These easy baked chicken drumsticks are crispy on the outside, and moist on the inside--a flavorful, cheap meal to make any time!

6 (4 ounce) bone-in chicken drumsticks, with skin
6 tablespoons unsalted butter
½ cup extra-virgin olive oil, divided
1 pinch garlic salt, or to taste
1 pinch seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a glass baking dish with aluminum foil.
  • Spread 1/4 cup of olive oil over the bottom of the prepared baking dish and line up drumsticks on top, alternating directions so that they fit. Top with 1 tablespoon of butter each, on the thick part of the chicken. Sprinkle with garlic salt, seasoned salt, salt, and pepper.
  • Bake in the preheated oven for 35 minutes. Cover chicken with remaining olive oil; continue to bake until juices run clear and chicken is no longer pink in the centers, 10 to 15 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Serve.

6 chicken drumsticks
½ cup water
⅓ cup ketchup
⅓ cup white vinegar
¼ cup brown sugar
4 teaspoons butter
2 teaspoons salt
2 teaspoons Worcestershire sauce, or to taste
2 teaspoons dry mustard
2 teaspoons chili powder, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place drumsticks in a baking dish.
  • Whisk water, ketchup, vinegar, brown sugar, butter, salt, Worcestershire sauce, mustard, and chili powder together in a bowl; pour mixture over drumsticks. Cover with aluminum foil.
  • Bake in preheated oven until no longer pink at the bone and the juices run clear, about 1 hour, turning chicken about halfway through. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1/2 cup plain nonfat yogurt
2 tablespoons fresh lemon juice
1 tablespoon curry, preferably madras but any will do
1 tablespoon fresh ginger, grated and peeled
2 garlic cloves, minced
1 teaspoon ground cumin
1/4 teaspoon hot pepper sauce
8 (1/4 lb) skinned chicken drumsticks
3/4 teaspoon salt

Steps:

  • Combine all ingredients except salt in Ziploc bag.
  • Refrigerate, turning occasionally, for 30 minutes or overnight.
  • Spray grill with nonstick spray, preheat grill to medium heat or prepare medium fire.
  • Remove chicken from marinade and sprinkle with salt. Discard marinade.
  • Grill, turning occasionally, until instant read thermometer reads 180°F (about 18 minutes).
  • I like to add seasoned salt in place of salt, add more hot sauce and garlic pepper, makes DH happy! I serve with naan, hummus and cucumbers.
  • WW = 3 points.

3 tablespoons walnuts
12 chicken drumsticks (3 pounds total)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup extra-virgin olive oil
1/2 cup drained bottled roasted red peppers (from a 7-ounce jar)
1/3 cup fine fresh bread crumbs (from 1 slice firm white sandwich bread)
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1 teaspoon pomegranate molasses or 2 teaspoons fresh lemon juice
1/2 teaspoon ground cumin
1/8 teaspoon cayenne

Steps:

  • Put oven rack in lower third of oven and preheat oven to 475°F. While oven is preheating, toast nuts on a baking sheet in oven until golden, 3 to 4 minutes.
  • Pat chicken dry, then put in a large shallow heavy baking pan (1 inch deep) without crowding and rub with salt, pepper, and 2 tablespoons oil. Bake, without turning, until golden brown and cooked through, 30 to 35 minutes.
  • While chicken bakes, blend together bell peppers, bread crumbs, walnuts, garlic paste, pomegranate molasses, cumin, and cayenne in a food processor until as smooth as possible, about 1 minute. With motor running, gradually add remaining 6 tablespoons oil and blend until combined well. Season sauce with salt and drizzle over baked chicken.
