STIR-FRIED CHICKEN FAJITAS

I developed this recipe one evening when I was hungry for fajitas but didn't want to light the charcoal grill! That makes the preparation a little different from traditional chicken fajitas...but our family likes these better.

4 boneless skinned chicken breast halves cut in thin strips
3/4 cup bottled Italian dressing
1 small mild onion, sliced, separated into rings
1 small green pepper, sliced in strips
1 small red pepper, sliced in strips
1 small yellow pepper, sliced in strips
1 cup sliced fresh mushrooms
1/2 teaspoon garlic salt
2 tablespoons fresh lemon or lime juice
Salt to taste
Black pepper to taste
Flour tortillas
Picante sauce
Sour cream

Steps:

  • In heavy plastic bag, combine chicken strips and dressing; refrigerate several hours or overnight, turning bag occasionally. Drain. , Heat a large nonstick skillet over medium high heat; stir-fry chicken strips and onions for 2 minutes. Add pepper strips and mushrooms; cook and stir until chicken is done and peppers are tender-crisp. Season with garlic salt, lemon juice and salt and pepper as desired. Serve in warm tortillas. Top with picante sauce and sour cream.

Using a grill-safe pizza stone on a grill is a great way to cook fajitas. It results in wonderfully charred chicken and blistered, caramelized veggies in no time. The tangy, spicy and salty marinade is super flavorful. This method for preparing fajitas might just become your new summer favorite.

3 tablespoons olive oil
1 tablespoon chili powder
1 tablespoon chipotle in adobo sauce, chopped
1 tablespoon ground cumin
1 tablespoon garlic powder
Juice of 1 lime
Kosher salt and pepper
1 pound bell peppers, cut into 1/4-inch-thick slices
1 small red onion (about 3 ounces), cut into 1/4-inch-thick slices
1 pound boneless, skinless chicken breast, cut into 1/2-inch-thick slices
8 fajita-size tortillas, warmed
Guacamole, pico de gallo, hot sauce and sour cream, for serving

Steps:

  • Place a grill-safe pizza stone (see Cook's Note) that is at least 14 inches in diameter on a grill. For gas grills with 3 or more burners: Turn all the burners to high heat and close the lid. Let the stone heat until the internal temperature of the grill is 500 degrees F, about 15 minutes. For charcoal grills: Fill a chimney starter with enough charcoal for high heat, then light it (be sure to consult the grill manufacturer's guide for the best results for high-heat cooking). Close the lid and let the stone heat until the internal temperature of the grill is 500 degrees F, about 30 minutes.
  • Meanwhile, make the marinade. Mix the olive oil, chili powder, chipotle in adobo sauce, cumin, garlic powder, lime juice, 2 teaspoons salt and a few grinds of black pepper in a medium bowl. Transfer half of the mixture (about 1/4 cup) to another medium bowl. Add the peppers and onions to one bowl and mix to combine. Add the chicken to the other bowl and mix to combine.
  • Place the chicken on one half of the pizza stone and the peppers and onions on the other half. Close the grill and cook until the chicken is cooked through, has a nice char on the bottom and the vegetables are softened and caramelized on the bottom, 10 to 12 minutes (3 to 5 minutes if using a charcoal grill).
  • Transfer the chicken and vegetables to a platter and serve in the tortillas with the guacamole, pico de gallo, hot sauce and sour cream, if desired.

Steps:

  • Make the mojo de ajo: Cook oil and garlic in a small saucepan over low heat until garlic is soft and fragrant, about 8 minutes. Remove from heat, and stir in lime juice, red-pepper flakes, and salt.
  • Make the fajitas: Heat a large skillet (preferably cast-iron) over high heat. Add oil, and gently swirl to coat. Add onion and bell pepper, and season with 1/4 teaspoon salt. Cook, stirring frequently, until onion is browned in spots, and pepper has softened slightly and skin is blistered, about 5 minutes. Add chicken and 1 teaspoon salt, and cook, stirring frequently, until chicken is browned and cooked through, 5 to 7 minutes. Add the mojo de ajo, and stir to coat. Season with salt and pepper. Serve immediately with warmed tortillas, guacamole, pico de gallo, sour cream, and cheese.

1 teaspoon cumin
Kosher salt
2 tablespoons olive oil
1 pound boneless skinless chicken thighs (about 4), cut into 1/2-inch strips

1 small yellow onion, halved and thinly sliced
8 ounces penne (see Cook's Note)
6 ounces cream cheese, cubed
4 ounces pepper jack cheese, shredded

Steps:

  • Heat the broiler to high. Combine the chili powder, cumin and 1 tablespoon salt in a small bowl.
  • Heat the oil in a large, high-sided skillet over medium-high heat. Add the chicken and chili powder mixture and cook, tossing occasionally, until the chicken just starts to change color and the spices are toasted, about 2 minutes. Add the peppers and onions and cook until they just begin to release some of their juices, 3 to 4 minutes.
  • Add the pasta and 2 1/2 cups water to the skillet and bring to a boil over medium-high heat. Once it comes to a boil, continue to cook, stirring occasionally, until the pasta is al dente and the sauce is thickened and reduced by about half, 14 to 16 minutes. Remove from the heat and stir in the cream cheese until melted. Sprinkle the pepper jack and crushed chips over the top. Transfer to the broiler and cook until the cheese is bubbly and starting to brown in spots, 2 to 3 minutes.

