1 ½ cups white sugar
1 cup soy sauce
1 cup water
2 tablespoons ground ginger
3 cloves garlic, diced
¾ teaspoon ground cinnamon
¼ teaspoon ground black pepper
1 ½ pounds chicken drumettes

Steps:

  • Combine sugar, soy sauce, and water in an 8-quart pot; stir until sugar is dissolved. Turn heat to medium-high; add ginger, garlic, cinnamon, and black pepper and stir.
  • Bring mixture to a boil and add chicken drumettes. Once mixture begins to boil again, reduce heat to medium-low, and partially cover pot with a lid tilted to allow steam to escape. Simmer until chicken is no longer pink in the center and teriyaki sauce is thickened, at least 1 hour.

This is a family favorite and so simple. I first got the recipe from a friend who was a chef in a Japanese restaurant. When I married my husband he was using the same recipe he got from his Japanese ex-mother-in-law. It is so versatile we have used it for chicken breasts, wings, thighs, salmon, halibut, beef-kabobs - even veggies!

8 -12 chicken drumsticks
1 cup soy sauce
1 cup brown sugar, packed
1 cup water
3 tablespoons olive oil or 3 tablespoons canola oil
1 teaspoon ginger (optional)

Steps:

  • Heat oil in a large saucepan over medium high heat.
  • Brown chicken pieces in hot oil.
  • While chicken is browning, mix together the soy sauce, sugar, water, and ginger.
  • Add the sauce to the chicken.
  • Bring to a boil and then reduce heat to medium low and let simmer, uncovered, for about 20 to 30 minutes or until chicken is done and sauce has thickened.
  • Turn chicken pieces occasionally during cooking process.
  • Serve over cooked rice.(We use short grain "sticky rice" prepared in a rice cooker.).
  • Serve excess sauce along side, people always seem to want more of it.
  • To reduce the calories, skinless chicken may be used.

This recipe make about 70 chicken drumettes, enough to feed a crowd, they are simply delicious! I have only used Kikkoman brand teriyaki glaze sauce for these, so I cannot say how they would be using another brand of teriyaki glaze. Save the other half of the wing for stock. Prep time does not include separating the wings in half.

1/4 cup dry sherry
black pepper (optional)
70 chicken drummettes
1 1/3 cups teriyaki sauce (I use Kikkoman)
3 tablespoons fresh minced garlic (can use less)
3 tablespoons toasted sesame seeds

Steps:

  • Set oven to 425 degrees.
  • Prepare a large foil-lined baking sheet that has been lightly greased with cooking spray.
  • In a large bowl combine soy sauce and sherry; add in the drumettes and toss in the sauce mixture to coat.
  • Arrange the drumettes side by side (you can season the drumettes with pepper if desired).
  • Bake for about 20 minutes.
  • In a bowl mix the teriyaki glaze and garlic, then brush tops of drumettes with half of the glaze.
  • Turn over drumettes and brush with remaining glaze mixture.
  • Return to oven and bake for 15 minutes or until drumettes are no longer pink inside.
  • Sprinkle with sesame seeds and serve.

1/3 cup reduced-sodium soy sauce
1/4 cup sweet Marsala wine
1/4 packed cup light brown sugar
2 tablespoons sesame oil
2 cloves garlic, minced
2 tablespoons chili powder
1 to 1 1/2 teaspoons crushed red pepper flakes
3 pounds chicken drumettes
Vegetable oil cooking spray
Kosher salt
1 1/2 teaspoons ground arrowroot powder or 1 tablespoon cornstarch
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a medium bowl, whisk together the pineapple juice, soy sauce, Marsala wine, brown sugar, sesame oil, garlic, chili powder, and red pepper flakes until the sugar is dissolved. Put the chicken drumettes in a 1-gallon size, resealable plastic bag. Add the pineapple liquid to the chicken and seal removing as much air as possible from the bag. Marinate the chicken for 3 hours in the refrigerator.
  • Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray it liberally with vegetable cooking spray.
  • Remove the chicken from the marinade and arrange in a single layer on the prepared pan. Season the chicken with salt, to taste, and bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, put the marinade into a small saucepan. Whisk in the arrowroot or cornstarch, if using, and bring to a boil over medium heat (in order to kill bacteria). Reduce the heat to a low boil and cook until thick, about 5 minutes. Cool for 10 minutes.
  • Using a pastry brush, brush some of the cooked marinade over the chicken or pour it into a small bowl and serve on the side. Arrange the chicken on a platter, sprinkle with chopped cilantro and serve.

