CHICKEN EN PAPILOTTE - MANY WAYS

4 skinless, boneless chicken breast halves, tenderloins removed
3 tablespoons green or black olive paste
1 tablespoon vegetable oil
3 (12 ounces) new potatoes, washed
2 ripe tomatoes
Salt and freshly ground black pepper
4 small tomatoes, washed and cored and sliced

Steps:

  • Preheat the oven to 450 degrees. Rub the olive paste on both sides of each chicken breast half. Cut the potatoes into 1/16th-inch slices and thinly slice the tomatoes. Set 4 12-inch squares of foil on the counter. Lightly oil the center of each piece of foil and spread some potato slices in the middle; season them with salt and pepper. Cover the potatoes with a chicken breast half, then cover with more potato slices, salt and pepper and the tomato slices. Wrap the chicken airtight, in a deli sandwich wrap, and set the packages on a baking sheet. Bake for 30 minutes. When the chicken is done unwrap the packages carefully (be careful the steam which will escape when you open the packages does not burn your hands.) Transfer the chicken, potatoes, tomatoes and the natural juices to deep plates. Variations: Instead of the potatoes spread 1/2 cup drained canned white beans, a couple of slivers of fresh garlic, a leaf or two of fresh sage and a teaspoon of extra virgin olive oil underneath the chicken. Top the chicken with the tomatoes. Or spread each chicken breast half with 1 teaspoon each of oriental sesame oil, soy sauce and rice vinegar. Top each chicken breast half with 1/2 cup sliced jicama; 1 cup raw fresh spinach and 1 sliced scallion. Open and garnish with sesame seeds. Or, instead of the green olive paste and tomatoes, season each chicken breast half with barbecue sauce or ketchup and top with 1/2 cup of frozen corn kernels; leave the potatoes in (especially good for kids)

2 heads roasted garlic
8 egg yolks*
1/2 cup lemon juice
1 1/2 cups loosely packed basil
2 cups olive oil
2 whole chicken breasts, boneless, skin removed
1/2 cup black olives, chopped
13 3/4-ounce can of artichoke hearts, drained, chopped
1 teaspoon fresh tarragon
1/4 teaspoon Kosher salt
1/4 teaspoon pepper
4 thin slices baked ham
1/2 cup sharp cheddar, grated
2 thin slices of Lorraine swiss cheese
String
Flour

Steps:

  • Aioli: Put garlic in blender with the yolks, lemon juice and basil. Slowly add olive oil. Set aside.
  • Preheat oven to 400 degrees.
  • Pound out the chicken until thin. Place the breasts one on top of the other in an overlapping fashion. Mix the olives, artichokes, tarragon, salt and pepper together.
  • Place 2 pieces of the ham on top of the chicken in an overlapping manner. Then add the artichoke mixture. Sprinkle the cheddar cheese on top. Layer with a slice of the Swiss cheese. Place 2 more ham slices on top. Place remaining slice of Swiss on top of ham. Roll the chicken log and tie with the string. Chill.
  • Toss in seasoned flour and saute on all sides until golden brown. Place in oven and bake 25 minutes. Remove and chill.
  • Cut off string and slice thin. Serve with Basil aioli.

1 teaspoon marjoram
1 teaspoon rosemary
2 teaspoons thyme
1 teaspoon basil
1/4 cup light salad oil
1 (1 pound) baby chicken, boned with skin intact
1/2 cup dry white wine
6 ounces pork fat, cubed
1 medium onion, finely sliced
1 shallot, finely sliced
1 bay leaf
8 ounces chicken livers, finely chopped
Freshly ground salt, to taste
Freshly ground white pepper, to taste
1/4 cup clarified butter

Steps:

  • Combine marjoram, rosemary, 1 teaspoon thyme and basil with salad oil in small pot. Simmer over low heat for 10 minutes. Strain through fine sieve and discard herbs. Drown bird in oil and add wine. Marinate for 3 hours, refrigerated
  • Meanwhile, fry pork fat in heavy saucepan until mostly rendered. Remove and discard crisp fatty pieces. Add onion and shallot. Lower heat and add remaining thyme and bay leaf. Add chicken livers and cook until browned. Remove bay leaf and pass liver mixture through a meat grinder or sieve.
  • After bird has marinated, preheat oven to 350 degrees F. Dry bird thoroughly inside and out with paper towels and place sieved 'pate' into rear cavity. Remold bird to its natural shape and secure both ends with poultry pins, then truss. Season bird with salt and white pepper, coat with clarified butter, and roast at 350 degrees F. for 45 to 60 minutes, until nicely browned and tender. Remove from the oven.
  • Turn up oven to 450 degrees F. Cut 1 (20 by 18-inch) sheet of parchment paper in a heart shape. Grease well with clarified butter or oil. Place cooked chicken on one side of the heart, remove string and pins and enclose it in paper, pleating edges together to secure (use staples, if you have to!). Heat a little oil in large skillet and add parchment package. The air inside will expand, forcing the package to 'blow up'. When fully expanded, grease the outer surface and place in oven until lightly browned and remove immediately. To serve, open bag and cut bird in two.
