DEEP DISH CHICKEN-FETA PIZZA
I've made this pizza twice and have really enjoyed it. It takes a little preparation, but to me it was worth it. I'm not big on pepperoni pizza so my chicken adaption worked well for me. Hopefully it'll work for you as well.

Steps:
- For the dough: In a sm bowl, dissolve yeast in warm water.
- In a separate bowl combine flour and salt.
- Add yeast mixture and oil and mix thoroughly until dough forms in a ball.
- Place dough ona well-floured board and kneed until smooth; about ten min.
- Dust a lg bowl lightly w/ flour and place dough in it.
- Cover w/ plastic wrap.
- Let dough rise for about an hr.

- (You may try putting the dough into a warmed oven. If you do this, make sure that the oven is warm and turned off when you put the dough in. Also make sure that you put a little oil in the bowl and roll the dough around in it to prevent it from getting har) Once doubled, punch the dough down and w/ a rolling pin, roll out until about one inch thick.
- Place the dough in well greased pie pan and fold the edges over.
- (Or you can cook the it like a regular pizza. I've tried both ways and both have been equally good) For the pizza: Marinate the chicken in the Italian seasonings as the directions on the packet tell you to.
- (or use your own Italian marinade) Cook the chicken (I use my George Foreman Grill) until no longer pink.
- Cut the chicken into strips or chuncks.
- Spread the pizza sauce on the dough and then cover with enough mozz.
- cheese.
- Next add the feta cheese; as much as you feel comfortable with.
- Top with the chicken pieces and sprinkle with a little parm.
- cheese and dried Italian seasoning (opt.) Pop into the oven at about 400 degrees for around 20-25 min.
- Check periodically for doneness.

CHICKEN FETA PIZZA TOPPING
A basic throw-together pizza. This doesn't call for pizza sauce, but one could be used if desired. Goes well with an Italian Herb thin crust, a Lemon Mint thin crust, as well as a Scallion thin crust.

FETA, SPINACH AND CHICKEN SAUSAGE PIZZA
I found spinach, garlic, and feta chicken sausage at the store and thought it would be great on a pizza. I also had canned san marzano tomatoes so I decided to make my own marinara. You can substitute pre-made marinara to make it even easy. I also used whole wheat crust to make it healthier.

Steps:
- Preheat oven to 400 degrees.
- Poke a few holes in the sausage and place in a medium sauce pan over medium high heat and come about half way up the sausage with the EVOO, balsamic, and chicken stock. Occasionally turn the sausages and cook until the liquid has reduced into a glaze. Slice the sausage and return the to pan to coat in the glaze.
- Meanwhile, sautee garlic in a little EVOO on medium low heat for about 1 minute. Make sure it doesn't turn brown. Add tomatoes, oregano, salt, and pepper to taste. You may need to add about a 1 tsp of tomato paste if the sauce is too thin. Let the sauce simmer until ready to use.
- Drizzle a little EVOO on the crust then spread the mariana. Top with chicken sausage, spinach, feta, and provolone. Bake about 10-12 minutes until the cheese is melted.

Steps:
- Prepare pizza dough 2-3 hours ahead of time.
- Dissolve yeast in warm water in a warmed mixing bowl (I use a standing KitchenAid mixer).
- Add salt and flour to mixture and mix with dough hook on speed 2 until dough forms a ball and pulls away from sides of the bowl. Mix on speed two for an additional 2 minutes.
- Place dough in a greased bowl, turning to grease top. Cover with a damp towel and let sit in a warm area without a draft for 2 hours or until doubled in size.
- After it has risen munch it down and then spread the dough over a greased 14-inch or larger pizza pan.
- To make the sauce, combine stewed tomatoes, peppers and garlic in a food processor and puree until they have reached a desired consistency. Strain out excess moisture and spread over dough.
- Make sure that your spinach is well drained by squeezing out any excess water with paper towels. Spread over pizza, followed by remaining vegetables, chicken and finally the cheeses. Brush crust with olive oil.
- Bake at 400 F or until crust is browned and cheese is bubbly.
