1 broiler/fryer chicken (3 to 3-1/2 pounds)
2-1/2 quarts water
2 to 3 celery ribs with leaves
1 large onion, cut into chunks
DRESSING:
4 celery ribs, chopped
2 small onions, chopped
1/2 cup butter
1 teaspoon salt
1/4 teaspoon rubbed sage
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
6 cups crumbled cornbread
1 cup chopped green onions
3/4 cup chopped pecans, toasted
1/2 cup minced fresh parsley
2 large eggs, lightly beaten

Steps:

  • Place chicken in a soup kettle. Add the water, celery and onion; bring to a boil. Reduce heat; cover and simmer for 1 to 1-1/2 hours or until chicken is tender. Remove chicken from broth. Strain broth, discarding vegetables; set broth aside. When cool enough to handle, remove chicken from bones; dice and place in a large bowl., In a large skillet, saute celery and onions in butter until tender; stir in salt, sage, pepper and cayenne. Add to chicken. Stir in the cornbread, green onions, pecans, parsley and eggs. Add 1-1/4 to 1-1/2 cups of reserved broth, stirring gently to mix. (Refrigerate remaining broth for another use.) , Transfer to greased 13x9-in. baking dish. Cover and bake at 325° for 45 minutes. Uncover; bake 15-20 minutes longer or until a thermometer reads 160°.

4 skinless, boneless chicken breast halves
1 (16 ounce) package dry corn bread mix
1 (1 pound) loaf day-old white bread, torn into small pieces
4 tablespoons margarine
½ cup chopped onions
½ cup chopped celery
1 (10.75 ounce) can condensed cream of chicken soup
⅛ teaspoon garlic powder
2 teaspoons poultry seasoning
½ teaspoon ground black pepper
6 eggs

Steps:

  • Place the chicken breast halves in a large saucepan with enough water to cover. Bring to a boil. Cook 1 hour, or until the meat is tender and easily shredded. Shred chicken and set aside. Reserve 4 to 6 cups of the remaining broth.
  • Prepare an 8x8 inch pan of cornbread according to package directions. Crumble the corn bread into a large bowl. Mix in the white bread.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, melt the margarine and stir in the onions and celery. Slowly cook, stirring occasionally, until tender.
  • Stir the onions and celery into the bread mixture. Mix in the chicken, 4 cups reserved broth, cream of chicken soup, garlic powder, poultry seasoning, pepper and eggs. Blend with a potato masher until the mixture is the consistency of gelatin. Use more of the reserved broth as necessary to attain desired consistency. Transfer to a 9x13 inch baking dish.
  • Bake in the preheated oven 30 minutes, or until golden brown.

3 cups cooked, shredded chicken
1 pan cornbread, cooked and crumbled (about 6 cups)
4 slices sandwich bread, toasted and crumbled
1/2 cup (1 stick) of butter
1 medium onion, chopped
1 cup chopped celery
1 teaspoon kosher salt, or to taste
1/2 teaspoon Cajun seasoning (like Slap Ya Mama) {affil link} or to taste, optional
1/4 teaspoon freshly cracked black pepper, or to taste
1 teaspoon sage, Bell's seasoning {affil link}, or homemade copycat, optional
1 teaspoon poultry seasoning
4 to 6 cups chicken stock/broth, as needed
3 large eggs, beaten
Additional butter, sliced, optional
1/2 cup fat (bacon drippings, cooking oil, butter, or a combination)
1/2 cup all-purpose flour
2 cups (more or less) room temperature chicken or turkey stock or broth (Kitchen Basics recommended) {affil link}
Kosher salt and freshly cracked black pepper, to taste

Steps:

  • Preheat oven to 350 degrees F. Butter a 9 x 13 inch oblong baking dish and set aside.
  • In a large bowl, combine the cornbread and bread.
  • In a separate skillet, sauté veggies in butter and add seasonings; let cool. Add to cornbread mix. Add 4 cups of the broth and let stand 5 minutes. Add the beaten eggs; gently toss.
  • Spoon half of the dressing in the prepared baking dish, top with the shredded chicken and top with the remaining dressing; spread out, but do not pack down.
  • Dot the top with slices of butter, and bake uncovered, for about 40-45 minutes, or until light golden brown on top. Cook longer for a crunchy consistency on top. Let rest 5 to 10 minutes before serving.
  • For the gravy, heat the fat in a cast iron skillet over medium high heat. Stir in flour, cooking and stirring with a wooden spoon until fully incorporated. Continue cooking, stirring constantly until mixture turns a very light brown color.
  • Turn heat to medium and slowly begin adding in at least half of the stock, stirring constantly until fully incorporated, adding more stock as needed to reach the desired consistency.
  • Taste, season with salt and pepper as desired. Drizzle over individual servings of the chicken and dressing.

