RED THAI CURRY CHICKEN SOUP



Red Thai Curry Chicken Soup image

Use boneless, skinless chicken breasts or thighs to make this easy and flavorful soup. Fresh lime juice and plenty of fresh herbs help temper the heat of the curry.

2 tablespoons vegetable oil
3 cloves garlic, chopped
One 2-inch piece fresh ginger, peeled and thinly sliced
6 tablespoons Thai red curry paste
8 cups low-sodium chicken broth
One 13.5-ounce can coconut milk
3 tablespoons fish sauce
One 4-inch piece lemongrass, lightly bruised
Kosher salt
Pinch of sugar
2 pounds boneless skinless chicken breast or thighs, thinly sliced
3 ounces dried rice vermicelli noodles
1 small red onion, thinly sliced
1/3 cup cilantro leaves
1 bunch scallions, white and light green parts only, thinly sliced
1/3 cup torn Thai basil leaves
Juice of 1 lime

Steps:

  • Heat the oil in a large pot over medium heat. When it shimmers, add the garlic, ginger, and Thai red curry paste and cook, stirring constantly, until dark red and very fragrant, about 5 minutes. Add the chicken broth, coconut milk, fish sauce, lemongrass, 1 teaspoon salt and a pinch of sugar. Bring the mixture to a boil, then reduce the heat to a simmer and cook, uncovered, until the lemongrass and ginger are tender, about 15 minutes. Discard the lemongrass.
  • Meanwhile, put the noodles in a medium bowl and cover with hot water. Let stand for 10 minutes, then drain and set aside. Toss together the red onion, cilantro, scallions and Thai basil in a medium bowl and set aside.
  • Stir the chicken into the broth and simmer over low heat until tender, 5 minutes for chicken breast and about 15 minutes for chicken thighs. Increase the heat to high and stir in the noodles. Bring the soup to a boil, then immediately remove from the heat. Stir in the lime juice. Serve the soup in bowls topped with the reserved onion and herb mixture.

2 tbsp butter (Alternatively use ghee or coconut oil )
2 onions (finely chopped)
2 celery spears (finely chopped)
2 carrots (peeled and finely chopped)
2 large leeks (finely chopped)
4 garlic cloves (crushed)
2 tsp crushed ginger
2 tsp ground turmeric
2 tsp curry powder
1 tsp ground cinnamon
1 tsp Chilli powder
1 tsp paprika
2 bay leaves
2 large potatoes (peeled and cubed)
6 cups chicken stock (1.5 liters)
4 chicken breasts (de-boned + skinless)
1 cup cream/coconut milk
salt (to taste)
pepper (to taste)
lemon juice (to taste)
Plain yoghurt (For serving)
Fresh coriander/cilantro (For serving)

Steps:

  • Melt the butter and a splash of oil(optional) in a large pot.
  • Add the onion, celery, leek and carrot and fry for 10 minutes until soft and fragrant.
  • Add the garlic and ginger and fry for a minute before adding the spices. Stir together.
  • Add the potato and fry for another minute before pouring in the chicken stock.
  • Season with salt and pepper, add the cream and allow to come to a simmer.
  • Add the chicken breasts then cover and allow to simmer for 7-10 mins until the chicken is cooked. Remove from the pot and allow to cool slightly.
  • Place the lid back on the pot and allow to simmer for another 10 minutes.
  • Shred the chicken and add back to the soup. Simmer for 5 minute then season to taste.
  • Serve with plain yoghurt and fresh coriander/cilantro.

