1 cup coconut milk (, shaken)
1/3 cup creamy peanut butter ((or almond butter))
1/2 tablespoon chili garlic sauce
1/2 tablespoon Worcestershire sauce
3 teaspoons lime juice
3 teaspoons brown sugar
1/4 teaspoon coriander
1/4 teaspoon cumin
3 tablespoons vegetable olive oil (, divided)
12 ounces boneless, skinless chicken thighs (, cut into small bite-sized pieces)
salt and pepper (, to taste)
2 cups small broccoli florets
1 cup sliced carrot rounds
1 tablespoon minced fresh ginger
chopped Thai basil (, for garnish)
cooked white rice (, for serving)

Steps:

  • In a medium bowl, whisk together the coconut milk, peanut butter, chili garlic sauce, Worcestershire sauce, lime juice, brown sugar, coriander, and cumin. Set aside.
  • In a large nonstick skillet, warm 2 tablespoons vegetable oil over medium-high heat. Once oil is shimmering, season the chicken with salt and pepper and add to the skillet. Cook, undisturbed for 1 minute to develop a crust. Then saute for 4 minutes. Transfer to a plate and keep warm.
  • Add the remaining vegetable oil to the skillet; toss in the broccoli and carrots. Saute for about 3 minutes until vegetables are tender.
  • Add the cooked chicken back to the skillet, along with any accumulated juices, and the ginger. Cook for about 30 seconds until fragrant.
  • Give the sauce a stir and pour it into the skillet. Toss to coat only for 15-20 seconds to warm through. Remove from heat.
  • Serve immediately with cooked white rice and a sprinkle of chopped Thai basil.

Coconut chicken is everyone's favorite appetizer, and it gets an updated twist in this satisfying salad. The easy-prep pineapple dressing gives it a tropical flavor boost.

1 can (8 oz) pineapple chunks in juice, drained, juice reserved
1/4 cup olive oil
1 tablespoon cider vinegar
1/2 teaspoon garlic-pepper blend
1/4 teaspoon ground ginger
1/4 teaspoon salt
6 cups torn romaine lettuce
1 red bell pepper, cut into thin strips
2 green onions, sliced
4 boneless skinless chicken breasts
1/4 cup cornstarch
3/4 cup canned coconut milk (not cream of coconut)
2 teaspoons soy sauce
1/4 teaspoon ground ginger
1 egg
1 cup Progresso™ panko crispy bread crumbs
1 cup shredded unsweetened coconut*
Vegetable oil for frying

Steps:

  • In small bowl, mix reserved pineapple juice, the olive oil, vinegar, garlic-pepper blend, 1/4 teaspoon ginger and the salt with whisk; set aside.
  • In medium bowl, toss lettuce, bell pepper and pineapple chunks; set aside.
  • Coat both sides of chicken with cornstarch; shake off excess. In shallow bowl, mix coconut milk, soy sauce, 1/4 teaspoon ginger and the egg with whisk until blended. In another shallow bowl, mix bread crumbs and coconut.
  • In large skillet, heat 1 inch vegetable oil over medium heat or to 350°F. Dip chicken in coconut milk mixture, then coat with bread crumb mixture. Cook chicken in oil 10 to 12 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Drain on paper towels.
  • Stir dressing; drizzle over lettuce mixture and toss to coat. Divide salad among 4 plates. Cut chicken diagonally into slices; arrange on salads. Sprinkle with onions.

I found this recipe online somewhere and altered it to what i had and thought would taste good. The original recipe calls for snow peas, but i did not have any. After tasting the dressing I thought grapes would complement the flavor nicely and did they ever! This sort of tastes like a pina colada dressing with very tender chicken.

