DAHI CHICKEN RECIPE - CURD CHICKEN CURRY RECIPE
Spicy, tangy and very flavourful dahi chicken which taste great with roti, rice or pulao. Super delicious and lipsmacking curry.

Steps:
- Heat 2 tblsp oil in a pan, add chicken, along with salt and turmeric powder. Saute this on high heat till chicken is seared on all sides. Remove to a bowl. Set aside.
- In the same pan, add 3 more tblsp of oil, add cumin and cinnamon.
- Add onions, and saute till golden brown.
- Add green chillies and ginger garlic paste and saute till raw smell leaves.
- Now add in all masala powder and salt. Mix well.
- Add chicken back in and toss well with the masala.
- Add in dahi and mix well.
- Cover and simmer for 20 mins till chicken is done.
- Add kasuri methi leaves, coriander leaves and mix well.
- Serve.

The name of this dish translates to CHICKEN IN YOGURT. This is a classic Indian dish and is gorgeous. Prepare the chicken the day before cooking it. Cooking time is only 30 mins.

Steps:
- Cut the chicken joints into two.
- In blender process the yogurt, garlic, ginger, red chillies, turmeric, and ground coriander, till smooth.
- In a large bowl put the chicken and cover with the spice mix, stir well and refrigerate overnight.
- Transfer the chicken and its marinade to a pot, cover with a lid and cook over medium heat till the chicken is tender. Remove from the heat.
- In a large frying pan heat the oil. fry the onions till brown. Add the chicken and fry for 4 mins stirring a few times.
- Add the green chillies, salt and garam masala, cook for 3 minutes Remove from the heat, stir in half of the coriander leaves.
- Serve with the remaining coriander leaves sprinkled on top.

- Dahi Chicken is a truly indulgent delicacy that can be prepared quickly using some easily available ingredients. Soak the chicken chunks in lukewarm water with a small pinch of salt for 15 minutes. Then wash and clean the chicken and cut into roughly equal-sized cubes.
- Take a large bowl and add a paste of 2 small green chillies. Then add curd and marinate the chicken pieces along with ginger-garlic paste, cardamom powder and salt. Once the chicken pieces are properly coated, keep them aside for 2 hours so that the flavours are well-absorbed by the chicken pieces. The texture of curd is such that you can cook it even with minimum oil as it releases a creamy residue that makes it a healthy option!
- Then, take a pan and melt butter in it over medium flame. If you want to make it healthy, then you can also use low-fat butter. Once the butter starts to melt, add onions and saute till they become light pinkish in colour.
- Once the onions are transparent, add the marinated chicken pieces and cook for 2 minutes. Put the lid on and let it simmer for 15 minutes. To make it rich and creamy, you can add some fresh cream to this dish. It tastes better when you add some finely chopped coriander leaves and chopped chillies.

- In a sufficiently large bowl, add yogurt, turmeric, cumin-coriander, red chilli, Kashmiri red chilli, and garam masala powders. Also add lemon juice, salt, and pepper to season. Add chicken pieces, mix well, leave it to marinate for a minimum of 1 hour or overnight (the longer the better).
- Heat oil + butter in a heavy-bottomed pot, add in cloves, peppercorns, cardamom, cinnamon and bay leaf, sauté for few seconds.
- Add in the sliced onions, sauté until golden brown. You can also add some slit green chillies, for more heat, at this stage.