1 pound boneless skinless chicken breast
1/2 pound snow peas, trimmed and cut crosswise in half
1 (5 3/4-ounce) package pad Thai noodles or wide rice noodles
1 tablespoon grapeseed or coconut oil
1/4 cup thinly sliced shallots
2 teaspoons red curry paste
1 1/2 teaspoons madras curry powder
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander
2 garlic cloves, minced
6 cups chicken broth
1 cup light coconut milk
1 cup unsweetened almond milk
2 tablespoons palm sugar
2 tablespoons fresh lime juice
2 tablespoons fish sauce
3 cups fresh spinach leaves, torn in 1/2
1/2 cup coarsely chopped fresh cilantro leaves, plus 8 sprigs, for garnish
1/2 cup julienne green onions, white and light green
4 Thai red chiles, seeded and chopped
1/2 cup coarsely chopped toasted peanuts
8 lime wedges

Steps:

  • Bring 4 cups of the water to a boil in a large sauce pot over medium heat. Add the chicken breast, reduce the heat and simmer until cooked through, about 15 to 20 minutes. Remove from the pot to a cutting board or bowl and set aside until cool enough to handle. Shred the chicken with a fork and set aside.
  • Bring the remaining 4 cups of water to a boil in a large sauce pot over medium heat. Add peas and cook for 30 seconds. Remove peas from pot with a slotted spoon and divide them between the serving bowls. Add the noodles to the pot and cook for 6 minutes. Drain and add noodles to the peas in the serving bowls.
  • Heat the grapeseed oil in a large sauce pot over medium-high heat. Add the shallots, curry paste, madras curry powder, turmeric, coriander and garlic to the pot and saute for 1 minute. Add the chicken broth to the pot, and bring to a boil. Stir in the light coconut milk and almond milk, then reduce the heat and simmer for 5 minutes. Add the shredded chicken, palm sugar, lime juice and fish sauce and cook for 2 minutes. Stir in the spinach leaves and cook for 30 seconds. Ladle the chicken mixture over the noodles and peas in the serving bowls. Stir some chopped cilantro, green onions and chiles into each bowl.
  • Top with chopped peanuts a lime wedge. Garnish with a sprig of cilantro and serve.

1 jalapeno pepper, seeded and roughly chopped
2 1/4-inch-thick slices peeled ginger
1/2 cup cilantro, plus more for garnish

3 cooking apples (such as McIntosh or Fuji), peeled, cored and roughly chopped
2 teaspoons curry powder
1 13.5-ounce can light coconut milk
Kosher salt
4 cups low-sodium chicken broth
1 cup red lentils, picked over and rinsed
1/2 pound skinless, boneless chicken breasts, cut into 3/4-inch pieces

Steps:

  • Pulse the scallions, jalapeno, ginger, cilantro and garlic in a food processor until chopped. With the motor running, add the apples, a few pieces at a time, until chopped.
  • Cook the curry powder in a Dutch oven or large pot over medium-high heat, stirring, until lightly toasted, about 1 minute. Whisk in the coconut milk until smooth; cook until reduced by half, about 5 minutes. Add the apple-scallion mixture and 1/2 teaspoon salt. Cook, stirring, until thickened, about 5 more minutes.
  • Stir in the chicken broth and lentils. Bring to a boil, then reduce the heat to medium low and simmer until the lentils are tender and broken down, about 15 minutes. Add the chicken and simmer until cooked through, about 6 minutes. Season with salt and pepper and garnish with cilantro.

Add chicken, a few pieces at a time, and turn to coat., In a large saucepan over medium heat, cook the chicken, carrots, red pepper and onion in oil for 4 minutes. Add garlic; cook 1-2 minutes longer or until chicken is browned and vegetables are tender; drain., Stir in the garbanzo beans, broth, tomatoes and water. Bring to a boil. 1 bone-in chicken breast (about 1 1/2 pounds), halved
2 medium carrots, sliced diagonally into 2-inch pieces
1 bay leaf
Kosher salt
6 cups low-sodium chicken broth
2 tablespoons unsalted butter
1 large onion, very thinly sliced
1 teaspoon sugar
1 1/2 teaspoons Madras curry powder
1/3 cup jasmine rice
3 tablespoons finely chopped fresh mint
3 tablespoons chopped fresh dill
1 lemon, cut into wedges

Steps:

  • Combine the chicken, carrots, bay leaf and a pinch of salt in a medium saucepan. Add 3 cups broth and bring to a boil; immediately reduce the heat to low, cover and cook until the chicken is just firm, about 20 minutes.
  • Meanwhile, heat the butter in another saucepan over medium-low heat. Add the onion, sugar and 1 teaspoon salt; cook until the onion is soft, 5 minutes. Add the curry powder and cook for 1 minute. Add the rice and the remaining 3 cups broth. Increase the heat to medium, cover and simmer until the rice falls apart, 15 to 20 minutes.
  • Remove the chicken from its broth; discard the skin and shred the meat into pieces. Return the shredded chicken to the same broth.
  • Puree the rice mixture with an immersion blender until smooth (or use a regular blender, then return to the pan). Pour in the shredded chicken and broth, stirring gently to combine; bring to a simmer. Toss in the chopped herbs and serve the soup with lemon wedges.

