CHICKEN FRIED STEAK WITH GRAVY

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 16

1 1/2 cups whole milk
2 large eggs
2 cups all-purpose flour
2 teaspoons seasoned salt
Freshly ground black pepper
3/4 teaspoon paprika
1/4 teaspoon cayenne pepper
3 pounds cube steak (tenderized round steak that's been extra tenderized)
Kosher salt
1/2 cup canola or vegetable oil
1 tablespoon butter
1/3 cup all-purpose flour
3 to 4 cups whole milk
1/2 teaspoon seasoned salt
Freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • For the steak: Begin with setting up an assembly line of dishes. Mix the milk with the eggs in one; the flour mixed with the seasoned salt, 1 1/2 teaspoons black pepper, paprika and cayenne in another; and the meat in a third. Then have one clean plate at the end to receive the breaded meat.
  • Work with one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Turn to coat. Place the meat into the milk/egg mixture, turning to coat. Finally, place it back in the flour and turn to coat (dry mixture/wet mixture/dry mixture). Place the breaded meat on the clean plate, then repeat with the remaining meat.
  • Heat the oil in a large skillet over medium heat. Add the butter. Drop in a few sprinkles of flour to make sure it's sufficiently hot. When the butter sizzles immediately, you know it's ready. (It should not brown right away, if it does, the fire is too hot.) Cook the meat, 3 pieces at a time, until the edges start to look golden brown, about 2 minutes each side. Remove the meat to a paper towel-lined plate and keep them warm by covering lightly with another plate or a sheet of foil. Repeat until all the meat is cooked.
  • After all the meat is fried, pour off the grease into a heatproof bowl. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the grease back to the skillet and allow it to heat up.
  • For the gravy: When the grease is hot, sprinkle the flour evenly over the grease. Using a whisk, mix the flour with the grease, creating a golden-brown paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
  • Pour in the milk, whisking constantly. Add the seasoned salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes. Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure gravy is sufficiently seasoned.
  • Serve the meat next to a big side of mashed potatoes. Pour gravy over the whole shebang!

CHICKEN FRIED CHICKEN WITH PAN GRAVY

Chicken Fried Chicken With Pan Gravy image

I love me some good ol' southern comfort food. If that's what you're looking for, well let me tell you, this Chicken Fried Chicken TAKES.THE.CAKE. -Recipe from two bite club

Provided by Nina Salazar

Categories     Potatoes

Time 1h20m

Number Of Ingredients 10

2 large chicken breasts
1 c flour plus an additional 1/3 cup for the gravy
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1 egg
1 c milk plus an additional 2+ cups for the gravy
canola oil for frying
more salt and pepper ,to taste

Steps:

  • 1. Pound chicken breasts between two pieces of cling wrap with a meat tenderizer or a rolling pin until they are about 1/4 inch thick.
  • 2. I like to cut my large pieces into smaller ones for easier flipping in the frying pan and to make plate friendly portion sizes. I cut the large pieces into 3 small ones. Or leave them monster huge. It's up to you. Season both sides of the chicken with salt and pepper.
  • 3. In a shallow dish combine the flour, garlic powder, 1 tsp salt, 1/2 tsp pepper and cayenne pepper (the seasoning amount is just a estimates) so feel free to add more or less to your liking. In another shallow dish combine the milk and egg. Beat the egg with a fork or whisk until it's completely combined with milk.
  • 4. Set up your assembly line. 1. chicken 2. wet mixture 3. dry mixture 4. a clean plate for a coated chicken Dip the chicken in the wet mixture, then the dry mixture, wet then dry again. Each piece will be dipped 4 times before making it to the clean plate at the end.
  • 5. Heat the canola oil in a heavy skillet over medium heat. Use enough oil to coat the bottom of the pan, but not completely cover the chicken when it's added. Make sure it's good and hot before adding the chicken. Don't use high heat for the oil or it will burn the coating of the chicken before the inside cooks through. Fry the chicken in batches for about 3-31/2 minutes per side. When you flip it, the coating should be golden and crispy. If it's not, it's not ready to flip. Place the cooked pieces on a paper towel lined plate. The finished chicken should be cooked to an internal temperature of 165
  • 6. After frying all the of the chicken , pour off the oil into a measuring cup, keeping as many of the brown bits in the pan as you can. Put about 1/4 cup of the oil back into the pan and add 1/3 cup flour, whisking to make a roux. Continue whisking the oil/flour mixture, scraping the brown bits up and continue cooking until the roux is a nice golden brown color.
  • 7. Slowly add the milk to the roux, whisking constantly until all the milk has been combined. Add additional milk until the gravy is the consistency that you like. Then season, season, season with salt and pepper. Use lots of pepper and salt to taste. If you don't add enough seasoning , the gravy will just taste like liquid flour which is just plain yucky.
  • 8. Serve with a side of mashed potatoes and slather the chicken and taters with the pan gravy.

CHICKEN FRIED STEAK

Chicken Fried Steak image

Chicken Fried Steak is a southern classic made with tender marinated cube steaks that have been breaded and pan fried until golden. And don't forget the creamy white pepper gravy on top!

