GRANDMA'S CREAMY POTATO SOUP
This was my favorite soup my grandma ever made for me. My cousins and I would crave this and beg our grandma to make it for us! Now that I am on my own and starting to cook, I tried this and it is not only easy but tastes just like grandmas soup!

Steps:
- Peel and cut potatoes into the size of your liking and add onion into a large pot.
- Add just enough water to cover your potatoes in your pot, add salt.
- Boil potatoes until soft. Do Not Drain!
- Add the milk, the butter, and the flour to the water.
- Heat stirring continuously until there are no more clumps of flour and butter has melted.
- You may add more salt and pepper.
- Serve and enjoy!

- In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally; drain drippings. Add vegetables, seasonings and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-15 minutes., Mix flour and milk until smooth; stir into soup. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Stir in cheese until melted. If desired, serve with green onions.

- Crumble the ground beef into a large saucepan over medium heat. Cook and stir until no longer pink. Drain off grease and pour in the tomato juice. Add the onion, carrot, and potato. Pour in the entire contents of the cans of corn and green beans. Season with ginger, salt, and pepper. Reduce heat to low and let simmer 1 hour.

This recipe has been in my family for at least 70 years.That is how old my mom is and her mom is the one who made this.It is good if you have an upset stomach.It is very simple and very soothing.I hope you will give it a try.

Steps:
- 1. Put potatoes and onions in a pot.Cover with cold water.Cook on medium high heat till boiling.Boil until fork tender.
- 2. In a tall glass put in the flour and pour in evaporated milk till glass is half full.Fill the rest of the way up with cold water.Stir until completely mixed.
- 3. When potatoes are done pour the milk/flour mixture in while potatoes and onions are boiling.I pour it thru a strainer to keep from having lumps.
- 4. Add butter or margarine.I use about 4 tablespoons.Add salt and pepper to taste.Cook untill thickened.
- 5. Serve over white loaf bread.Or I used French bread,cubed.
GRANDMA'S CREAM OF POTATO SOUP OR BROCCOLI SOUP
This recipe has a slight smoky flavor due to the deli bacon. Broccoli can be substituted for potatoes for Cream of Broccoli Soup. **This recipe can also be used for Clam Chowder. Eliminate the broccoli and use Chopped Clams.

- Empty cans of chicken broth in pot.
- Add cubed potatoes and bring to a boil.
- While potatoes are starting to cook pan fry bacon until crisp and add bacon grease to chicken and potato broth.
- Crumble bacon and add to broth.
- Add diced ham to broth (optional).
- In a sauce pan melt butter and add diced onion, celery and carrots.
- Pan fry until soft.
- When potatoes are done add the celery, carrot and onion mixture with butter to broth.
- Reduce heat to medium and add about 1/4 to 1/2 of the quart of heavy cream.
- Be careful not to have soup at a heavy boil or cream will curdle.
- Add enough cream to make soup look creamy throughout.
- Add cheese (optional).
- Mix corn starch with very cold water and add to soup.
- Continue medium boil until soup thickens.
- If it isn't thick enough repeat corn starch and add slowly.
- Remove from heat and enjoy.
- Soup will thicken when it gets cold.
- Can add milk or water to thin out.

GRAMMA'S POTATO SOUP
My Gramma makes this potato soup every year at christmas, and although she used to put ham in it, she stopped just for me when I stopped eating meat. Oddly enough the family actually liked it better without the meat!

- Put one can of vegetable broth and the rice in a large pot.
- Bring to a boil, turn down heat and simmer 10 min, or until rice is tender.
- Add the onion and celery to the pot, as well as the other can of vegetable broth.
- Simmer 10-15 minutes, or until onions and celery are tender.
- Add the potatoes and 2 cups of water, or enough so that the potatoes are about 2\3 covered.
- Cover and simmer until potatoes are tender but not mushy.
- Add the half and half and the butter and heat on low heat until the soup is thick.
- Make sure to use a wooden or plastic spoon to scrape the bottom of the pot occasionally
- At the last minute, drain the mushrooms and add them.
- Enjoy!

GRANDMA'S KITCHEN HEARTY POTATO SOUP
Grandma's secret: To make this a filling meal, Grandma usually served this soup with fresh bread. For a slightly different twist, serve it in individual bread bowls. I'm thinkin' this could easily be done in the crock pot.

- Peel potatoes and cut into 1-inch cubes.
- Bring water to a boil in large saucepan. Add potatoes and cook until tender.
- Drain, reserving liquid. Set aside potatoes.
- Measure 1 cup cooking liquid, adding water, if necessary; set aside.
- Peel and finely chop onion. Melt butter in saucepan over medium heat.
- Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
- Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.
- Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well. Add cheese and ham.
- Simmer over low heat 30 minutes, stirring frequently.
- Store leftovers, covered in refrigerator.

- Fry bacon until crisp reserving 2 tablespoons drippings in skillet and set aside.
- Over medium heat, sauté onions, garlic, carrots, and celery in bacon drippings until tender.
- Prepare a roux of flour and butter in soup pot.

- Melt butter in a saucepan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