YELLOW CURRY CHICKEN (THAI SOUP)

This is a recipe given to me from one of my friends from Thailand. It has always been a favorite of everyone who has tried it.

1 lb about 4 boneless chicken breast half
2 -3 cups assorted fresh vegetables (mushrooms, aparagus, onions, zucchini)
2 potatoes, peeled and cut into bite size pieces, pre-cooked
2 carrots, cut into bite size pieces, pre-cooked
1/2 cup frozen peas (optional)
1 -2 tablespoon vegetable oil (can be canola or olive)
1 tablespoon red curry paste
1 (14 ounce) can coconut milk
1 1/2-2 tablespoons fish sauce
1 dash salt
2 tablespoons sugar
1 tablespoon yellow curry powder (use less to not make it not as spicy)
1/2 cup water (I just use a whole can of chicken broth) or 1/2 cup chicken broth (I just use a whole can of chicken broth)
1 bay leaf

Steps:

  • Pre-cook the potatoes and carrots. Don't cook them too done, since they will simmer with the main dish later.
  • Cut boneless, skinless chicken breast into bite-size pieces. Wash and cut vegetables into bite size pieces.
  • In heavy sauce pan on medium heat, heat vegetables, oil, red curry paste, and 1/3 of the coconut milk. Heat 5 - 10 minutes, stirring, until it forms a thin gravy. (I used cut mushrooms and yellow onion).
  • Turn the heat to high, add the chicken and cook until the chicken is half cooked, maybe 5 minutes.
  • Add fish sauce, sugar, salt, and the rest of the coconut milk, and mix well. Stir in the curry powder, potatoes, carrots, and water/stock. If desired add bay leaf. Let it simmer 1 or 2 minutes.
  • Add frozen peas (I put in spinach instead) and let it simmer until all vegetables and chicken are cooked. About 5 - 7 more minutes.
  • Serve with rice (Basmati or Jasmine is best).
  • **you can find most of the groceries at your local Asian grocery store, or the international isle of a major supermarket.

1 cup cubed russet potatoes

2 cups Chicken breast tenderloins, cooked, fried
1 (13.5 ounce) can Nuts, coconut milk, canned (liquid expressed from grated meat and water)
1 cup frozen French-cut green beans

Steps:

  • Combine curry powder, turmeric, cayenne pepper, smoked paprika, garam masala, and cumin in a large saucepan or Dutch oven. Stir spice mixture constantly over low heat until warm and fragrant, 3 to 4 minutes. Be careful not to let the spices burn. Add olive oil and stir to combine all the spices with the oil.
  • Increase heat to medium and add chopped onion. Cook and stir, 3 to 4 minutes. Add garlic and ginger, stirring, about 2 minutes longer. Pour in chicken stock and season with salt and pepper. Stir to get all the spices from the bottom of the pan into the stock. Add potatoes and carrots, bring to a boil, and cover. Reduce heat to a simmer, and cook for about 20 minutes.
  • Return heat to medium and add cooked chicken, coconut milk, and green beans. Bring to a boil and cook for 1 to 2 minutes, stirring to make sure coconut milk is well blended into the soup. Ladle into bowls and serve warm.