1/2 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
5 sprigs of rosemary
5 garlic cloves, halved
10 to 12 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the balsamic, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves, in a large, re-sealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the brown sugar. Add the chicken drumsticks to the bag and seal with as little air as possible in the bag. Place in the refrigerator and marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Place the chicken drumsticks on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve.
  • Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the sesame seeds and the chopped parsley.
  • Cook's note: I like the rosemary and garlic flavors in the background. Brushing the cooked drumettes with the reduced marinade helps the flavors along. Also, re-moistening helps the parsley and the seeds to adhere.

3 pounds chicken wing drumettes
1 tablespoon salt
1 teaspoon ground black pepper
1 bottle (10 ounces) teriyaki marinade sauce (recommended: Kikkoman)
1 can (8 ounces) crushed pineapple (recommended: Dole)
2 tablespoons sesame seeds, for garnish
Peanut Dipping Sauce, recipe follows
Vegi-Ranch Dipping Sauce, recipe follows
1 cup organic smooth peanut butter (recommended: Laura Scudder's)
1/4 cup limeade frozen from concentrate, defrosted
1 cup plain yogurt (recommended: Dannon)
1 teaspoon chili-garlic sauce
1/2 teaspoon salt
1 container (8 ounces) chive cream cheese (recommended: Philadelphia)
1 cup sour cream
In a small bowl combine the cream cheese and sour cream. Mix it together with a spoon.

Steps:

  • Preheat oven to 400 degrees F.
  • Wash and pat dry the chicken drumettes. Season with salt and pepper. Place the chicken in large zip-top bag. Pour the teriyaki marinade and crushed pineapple into the bag. Zip the bag and mix the chicken around with your hands by squeezing the bag. Place the bag in the refrigerator and let sit for 1 hour.
  • When ready to cook the drumettes, line a baking sheet with tin foil. Remove the drumettes from the marinade bag and place them on the baking sheet, leaving some space between each piece. Throw away the marinade bag and wash hands with warm water and soap.
  • Using oven mitts place the baking sheet in the oven and bake for 40 minutes. Remove the drumettes from the oven with baking mitts and, using tongs, place the drumettes on a serving plate. Sprinkle with sesame seeds and serve with Peanut and Vegi-Ranch Dipping Sauces.
  • In a small bowl combine the peanut butter, limeade, and yogurt. Mix it all together with a spoon or whisk. Stir in the chili-garlic sauce and season with salt. Refrigerate until ready to serve.;
  • Refrigerate until ready to serve.

1 cup sugar
1 cup soy sauce
1 cup red wine
sesame seeds, toasted
parsley

Steps:

  • Rinse off chicken.
  • Combine all ingredients, except chicken, and bring to a boil. Leave on a low boil for 15 minutes.
  • Add in chicken drummettes. Let boil for one hour or more until it all thickens and becomes sticky.
  • Then let it stand for about ten minutes and then refrigerate.
  • Can serve warm or cold(I have had them both ways and either way is good).
  • Sprinkle with sesame seeds once arranged on platter and garnish with parsley.

vegetable oil
1 onion, sliced (optional)
1 green bell pepper, seeded and sliced (optional)

1 medium onion, finely chopped

1/2 teaspoon dried chili pepper flakes (optional or to taste, add in for extra heat) or 1/8-1/4 teaspoon red pepper powder (optional or to taste, add in for extra heat)
1/3 cup teriyaki sauce (can use soy sauce in place of teriyaki sauce)
1/4 cup brown sugar, packed
1/4 cup dark molasses
1/4 cup honey
1 1/3 cups ketchup
2 teaspoons Worcestershire sauce
1 (12 ounce) jar apricot preserves
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Sprinkle the sliced green pepper and sliced onion in the baking dish, if using.
  • Season the chicken with salt and pepper on all sides.
  • In a skillet, brown the chicken in hot oil until very well browned on all sides.
  • Place the chicken in the prepared baking dish on top of the onions and pepper slices.
  • In a saucepan melt butter and saute the onion and garlic with chili pepper (beware! use only 1/8 - 1/4 teaspoon chili powder it is VERY hot!) or chili flakes for about 3 minutes.
  • Stir in all the remaining ingredients (except the cornstarch and water) bring to a boil and simmer for 15-20.
  • In a small cup whisk together the cold water with cornstarch, add to the simmering sauce and cook for 2-3 minutes until thickened.
  • Pour the sauce over the chicken, with tongs turn the chicken pieces to coat with the sauce.
  • Bake for about 45-50 minutes, or until the chicken legs are cooked.
  • NOTE* for wings (do not brown wings firstly)use about 3-1/2 pounds.
  • Prepare the sauce as directed.
  • Place the wings in a shallow baking sheet (omitting onion and green pepper) then pour the prepared sauce over wings, and turn to coat.
  • Bake 400 degrees for about 35 minutes or until the sauce has thickened and the wings are cooked.
  • Delicious!