3-4 chicken breasts (2 lbs.)
1 14-oz can chicken broth
3 stalks celery, finely diced
1 small onion, finely diced
6 tablespoon butter
1/2 pan of cornbread* (6 servings), crumbled
1 can cream of chicken soup
1 teaspoon salt
1/2 teaspoon poultry seasoning (plus more to taste if desired)
1/2 teaspoon pepper
1/4 teaspoon garlic powder
3 boiled eggs, peeled and diced (optional)

Steps:

  • Slowly cook chicken breasts in broth over medium-low heat in a covered pot until cooked through. Don't boil them to death or they'll turn out hard and rubbery. Remove chicken and allow to cool then shred with two forks or dice into bite-sized pieces; cover and set aside. Measure out two cups of chicken stock and set aside.
  • Meanwhile, sauté celery and onion in butter until onion is translucent.
  • Combine reserved 2 cups chicken stock, cream of chicken soup, salt, poultry seasoning, pepper and garlic and stir well.
  • In a large mixing bowl combine cornbread, chicken, sautéed veggies (with butter), chicken stock mixture and boiled eggs and mix well. Spoon mixture into a greased baking dish and cook, uncovered at 350 degrees for 45 minutes or until nicely browned on top. Remove from oven and let rest 15-20 minutes before serving.

Homemade Chicken and Dressing Casserole is a Southern tradition to serve at Thanksgiving and Christmas. This old fashioned recipe is baked in a casserole dish with cornbread, green onions, and homemade chicken broth to make the most tenderly moist and deliciously savory holiday comfort food!

1 teaspoon salt
1 teaspoon sugar
½ stick (¼ cup) salted butter
1 cube chicken bouillon
5 pounds whole young chicken
2 eggs
⅔ cup milk
2 boxes Jiffy Corn Muffin Mix
5 celery sticks (chopped)
6 green onions (chopped)
1 Tablespoon salted butter
1 cup chicken broth (reserved)
1 Tablespoon poultry seasoning
1 teaspoon salt
½ teaspoon ground black pepper
4 eggs (slightly beaten)
5 cups chicken broth (reserved)
½ stick (¼ cup) salted butter (melted)

Steps:

  • Fill a stock pot ⅔ full with water and place over high heat. Add salt, sugar, butter, and chicken bullion. Bring to a boil.
  • Add whole chicken to pot. Turn heat down to medium-low for a gentle boil. Cook for 1 hour, until internal temperature reaches 165°F.
  • In the meantime, make cornbread muffins by whisking eggs and milk together in a large mixing bowl. Add both boxes of Jiffy Corn Muffin Mix and stir until just incorporated (batter will be slightly lumpy).
  • Grease muffin tin with melted butter and fill all muffin cups ⅔ full with batter. Bake at 400°F for 15 to 20 minutes, until golden brown. (Muffins are done when an inserted toothpick comes out clean.)
  • Place on the counter to cool.
  • Remove cooked chicken from stock pot using 2 large slotted spoons (the chicken will fall apart). Reserve the broth.
  • Place chicken on a large plate, remove all bones, and shred. (I only use the breast and wings and save the thighs for other dishes.)
  • Pour reserved chicken broth through a mesh strainer and into a bowl.
  • Finely chop up celery sticks and green onions.
  • Melt 1 Tablespoon of butter in a skillet over medium heat. Add chopped celery, green onions, and 1 cup of reserved chicken broth.
  • Allow to cook down for about 10-15 minutes, until vegetables are soft.
  • Preheat oven to 350°F.
  • Place baked cornbread muffins into a large bowl and break into large pieces with your fingers.
  • Add poultry seasoning, salt, pepper, 4 eggs (slightly beaten), and cooked vegetables. Toss together using 2 large spoons.
  • Add shredded chicken (about 4 cups) and 5 cups of reserved chicken broth. Toss everything together.
  • Pour mixture into a greased 9 x 13-inch casserole dish. Sprinkle melted butter on top.
  • Bake at 350°F for 45-60 minutes. Dressing is done when only the center jiggles when the casserole dish is lightly shaken.
  • Allow to cool for at least 10 minutes before serving.