1 cup coconut milk
1/4 cup lime juice
2 tablespoons brown sugar
1/2 teaspoon salt
3 tablespoons cilantro (chopped)
2 tablespoons red onions (minced)
3 cups lettuce (the org calls for shredded romaine and red cabbage, i used a shredded spring mix)
20 grapes

Steps:

  • preheat oven to 400.
  • whisk together milk juice sugar and salt.
  • reserve 1/4 - 1/2 c dressing.
  • add chicken tenders.
  • bake for about 20 min or until cooked through.
  • meanwhile mince onion, shred lettuce and chop cilantro, I used dried.
  • add to dressing in a large bowl and toss.
  • cut grapes in half and add, toss together.
  • divide in half and top with chicken strips when fully cooked.
  • you can drizzle a T of the pan sauce over the completed salad.

1 egg white , lightly beaten
2 skinless chicken breasts
3 tbsp desiccated coconut
1 tsp sunflower oil
½ cucumber , thinly sliced on the diagonal
1 small red onion , thinly sliced
2 tsp caster sugar
2 tbsp white wine vinegar or rice vinegar

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Season the egg white. Dip the chicken in the egg, then in the coconut. Place on a lightly oiled baking sheet and bake for 20-25 mins, turning once until the chicken is cooked through.
  • Meanwhile, tip the cucumber slices into a colander, sprinkle with a little salt and leave for 5 mins to drain. Pat the cucumber slices dry with kitchen paper. In a bowl, mix the onion with the sugar and vinegar, then add the cucumber and serve with the chicken.

1 cup sweetened flaked coconut
1 cup fresh breadcrumb (Not from a can! Whirl 4 slices of somewhat stale white or French bread in food processor)
2 (6 ounce) boneless skinless chicken breasts, pounded out to 1/4 inch thick between
plastic wrap
2 large eggs
1/4 cup milk
1/2 teaspoon coconut extract
1 cup flour, seasoned with
1/2 teaspoon salt, and
1/4 teaspoon pepper
vegetable oil (for frying)
10 ounces mixed greens
0.5 (14 ounce) can quartered artichoke hearts, drained
2 tomatoes, seeded and diced
2 hard-boiled eggs, sliced
1 ripe avocado, sliced (cut in half lengthwise around pit, twist to separate halves, remove pit with tip of spoon and scoop)
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese, shredded
1 (4 ounce) can sliced black olives
2/3 cup spicy brown mustard
1/2 cup honey
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper

Steps:

  • For Chicken:.
  • In a shallow baking dish or pie plate combine coconut and bread crumbs. Set aside.
  • In a medium bowl, beat eggs, milk and coconut extract.
  • Dip chicken strips into beaten eggs, then dip in seasoned flour.
  • Dip again in eggs. Press into coconut-bread crumb mixture, using palm of hand. Coat well!
  • Heat 1/2 inch of oil in frying pan over medium high heat.
  • Add coconut-battered chicken to oil and fry on both sides until golden brown. (2-3 minutes).
  • Remove from pan and let stand for 3 minutes. Cut in slices.
  • For Salad:.
  • Arrange mixed greens, artichokes, tomato, hard-boiled egg slices, avocado slices, shredded cheese and black olives on large platter.
  • Place coconut chicken over greens. Serve with honey mustard dressing.
  • For Dressing:.
  • In a small bowl, combine all ingredients with a whisk. Can make ahead and store in fridge. Serve with salad.

2 small or 1 large chicken breast
3 slices ginger
1 stalk lemongrass
400ml coconut milk
150g egg noodles
1-2 tbsp peanut butter
handful green beans , trimmed and cut into lengths
12 cherry tomatoes , halved
2 handfuls baby spinach leaves

Steps:

  • Put the chicken, ginger, lemongrass and coconut milk in a pan and bring to a simmer. Add a pinch of salt, then reduce the heat and cook for 10-15 mins until the chicken is cooked through. Cool, then chill until cold.
  • Cook the noodles following pack instructions. Lift the chicken out of the coconut liquid and shred it, then stir the peanut butter into enough of the liquid to make a thick dressing.
  • Divide the noodles between four jars or boxes and spoon over the coconut dressing, or take it with you in a separate jar. Add the beans and tomatoes followed by the chicken and spinach. Seal the lid and chill the jars until you need to pack them. Serve in the jar or, for smaller children tip into bowls.