1 pound baby bell peppers (12 to 15 peppers), halved, stemmed and seeded
1 large yellow onion, halved and thinly sliced
2 tablespoons extra-virgin olive oil
1 1/2 pounds boneless, skinless chicken breast
Juice of 1 lime, plus lime wedges, for serving
8 fajita-size flour tortillas, warmed
Shredded Monterey Jack cheese, guacamole, hot sauce, salsa and sour cream, for serving

Steps:

  • Preheat the broiler to high. Line a rimmed baking sheet with foil.
  • Combine the chili powder, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Put the peppers and onions on the prepared baking sheet, drizzle with 1 tablespoon of the oil and season with half the chili powder mixture. Broil until softened and starting to char, about 10 minutes.
  • Meanwhile, cut the chicken into 1/4-inch-thick slices and toss in a large bowl with the remaining chile powder mixture and 1 tablespoon oil.
  • After the peppers are softened and starting to char, about 10 minutes, scatter the chicken on top of the peppers and onions and return the baking sheet to the broiler until the chicken is cooked through and starting to brown, about 5 minutes more. Drizzle with the lime juice.
  • Serve with the warmed tortillas, Monterey Jack cheese, guacamole, hot sauce, salsa, sour cream and lime wedges.

2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 clove garlic, finely chopped
1 lb boneless skinless chicken breasts, cut into thin strips
1 medium onion, cut into thin wedges
1 medium green bell pepper, cut into strips
1 to 2 medium jalapeño chiles, seeded, finely chopped
12 soft yellow corn tortillas (6 inch; 10 oz), cut into 1-inch strips
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
1 cup reduced-fat sour cream
3 tablespoons chopped fresh cilantro
1/4 teaspoon ground red pepper (cayenne)
1 carton (8 oz) fat-free egg product (1 cup)
3/4 cup fat-free (skim) milk
1 can (10 3/4 oz) condensed 98% fat-free cream of chicken soup with 45% less sodium
1 medium tomato, chopped

Steps:

  • In small bowl, stir together oil, chili powder, cumin, salt and garlic. Place chicken in resealable food-storage plastic bag; add chili powder mixture. Seal bag and shake to coat chicken with spices. Refrigerate 30 minutes.
  • Heat 10-inch nonstick skillet over medium-high heat. Add chicken mixture; cook 5 to 7 minutes, stirring frequently, until chicken is no longer pink in center. Transfer from skillet to plate. In same skillet, cook onion, bell pepper and chiles over medium-high heat 5 to 7 minutes, stirring frequently, until crisp-tender.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange half of the tortilla strips in baking dish. Top with chicken, half of the vegetable mixture and 1/4 cup of the cheese. Repeat layers with remaining tortilla strips, vegetables and 1/4 cup cheese. In medium bowl, stir sour cream, 2 tablespoons of the cilantro, the red pepper, egg product, milk and soup with whisk. Pour over chicken mixture. Cover; refrigerate 2 hours or overnight.
  • Heat oven to 350°F. Uncover baking dish. Bake 48 to 52 minutes or until egg mixture is set. Sprinkle with tomato and remaining 1 tablespoon cilantro. Let stand 5 minutes before serving.

  • Preheat the oven to 425 degrees F. Mix the chili powder, 1/2 teaspoon cumin, and 1/4 teaspoon each salt and pepper and rub on the chicken breasts. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook, turning, until golden, 4 to 5 minutes. 1 tablespoon unsalted butter
1 medium onion, finely chopped
3 celery ribs, finely chopped
6 ounces asparagus, woody stems discarded, cut into 1 inch pieces
1/4 cup water
4 cups cubed cooked chicken (1 inch cubes)
1 cup mayonnaise
1 1/2 cups milk
1 1/2 cups chicken broth
6 large eggs
1 tablespoon chopped parsley
1 tablespoon chopped chives
1 teaspoon salt
1/2 teaspoon black pepper
6 cups cubed French bread (1 inch cubes)
1 cup shredded sharp cheddar cheese

Steps:

  • Heat butter in large skillet over medium heat. Add onion and celery and cook uncovered, stirring occasionally, about 5 minutes. Add asparagus, water and cover. Cook until asparagus is crisp-tender, about 3 minutes. Uncover and cook until all liquid is evaporated, about 2 minutes. Transfer vegetables to large bowl.
  • Add chicken and mayonnaise, mix well. Whisk milk, broth, eggs, parsley, chives, salt and pepper in another bowl.
  • Lightly butter a 13x9 inch glass baking dish. Spread half of bread cubes in dish; top with chicken mixture. Spread remaining cubes over chicken. Pour egg mixture over ingredients in dish. Cover and refrigerate for 4 to 10 hours.

1 1/2 lbs flank steaks or 1 1/2 lbs chicken breasts
5 teaspoons mccormicks fajita seasoning mix (in the packet)
1/2 teaspoon oregano
1/4 cup olive oil
1/4 cup vinegar (red wine vinegar for beef fajitas or white wine vinegar for chicken fajitas)
1 seeded chopped habanero pepper
1 tablespoon lime juice
1 teaspoon of mccormicks spicy McCormick's Montreal Brand steak seasoning, for beef fajitas (found in the seasoning section at the grocery store) or 1 teaspoon Montreal roasted garlic chicken seasoning, for chicken fajitas (found in the seasoning section at the grocery store)
1 red bell pepper
1 green bell pepper
1 large yellow sweet onion
1/4 cup olive oil
cheese (optional)
sour cream (optional)

Steps:

  • Mix all marinade ingredients and pour over the meat (you can put it all in a large zip-lock).
  • Marinate atleast two hours or overnight.
  • Grill meat until cooked through.
  • Slice meat into strips.
  • Heat the 1/4 cup of olive oil in a saute pan on the stove and begin sauteeing the onions over medium heat.
  • Cook until soft.
  • Add the peppers and continue to cook until peppers are soft and onions are beginning to brown and crisp.
  • Serve on Flour Tortillas, add meat then peppers& onions& any of the optional toppings.