1 medium onion, finely chopped
2 medium carrots, finely chopped

4 cups peeled diced acorn squash or butternut squash
1 medium green apple, peeled and finely chopped
1 tablespoon curry powder
3 cloves garlic, minced, divided
1 teaspoon grated fresh ginger
4 cups low-sodium vegetable broth
1 (14 ounce) can no-salt-added diced tomatoes
½ cup red lentils, picked over and rinsed
2 whole-wheat naan flatbreads, halved
¼ cup chopped fresh cilantro, plus more for garnish

Steps:

  • Preheat oven to 375°F. Line a baking sheet with foil.
  • Heat 2 tablespoons oil in a large saucepan over medium heat until shimmering. Add onion, carrots and parsnip and cook until the onions are translucent, about 6 minutes. Add squash, apple, curry powder, 2 cloves garlic and ginger and cook, stirring, until fragrant, 1 to 2 minutes. Add broth, tomatoes and lentils and stir to combine. Bring to a boil. Reduce heat to maintain a low simmer, cover and cook until the squash and lentils are tender, about 20 minutes.
  • Meanwhile, brush one side of each naan with the remaining 1 tablespoon oil. Sprinkle with the remaining 1 clove garlic and place on the prepared baking sheet. Bake until warmed, 5 to 6 minutes. Remove from oven and sprinkle with cilantro.

1 cup uncooked chicken, diced
1/4 cup onion, chopped
1/4 cup celery, chopped
1/4 cup carrot, diced
2 tart apples, pared and chopped (if sweet do not add sugar)
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1 teaspoon curry powder (to taste)
6 cups chicken broth
1 tomatoes, peeled and chopped
1/2 green pepper, finely chopped
1 teaspoon dried parsley or 1 tablespoon fresh parsley, snipped
1 teaspoon salt
1 teaspoon sugar
1/8 teaspoon mace
2 whole cloves
1 cup cooked rice

Steps:

  • Cook chicken, onion, celery, and apple in melted butter in a large saucepan or dutch oven until lightly browned.
  • Stir in flour and curry powder. Gradually add chicken broth, stirring constantly.
  • Stir in remaining ingredients. cook, covered, over low heat until chicken is tender.
  • Remove and reserve chicken. Strain soup, discarding cloves.
  • Puree vegetables in an electric blender or food processor. Return soup and vegetable puree to saucepan. Mix in chicken and heat to serving temperature.
  • Mix in hot cooked rice and serve.

4 cups water
2 large bone-in chicken breasts, skin removed
1 tablespoon coconut oil
3 carrots, peeled and diced
1 onion, diced
1 red bell pepper, diced
1 cup cooked rice
3 tablespoons brown sugar
1 tablespoon curry paste
1 (14 ounce) can coconut milk
2 cubes chicken bouillon

Steps:

  • Combine water and chicken in a large pot over medium-high heat. Bring to a boil and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. Remove chicken from the pot, cut off meat from bones, and dice. Strain cooking broth through a sieve and set aside.
  • Heat coconut oil in a separate pot over medium heat. Add carrots, onion, and bell pepper; cook until softened, 5 to 7 minutes. Stir in cooked rice, brown sugar, curry paste, and diced chicken. Cook and stir until curry paste is completely incorporated, about 3 minutes.
  • Pour in reserved chicken broth, coconut milk, and bouillon cubes. Increase heat to medium-high and bring to a boil. Reduce heat and simmer until flavors are well combined, 15 to 20 minutes.

Chicken soup soothes the soul (not a scientific fact yet, but it may as well be). In this Thai version, we infuse the broth with coconut milk, fragrant curry paste, fresh ginger, and cilantro to wake up the senses. If you're looking to clear congestion, add a few slices of fresh jalapeno to the stock mixture while it simmers. Remember to saute the chicken just until no longer pink, otherwise the pieces may become tough in the finished soup.

1 tablespoon minced fresh ginger root
2 teaspoons minced garlic

Steps:

  • Heat oil in a Dutch oven over medium-high heat. Add minced ginger and garlic; saute for 1 minute. Stir in curry paste and cook for 1 minute. Add chicken and cook for 3 minutes, stirring occasionally. Add stock, coconut milk, water, ginger piece, lime juice, and 1/4 cup cilantro stems. Bring to a simmer and cook for 10 minutes.
  • Discard ginger piece. Stir in snow peas and noodles. Cook until noodles are tender, about 3 minutes. Top with cilantro sprigs and serve with lime wedges.

