When we set out to create the best cutlets, we sought perfectly tender chicken that was flavorful and juicy -- not tasteless and dry -- with a crisp, breaded exterior that stayed put and didn't get soggy. After trying different methods, we found that a mix of panko and Pecorino Romano creates the salty, crunchy crust we crave, while dried spices in both the flour and breadcrumb mixtures ensure that our cutlets are never bland.

4 boneless, skinless chicken breasts (about 2 pounds)
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons onion powder
1 teaspoon crushed red pepper flakes, optional
3 large eggs
2 1/2 cups panko breadcrumbs
1/2 cup grated Pecorino-Romano
1 stick (8 tablespoons) unsalted butter
1/2 cup olive oil
Lemon wedges, for serving, optional

Steps:

  • Place a wire rack inside a rimmed baking sheet. Preheat the oven to 200 degrees F.
  • Cut the chicken breasts in half lengthwise making 8 roughly equal pieces. (They should look like large chicken tenders.) Place one sheet of plastic wrap on a clean cutting board. Put one chicken piece in the center of the plastic wrap and top with another sheet. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4 inch thick. Transfer to the prepared baking sheet. Repeat with the remaining chicken.
  • Set up a standard breading station: mix the flour, 1 tablespoon kosher salt, 1 teaspoon granulated garlic, 1 teaspoon onion powder and 1/2 teaspoon freshly ground black pepper and 1/2 teaspoon crushed red pepper flakes if using, if using, in a shallow dish.
  • Beat the eggs with 1 tablespoon water in a second shallow dish.
  • Mix the panko, Pecorino-Romano, 1 tablespoon kosher salt, the remaining 1 teaspoon granulated garlic, the remaining 1 teaspoon onion powder, 1/2 teaspoon freshly ground black pepper and the remaining 1/2 teaspoon crushed red pepper flakes if using, in a third shallow dish.
  • Dredge one piece of chicken in the flour mixture, turning to coat evenly. Shake off any excess, then dip into the egg mixture, turning to fully coat it on both sides. Let the excess egg drip off, then press the chicken firmly into the breadcrumb mixture, turning to coat on both sides and packing the crumbs into any crevices. Transfer the chicken back to the baking sheet and repeat with the remaining chicken pieces.
  • Line a clean baking sheet with a clean wire rack. Heat 2 tablespoons of the unsalted butter and 2 tablespoons of the olive oil in a large skillet over medium-low heat. Add 2 pieces of chicken and cook until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side. Transfer to the clean wire rack, season with salt and hold in the oven at 200 degrees F to keep warm. Wipe the skillet clean and repeat with the remaining butter, olive oil and chicken, making 4 batches in total.
  • Serve with lemon wedges, if desired.

2 tablespoons crushed New Mexican chile
1 teaspoon chipotle powder

1/2 teaspoon garlic powder

Steps:

  • Start by preparing the chicken. Each chicken breast gets cut in half horizontally and pounded down with a mallet or skillet. Use plastic or parchment paper to surround the cutlets when pounding them down. Ideally you end up with four even thickness chicken cutlets.
  • Add the listed spice mixture ingredients to a bowl and combine well. (Keep in mind that there's lots of leeway on the spice mixture so feel free to use what you have.)
  • Combine the spice mixture with 2 cups of bread crumbs and 1/2 cup of crumbled Cotija cheese.
  • Your cutlet assembly line will have three stops. The first is a plate with 1/2 cup of flour, followed by a bowl with 2 whisked eggs, and then the seasoned breadcrumbs. Dredge each cutlet in the flour, eggs, and breadcrumbs. Be sure to push the breadcrumbs into the chicken to create an even layer.

300 g (10 oz) of breadcrumbs
2 whole medium eggs
100 ml of milk
fine salt and ground black pepper to taste
1 liter of vegetable oil for frying

  • In a bowl beat the eggs with milk, fine salt and ground black pepper. Set aside.
  • With a sharp knife slice the chicken breast horizontally, trying to make chicken slices as thin as possible.
  • Place the chicken slices in the bowl with the beaten eggs and milk and set them aside to flavor, possibly in the fridge.
  • Make homemade breadcrumbs using stale bread, breadsticks, saltine crackers, taralli and slices of bread loaf as long as they are dry or toasted.

This is simple to make and so good! I have made it several times and plan on making it on a regular basis, we really enjoyed this chicken dish. Although it does not say to, I deglazed the pan with about 1/4 cup dry white wine after I browned the cutlets and transfered them to a plate, you can also deglaze with dry vermouth. If you don't care for garlic then leave it out.

  • Flatten chicken breasts slightly between two pieces of plastic wrap.

  • Coat the chicken with flour mixture.
  • In a heavy large skillet oven medium heat melt the butter with olive oil.
  • Add the chicken and brown for about 3-4 minutes on each side; transfer to a plate.
  • At this point you can deglaze with white wine if desired.
  • Add in sliced mushrooms, onion, garlic (if using) and remaining 1/2 teaspoons dried thyme; saute until mushrooms are brown (about 5 minutes).
  • Mix in reserved 1 tablespoon flour; cook 1 minute.
  • Add in the whipping cream, grated Parmesan cheese and chicken broth; bring to a boil and stir occasionally.
  • Return the chicken and any juices to the skillet.
  • Reduce heat to medium-low and simmer uncovered until the chicken is cooked through and the gravy thickens slighty (about 5-8 minutes).

