drip off, then coat completely with bread crumbs.
- Place coated chicken in a lightly greased 9x13 inch baking dish. Combine any leftover butter/garlic sauce with bread crumbs and spoon mixture over chicken pieces. Bake in the preheated oven for 45 minutes to 1 hour.

ITALIAN GARLIC CHICKEN AND POTATOES
Olive oil, garlic and herbs. Three simple ingredients that taste great together on just about anything. Here they are combined with chicken and potatoes. I used thighs in this but feel free to used legs or breasts. It looks like a lot of steps, but it's really easy to put together. For a complete meal, add some veggies such as sliced carrots, zucchini, peppers, etc. Makes for easy cleanup too!

- Preheat oven to 190C/375°F.
- Line a roasting tin with foil.
- Cut off any excess skin from the chicken leaving just a covering on top. Rinse chicken and toss into a large bowl. Let chicken sit for a minute and then drain any excess water from the bowl. Do this once or twice.
- Drizzle 3 tablespoons olive oil over chicken.
- Add garlic, lemon juice, parsley, basil, thyme, rosemary, chili peppers, salt and pepper.
- Using clean hands, toss the chicken in the oil/garlic/herb mixture to thoroughly coat.
- Wash your hands.
- Lay the chicken pieces in the roasting tin, skin side down, leaving any excess oil/garlic/herb mixture in the bowl.
- Cut up potatoes (do NOT peel) into large chunks and toss into the bowl with the remaining oil/garlic/herb mixture.
- Add additional 2-3 tablespoons olive oil and toss (with hands) to coat.
- Place potato chunks around chicken in pan and drizzle any remaining oil mixture over chicken and potatoes.
- Bake for 25 minutes.
- Remove from oven and turn chicken over and toss around the potatoes.
- Return to oven and bake an additional 20-25 minutes until potatoes are tender.
- Serve and enjoy!
ONE-PAN ITALIAN GARLIC LEMON CHICKEN BAKE-A COMPLETE MEAL
A complete meal with delicious Italian flavors of garlic, lemon, oregano, fennel, and smoked paprika seasoning the chicken and potatoes. This dinner comes together quickly and it takes a minimum of prep work. Clean up is minimal since it only takes one pan. A great meal for a busy family.

- Whisk the marinade ingredients together in a bowl. Put the mixture in a ziplock bag along with the thighs then place in refrigerator for 20 - 30 minutes.
- Preheat oven to 350F/180C.
- Heat 1 Tablespoon olive oil in Braiser or deep oven proof skillet. Sauté the thighs first bone side down for 2 minutes on medium-high then on skin side down for 2 minutes. If you're using legs it doesn't matter which side first. Lightly brown the outside. Pour the marinade into the braiser, then add the broth, potatoes, onions, and fennel. (Note 1)
- Cover with lid or foil and bake for 20 minutes.
- Remove cover, turn chicken so that the thigh skin is up. Add the tomatoes, sprinkle with the smoked paprika, salt and pepper. Turn up the oven to 400F/205C for an additional 25 minutes or until the potatoes and chicken are cooked. Internal temperature of the chicken should be 165F/75C. Keep an eye on the liquid so that it doesn't evaporate. Add a bit of water if needed.
- Remove from oven and let rest for 5 minutes.
- Garnish with Italian parsley leaves and two halved lemons that were panfried with a bit of oil.This makes them pretty and colorful.

- Garlic bread. If we ranked the best-tasting foods on the planet, garlic bread would make the list. What's not to love about bread that's soaked in butter and topped with garlic and cheese?
- Shrimp scampi. Buttery pasta? Fresh shellfish? What more could you ask for? Well, can't ask for this in Italy because it doesn't exist there. This dish most likely came from the traditional Italian dish, which features langoustines (small lobsters) cooked in olive oil and herbs.
- Marinara sauce. You might feel like we just pulled the rug out from under your feet. Marinara sauce isn't Italian? Nope. The red sauce you've been dumping onto your pasta and pizza is very different from any kind of sauce you'll find on your Eurotrip.
- Italian wedding soup. This one is a little less traumatizing but enormously humorous because the soup is called Italian wedding soup. Ironically, there's not much that's Italian about it.
- Italian subs. On the same page as Italian Wedding Soup are "Italian" hoagies or submarines. Whatever you call them, "Italian" sandwiches are easily identifiable as American.
- Italian dressing. Ready for one more Italian food phony? "Italian" dressing. This tangy vinaigrette is made from oil, vinegar, herbs, spices, sugar, and more.
- Pepperoni pizza. Pepperoni pizza cannot be ordered in Italy. Well, let us rephrase. You can order pepperoni pizza in Italy, but you won't be brought a pie covered in salami circles.
- Chicken Parmesan. Chicken Parmesan is the hero of all comfort food. But you might not take comfort in the fact that this dish is in no way Italian. I know, I know, who can you trust these days?
- Spaghetti and meatballs. No! Not spaghetti and meatballs too?! Unfortunately, it's true. Spaghetti and meatballs were completely contrived by Americans. When most of us think of Italian food, we picture heaping piles of spaghetti, baseball-sized meatballs, and a blizzard of Parmesan cheese on top, but this is simply a fantasy you're more likely to find in Lady and the Tramp.
- Fettucine Alfredo. The only Italy you'll find this creamy, cheesy pasta dish is in Little Italy…of New York. Alfredo sauce is made from cream and Parmesan cheese, but the cream is rarely used in authentic pasta dishes.