My favorite Baked Chicken with Cornbread Dressing image

I have been making this chicken and dressing recipe for years for my family and friends.

1 tsp salt
1 tsp black pepper
1 tsp dried sage
1 tsp garlic powder
1 tsp dried thyme
1 5 to 7 lb roasting chicken
2 bay leaves
3 stalks celery, chopped
2 large onions, chopped
for the dressing
4 c crumbled cornbread
1 c day old bread or biscuits
1/2 c sliced mushrooms
1/2 tsp dried sage
1/2 tsp dried thyme
4 Tbsp butter or margerine, melted
1 tsp salt
1/4 tsp black pepper
2 1/2 c chicken broth

Steps:

  • 1. FOR THE CHICKEN:
  • 2. Combine the salt,pepper,sage, garlic powder, and thyme and rub the seasonings inside the chicken and on the skin. Put the chicken in a large, heavy pot. Add the bay leaves, celery and onions and enough water to cover. Bring the ingredients to a boil, then reduce the heat. , cover and simmer until the chicken is tender, about 1 hour.
  • 3. Remove the chicken from the broth and set on a greased baking sheet. Strain the broth through a sieve, reserving 2 1/2 cups of the broth and separately reserving the veggies to use in the dressing. Discard the bay leaves.
  • 4. Preheat oven to 400 degrees F and place the chicken in a shallow roasting pan.
  • 5. FOR THE DRESSING:
  • 6. To prepare the dressing, combine all the dressing ingredients, except the broth, in a baking pan. Add the celery and onions that were simmered with the chicken, then add the broth and mix until the dressing is moist but not soupy, with the consistency of mush.
  • 7. Bake the chicken and the dressing, uncovered for 30 to 40 minutes or until the chicken is golden brown and the dressing is firm but still moist.
  • 8. serve the chicken in the center of a platter, surrounded by dressing and garnished with Parsley

This is a recipe my mother used, and my family loves this traditonal family recipe.

Number Of Ingredients 14

1 1 whole small chicken (fryer or broiler) cut up, or your choice of chicken pieces, or chicken backs and/or other pieces that you have frozen for later use for broth.
2 qt quarts of water
2 large skillets of baked cornbread, or frozen left-over cornbread you have saved for stuffing/dressing.
2 c celery chopped fine or blended in a little broth in blender
1 c onion chopped fine or blended in a little broth in blender
1/2 c green or red bell pepper in a little broth in blender
2 tsp poultry seasoning or ground sage (opt)
1 tsp black pepper
2 tsp salt
1 dash(es) red pepper (opt)
1 tsp celery seed (opt)
4 raw eggs
6-8 c strained hot broth or 4 cans or 2 32 oz. cartons of broth
Desired dash(es) paprika, curry, black pepper to sprinkle on top of the dressing just before baking. (opt)

Steps:

  • 1. Cut chicken up in serving pieces, or have your butcher do this for you. Boil chicken in 2 quarts of water.. Save broth, set aside chicken. OR Boil saved (frozen) chicken backs or pieces, and debone.
  • 2. In a VERY large mixing bowl crumble two large skillets of cornbread. Start adding the other ingredients to the CRUMBLED cornbread. You can use a potato masher to help crumble it more easily.
  • 3. Use enough broth to get the mixture really moist, as it will dry out a bit during baking.
  • 4. After adding all ingredients, stir well, pour into a greased or buttered large (11×15) or a big oblong baking dish or if you prefer as I do, divide between 2 big cast iron skillets.
  • 5. Place the chicken pieces (bone in) on top of dressing (take fat off) PRESS into the dressing OR use deboned chicken. You can also debone the chicken and mix in with the other ingredients. I prefer the golden brown chicken on top of the dressing.
  • 6. Sprinkle lightly with suggested seasonings such as paprika, curry, black pepper. (opt)
  • 7. Bake at 450° for approx. 30-45 minutes, or until golden brown around edges, and on top. Remember you have raw eggs in this mixture and you want them to be done.
  • 8. Serve with cranberry sauce.
  • 9. NOTE: This is a very forgiveable dish, if you should see that it is too dry while baking, you can put it back in the bowl and add more broth. If it is too moist, just simply bake longer. If you should run out of broth, add a chicken flavored boullion cube (or 2 if you prefer it richer) to every couple cups of hot water to make your own broth.