Provided by The Chunky Chef

Categories     Main Course

Time 1h25m

Number Of Ingredients 16

4 cube steaks (around 1/3 lb each)
enough peanut or vegetable oil to fill your frying pot/pan about 3/4 - 1" up
white gravy ((click on the ingredient name for the recipe for our favorite white gravy!))
2 cups buttermilk
2 large eggs
1 Tbsp Tabasco or hot sauce
1 tsp kosher salt
1 tsp black pepper
1 1/3 cups all purpose flour
1/4 cup cornstarch
1 tsp kosher salt
1 tsp black pepper
1/2 tsp smoked or regular sweet paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried thyme

Steps:

  • Add marinade ingredients (buttermilk, eggs, tabasco sauce, salt and pepper to a large dish (I usually use a baking dish) and whisk to combine.
  • Pat cube steaks dry with paper towels, then add the steaks to the marinade, turning to coat. Cover and refrigerate for at least 1 hour, up to overnight.
  • Add enough oil to be 3/4 - 1" deep in a heavy bottomed pot (I use a shallow dutch oven or deep cast iron skillet), and heat over MED heat until oil reaches 350°F. The amount of oil needed will depend on the size of your pan.
  • Get out a rimmed baking sheet and top it with an oven-safe metal cooling rack. Set close by the frying pan. This will be where you place the fried steaks once they're done.
  • Combine seasoned flour ingredients (flour, cornstarch, salt, pepper, smoked paprika, onion powder, garlic powder, and dried thyme) in a shallow bowl and whisk to combine well.
  • Preheat oven to 225°F. This is to keep the fried steaks warm until they're ready to be served.
  • When the oil is ready, coat one cube steak in the seasoned flour, then carefully add it to the hot oil. Fry for 3-4 minutes per side, until golden brown. Use a frying spider to remove steak from oil and place on prepared baking sheet/cooling rack.
  • Repeat with remaining cube steaks, frying one or two at a time (depending on the size of your pan).
  • When all the steaks are fried, place the baking sheet/cooling rack with the steaks on it to the preheated oven to keep warm while you make the peppered white gravy.
  • Serve chicken fried steaks with gravy poured over the top, sprinkled with a bit of extra pepper.

Time 35m

Yield 6 servings

Number Of Ingredients 9

1/2 cup vegetable oil
6 (4-ounces each) cube steaks
Salt and freshly ground black pepper
1 1/2 cups all-purpose flour
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
4 eggs, beaten
1 1/2 cups whole milk
Chopped parsley leaves, for garnish

Steps:

  • Heat a medium-high skillet over medium-high heat. Add oil. Cook's Note: Oil is heated when you drop a little flour in and the oil spits.
  • Pound out the cube steaks with a meat mallet until they are 1/4 to 1/2-inches thick. Salt and pepper both sides. Mix the flour, cayenne and paprika together in a bowl. Beat the eggs in another bowl. Dredge the steaks through the flour, then egg mixture, then through the flour again.
  • Place the steak carefully in the pan as the oil will splatter. Cook until golden brown, about 4 to 6 minutes on each side. When finished, place on a sheet tray lined with paper towels, hold in a warm oven and repeat the procedure with the other pieces of steak.
  • When all steaks have been cooked off, pour off all but 2 tablespoons of the cooking oil and lower heat. Add 3 tablespoons of the leftover flour mixture to the oil and whisk to create a paste. Cook until golden, about 1 minute. Gradually add the milk to the flour and oil mixture while whisking together. Season the gravy with salt and pepper, to taste. Let cook until thickened; about 10 minutes. Pour gravy over the steak to finish and garnish with parsley.

CHICKEN-FRIED STEAK AND GRAVY

Chicken-Fried Steak and Gravy image

Provided by Michael Chiarello : Food Network

Yield 4 servings

Number Of Ingredients 14

1 lb. beef tip steak
2 large eggs, beaten
1 cup flour
1 cup breadcrumbs
2 Tbs. parsley, chopped
1/4-cup grated Parmesan cheese
Gray salt
freshly-ground black pepper
extra-virgin olive oil for frying
2 Tbs. flour
2 Tbs. red wine
1 cup chicken broth
1 cup heavy cream
2 Tbs. butter

Steps:

  • Cut steak into 4 even portions and place between 2 sheets of plastic wrap. Using a meat tenderizer, pound meat to 1/4-inch thickness.
  • Place eggs in a shallow mixing bowl or pie dish and place 1 cup flour in another shallow bowl. In a third shallow bowl, mix together the breadcrumbs, 1 tablespoon parsley and Parmesan cheese. Season with salt and pepper. Coat steaks with flour and shake off excess. Dip steaks in egg and into breading mixture, pressing mixture into steaks so it sticks. At this point you can cover and refrigerate steaks for up to 2 hours.
  • Heat about 1/3-cup of oil in a large skillet. Add steaks and cook until coating is golden brown, about 2-3 minutes per side. Drain on paper towels and reserve oil in skillet for gravy. Cover steaks to keep warm.
  • To make gravy, drain some of the olive oil from the saute pan, leaving about 2 tablespoons (make sure to keep the browned bits from the steaks in the pan as these add great flavor). Over medium heat, add flour and whisk into oil until flour turns golden brown, about 8 minutes. Remove from heat and whisk in red wine. Whisk in broth and cream. Return to heat and whisk until smooth and thick. Remove from heat and stir in butter and remaining parsley. Season with salt and pepper. Pour gravy over steaks before serving.