1 cup flour**
salt (pinch) and pepper (pinch) to season flour + more to season sauce
3 tbsp butter, divided
3 tbsp olive oil
3 shallots, diced (sub with red onion)
2 cloves garlic, minced
1 tsp thyme
1/4 cup pilsner or white wine to deglaze pan (or use chicken stock)
1 1/2 cup chicken stock
1 cup heavy cream

Steps:

  • In a shallow bowl or plate mix flour, pinch of salt and pepper. Dredge the chicken cutlets and shake off excess.
  • In a large cast iron or stainless steel skillet over medium high heat melt 1 tbsp butter + 1 tbsp olive oil and sear four of the cutlets until golden brown on each side. Remove from pan, add butter and olive oil and repeat for the next four cutlets.
  • Bring the heat down to medium, place last 1 tbsp or butter and olive oil in pan and saute (about 3 mins) the shallots, garlic, thyme and season with salt and pepper to taste.
  • Deglaze the pan with a bit of beer/wine/stock and scrape off brown bits. Add chicken stock, bring to simmer and let reduce by half.
  • Add the cream, stir, add all the chicken cutlets and simmer for about 8 minutes until sauce thickens and cutlets are fully cooked. Serve family style with pasta, mashed potatoes, rice or roasted veggies.

2 cups panko breadcrumbs
1/4 cup chopped fresh parsley, plus whole leaves for garnish
2 tablespoons freshly grated pecorino, plus more for garnish
1 tablespoon granulated garlic
1 teaspoon kosher salt
Two 6- to 8-ounce chicken breasts
2 cups olive oil
4 large or 6 small cloves garlic
1 stick unsalted butter
2 lemons, halved

Steps:

  • Beat the eggs and 1 tablespoon water in a shallow bowl. Set aside until ready to fry.
  • In a food processor, pulse the breadcrumbs with the parsley, pecorino, granulated garlic and salt until just incorporated. Transfer the breadcrumbs to a shallow dish.
  • Cut the chicken breasts in half crosswise. On a sturdy cutting board, place a piece of chicken between 2 pieces of plastic wrap. Using a mallet or other blunt object, pound the chicken into a flat piece about 1/8-inch to 1/4-inch thick. Repeat with the remaining chicken.
  • Heat 1 cup olive oil to 350 degrees F in a 14-inch cast-iron pan with the garlic cloves. Line a sheet tray with a wire rack.

Add the first piece of breaded chicken to the preheated oil along with 1/2 stick butter. Once the butter is mostly melted, add another piece of chicken. Fry until an internal temperature of 160 degrees F is reached, 2 to 3 minutes on each side. Add more oil and butter to the pan as needed while you fry the rest of your batches, allowing the oil to come back to heat between batches. Rest on the wire rack.
  • Meanwhile, preheat a 10-inch cast-iron pan over medium-high heat until hot, then place the lemon halves, cut-side down, directly in the pan and allow to caramelize, 1 to 2 minutes. Reserve for garnish.
  • Place the chicken cutlets on a large platter and garnish with freshly grated pecorino, parsley leaves and caramelized lemon halves.

  • If chicken has tenders, pull them out before pounding or slicing the breasts. Tenders are small and tender and don’t need to be pounded. To pound chicken, place each breast half between 2 sheets of heavy-duty plastic wrap or inside a large plastic baggie; pound with a meat mallet, small heavy skillet, or rolling pin, to ¼-inch thickness. Cut each thin cutlet in half, if you like the idea of 8 small pieces rather than 4 large. Alternatively, you slice the chicken into cutlets instead of pounding it: set each breast half on a flat surface and use a very sharp knife to slice it horizontally through the middle* (see link below for tutorial on slicing and pounding chicken into cutlets)
  • Mix 1/2 cup flour with 1 teaspoon salt and 1/4 teaspoon pepper and spread seasoned flour onto a shallow dish. Dredge chicken in flour. Shake off excess. Set pieces on a plate as you go.
  • Melt 1 tablespoon butter in a large skillet over medium-high heat. Add 1 tablespoon oil to pan; swirl to coat. Add chicken to pan and sauté 2-3 minutes per side or until golden brown and just cooked through. If cooking more than 4 cutlets, cook the chicken in two batches, adding a more oil and butter between batches. Transfer chicken to a plate as you go.
  • Heat remaining 1 tablespoon oil in pan over medium heat; swirl to coat. Add garlic; sauté 1 minute, stirring constantly. Add wine; bring to a boil, scraping pan to loosen browned bits. Cook until liquid almost evaporates, about 2 minutes, stirring occasionally. Add 1/2 cup of the chicken broth and bring to a boil. Simmer for 3-4 minutes until reduced by about a third. While the sauce is simmering combine the remaining teaspoon of flour with the remaining 1/4 cup of chicken broth in a small cup and stir until smooth. Whisk the flour mixture to the sauce and cook for 1 minute or until slightly thick, stirring frequently. Lower the heat to a simmer; whisk in remaining 1½ tablespoons butter, 2 tablespoons lemon juice, and ¼ cup capers. Return chicken to the pan. Simmer gently in the sauce for two minutes or until heated through.