For the Roux:
1 cup butter
1 1/2 cups all-purpose flour
For the Soup:
1/3 cup Madras curry powder
2 Tablespoons olive oil
1 stalk celery (chopped)
1 large white onions (chopped (bout 1 1/2 cups))
1/4 cup minced garlic
3 14-ounce cans diced tomatoes, drained
6 cups low-sodium chicken broth
6 cups low-fat milk
2 Tablespoons fresh thyme leaves
2 bay leaves
1 tablespoon white pepper
1 tablespoon salt
3 cups heavy cream
2 cups shredded chicken (I used rotisserie chicken)
For Garnish:
green onions (chopped)
sliced almonds (lightly toasted)

Steps:

  • For the Roux:
  • In a large sauce pan over medium heat melt the butter. Add flour and stir with a wooden spoon to combine. Cook, stirring frequently, until the roux is the color of peanut butter, about 15 minutes. Remove from the heat and set aside.
  • For the Soup:
  • In a 10-inch skillet over medium heat, stirring constantly, toast the curry powder until fragrant and begins to brown; about 2-3 minutes. Transfer to a plate and set aside.
  • In a large pot (at least 7 quarts) over medium heat add the olive oil and cook celery, onion and garlic until the onions are translucent and the vegetables are softened, about 8 minutes. Add tomatoes, chicken broth, milk, thyme leaves, bay leaves, salt and pepper and bring to a low boil. Slowly add the roux, and stir to combine. Add the curry powder, and stir until blended. Add the heavy cream and reduce the heat to low and simmer for 20 minutes.
  • Remove the bay leaves, and add the chicken. Cook until heated through, about 5 minutes.
  • Ladle the soup into bowls and garnish with green onions and almonds.

This recipe comes from Sun Mountain Lodge in Winthrop, WA. My husband, who used to hate curry, has become a convert. This soup base is smooth and delicious and the texture of the chicken, wild rice and celery crunch adds to the variety and it has been a hit at dinner parties. I've used the basic recipe as curry chicken over rice as well (reducing the amount of stock I use so it's enough for a sauce instead of a soup, and omitting the wild rice and adding a handful of currants). I also use this recipe as the curried chicken (not the soup) for potlucks with rave reviews. ** Addition: this recipe works great in the crock pot.

1/2 cup cooked wild rice
4 cups chicken stock
1 bay leaf
1/2 cup cream of coconut
2/3 cup pineapple juice
1/4 cup butter
7 tablespoons flour
2 cups chicken, diced

1/2 teaspoon fresh garlic, crushed
1/2 teaspoon fresh ginger, minced
1/2 teaspoon cumin
2 teaspoons curry powder

1/2 cup celery, diced

Steps:

  • Begin cooking rice as instructed on the bag.
  • In a large saucepan, combine chicken stock, bay leaf, cream of coconut and pineapple juice.
  • Bring to a boil.
  • Thicken the broth with a roux made of the butter and flour.
  • To do this, in a separate pan, melt the butter with the flour until it bubbles and is foamy, then add to the broth and stir to thicken.
  • Keep the broth on a low simmer to continue thickening while you prepare the chicken.
  • Preheat a stock pot with 1/4 cup olive oil.
  • Add black pepper and chicken to the stock pot, cook until 3/4 done.
  • Add onion to the chicken and cook until transparent.
  • Mix together spices and add them to the chicken mixture.
  • Stir, saute lightly and finish with the heavy cream.
  • To combine the ingredients, add the stock to the chicken mixture.
  • Add the celery (still raw and crunchy) and the cooked wild rice.
  • Season to taste with salt and pepper.
  • When serving, top with toasted coconut or other ingredients as you choose.
  • OR - Make this in the crock pot. To make it in the crock pot, put all ingredients except butter, flour, heavy cream and celery (and garnishes) in the crock pot. Don't cook the rice or the chicken - just dice the chicken and put it inches I used frozen stock and frozen chicken. Doesn't matter. Cook on high for about 4 hours or low for longer - as long as the rice is cooked, it's done. Then add chopped celery. Make roux and add to thicken. Add cream or milk, and you're done. Garnish as usual.

1 onion (diced)
1 red bell pepper (cored, seeded, thinly sliced)
3 garlic cloves (minced)
2 tbsp fresh ginger (minced)
4 oz Thai red curry paste
1 14 oz can coconut milk (full fat)
4 cups chicken stock (reduced sodium)
3 oz rice noodles
7 oz Lilydale®Oven Roasted Carved Chicken Breast (cubed)
3 tbsp fish sauce (*see recipe notes)
2 tbsp lime juice (juice of one lime)
1/2 cup fresh cilantro leaves (chopped)
1/2 cup fresh basil leaves (chopped)
Thai chile, jalapeno or another chile, thinly sliced (optional)

Steps:

  • Heat coconut oil over medium-high heat in a stockpot or other large pot
  • Add onion and cook for 4-5 minutes, or until translucent
  • Add bell pepper, garlic, ginger, and Thai red curry paste. Cook, stirring, about 1 minute.
  • Stir in coconut milk, and bring to a boil.
  • Stir in chicken stock, bring back to a boil, then reduce heat to low and allow to simmer 10 minutes. Turn off heat
  • Meanwhile, bring a pot of water to a boil. Turn off heat, add rice noodles and cover. Let stand about 3 minutes, then drain and rinse in cold water.
  • In the soup pot, stir in Lilydale Oven Roasted Carved Chicken Breast cubes, fish sauce, and lime juice. Remove from heat. Stir in cilantro and basil.
  • To serve, add 1/4 cup rice noodles to individual bowls, ladle soup over each bowl of noodles, and garnish with additional cilantro leaves. Serve sliced chilies alongside if desired.

Families have their own formulas depending on heritage, and this recipe comes from Shila Das, a second-generation Singaporean of Indian and Vietnamese descent. She makes it as an integral part of her nasi biryani for special occasions, including the Lunar New Year, when she brings the dish to a celebration with her best friend. Spices and aromatic pandan leaves infuse the sauce with lovely, complex flavors.

6 skin-on, bone-in chicken thighs (2½ pounds)
2 tablespoons lime juice
2 tablespoons minced garlic
2 tablespoons minced ginger
2 1/2 teaspoons ground white pepper
Fine salt
1/4 cup ghee or canola oil
1 medium red onion, thinly sliced
1 cinnamon stick, preferably Indian
3 cardamom pods
1 whole star anise
4 whole cloves
4 fresh or 8 thawed frozen pandan leaves, knotted
2 teaspoons Kashmiri chile powder or other ground red chile
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground fennel
2 cups low-sodium chicken stock
1/4 cup coconut milk

Steps:

  • Pat the chicken thighs dry with paper towels and combine with the lime juice, 1 tablespoon garlic, 1 tablespoon ginger, 1½ teaspoons white pepper, and 1 ½ teaspoons salt in a large bowl. Mix well, cover and refrigerate for 40 minutes.
  • In a large wok or Dutch oven, heat the ghee over medium-high. When the ghee is hot and shimmering, wipe the marinade off the chicken and add the chicken in a single layer. Sear until light golden brown, 3 to 4 minutes on each side. Remove the chicken to a plate and set aside.
  • Reduce the heat to medium-low and add the onion, remaining 1 tablespoon garlic and 1 tablespoon ginger. Cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes. Add the cinnamon, cardamom, star anise and cloves, and cook, stirring, until fragrant, about 1 minute. Add the pandan leaves, chile powder, ground coriander, ground turmeric, ground fennel and remaining 1 teaspoon white pepper, and stir until it smells lovely, about 10 seconds.
  • Add the chicken and stir until it is completely coated with the aromatics. Pour in the chicken broth, and bring the mixture to a near boil. Reduce the heat to low, cover and gently simmer until the chicken is tender and cooked through, 15 to 18 minutes. Stir in the coconut milk and simmer briskly to concentrate the flavors, 5 to 8 minutes. Add salt to taste. Turn off the heat and use the curry to prepare nasi biryani.
