CHICKEN-CHUTNEY-CUCUMBER CUPS
Have three dozen of these cute and crunchy canapés in the fridge in 20 minutes, and you'll be cool as a cucumber when party time arrives.

Steps:
- In medium bowl, mix all ingredients except cucumbers.
- Cut tapered ends from cucumbers. Draw tines of fork lengthwise through cucumber peel to score; cut into 3/4-inch-thick slices.
- With small melon baller, scoop and discard center portion of each slice; do not go through bottom. Fill each with 1 tablespoon chicken mixture.

CHICKEN BREASTS IN CUCUMBER AND LEMON SAUCE
A lot of steps but certainly worth the effort for a special dinner. I believe the recipe originally came from BonAppetit. Prep time does not include draining the cucumbers.

Steps:
- Placed prepared cucumbers in colander.
- Sprinkle with salt and toss.
- Let drain 1 hr then pat cucumbers dry with paper towel.
- Melt 3 tablespoons butter in heavy skillet over medium heat.
- Add cucumbers and saute until light brown.
- Set aside In small cup, mix 1 tablespoon flour and 1 tablespoon butter to smooth paste.
- Set aside.
- Place remaining 1/2 cup flour in shallow baking dish.
- Add white pepper and season with salt.
- Coat chicken with flour mixture.
- Shake off excess.
- Melt remaining 3 tablespoons butter with oil in another heavy skillet over high heat.
- Add chicken breasts and saute until brown, about 2 minutes per side.
- Add 1/2 cup stock.
- Reduce heat to medium, cover and simmer until chicken is cooked through, about 4 minutes.
- Remove chicken to platter.
- Add remaining 1/2 cup stock to same skillet.
- Increase heat to high and boil until reduced to 1/4 cup, about 3 minutes.
- Add cream and bring to boil.
- Whisk in flour/butter paste.
- Return mixture to boil, stirring constantly.
- Reduce heat and simmer until thickened to sauce consistency, stirring frequently, about 2 minutes.
- Stir in lemon juice and 1 tablespoon dill.
- Season to taste with salt and white pepper.
- Add chicken and cucumbers to sauce and heat through.
- Transfer chicken to plates.
- Spoon sauce and cucumbers over chicken.
- Sprinkle with remaining 1 tablespoon dill.

SUPA QUICK CHICKEN 'N CHUTNEY PASTA
After dismembering a fresh chicken, I usually cook the carcass and use the cooked carcass meat in a pasta dish with whatever is on hand. These pastas are never the same and varies from so-so to excellent. I think this is one of the better outcomes. When cold, a 50/50 mix of this pasta dish and the Broccoli Salad Recipe #65977 makes an excellent pasta salad.

Steps:
- Mix chicken soup and milk to a sludge.
- Cook pasta to your taste.
- Meanwhile, bring cooked chicken and chicken stock to a boil.
- Lower heat and add chutney.
- Add chicken soup sludge while constantly stirring to thicken sauce.
- Simmer until pasta is cooked.
- Drain pasta, add to chicken sauce and serve.

- Combine mayonnaise, grated lime rind, juice, chutney, curry powder and salt.
- Toss chicken, pineapple and green onion together.
- Combine chicken mixture with mayonnaise mixture.
- Chill.

CHICKEN-CUCUMBER PARTY SANDWICHES
I have made these many times for large gatherings everyone really loves them and there is never any left, the sandwiches may be made up to 24 hours in advance covered with plastic wrap and refrigerated, this makes a huge amount of sandwiches you may reduce amounts to half if desired.

- In a medium size bowl, stir together the softened cream cheese and the mayo until well blended (I use a whisk).
- With a wooden spoon, stir in the chicken and the next 7 ingredients.
- Cover and chill the filling for 4-24 hours.
- When ready to prepare the sandwiches after the 4-24 hour chilling time cut the crusts off of the bread slices.
- Using cookie cutters, or assorted metal shaped cutters (medium-size round biscuit cutters work great too), cut the bread slices into desired shapes.
- Spread half of the bread shapes with the chicken mixture, and top with the matching shape.
- Roll the sandwich edges in chopped fresh parsley if desired.
- Refrigerate, covered with plastic wrap until ready to use.
CHUTNEY CHICKEN SALAD (GREAT FOR TEA SANDWICHES)
There is a very nice flavor and will vary depending on the chutney you use. I have mango trees, so have copious quantities of various mango chutneys. It is great as a tea sandwich!

Steps:
- Combine everything in a small bowl and mix well.
- A VERY thin bread is great, otherwise choose what you like.
- For tea sandwiches, stack bread and cut off crusts. Save crusts for another recipe. If you want spread a thin layer of butter on the bread. Spread chicken salad on the bread and top with another slice (with or without butter).
- Cut into squares, rectangles or triangles. If triangles, place on plate points up.
- If you have made this ahead of time cover with wax paper and then a damp tea towel to keep them moist.

CHICKEN AND LENTIL CURRY WITH CUCUMBER YOGURT
I found this is the back of Working Mother magazine. It was taken from Tonia George's, "One-Bowl Meals", its was adapted by Kelly Staikpooulos. It was so easy to make and had incredible flavor. My husband thought it was better than some restaurants we've been to!

Steps:
- Heat oil in large pan over medium heat. Add onions and cook until sizzling. Cover, reduce heat to low and cook, stirring occasionally, until softened, 10 to 15 minutes. Uncover and cook until liquid is almost absorbed, about 8 minutes.
- Add garlic, curry powder, nutmeg, cinnamon, and pepper. Cook until onion starts to turn golden brown and spices are fragrant.
- Add broth, tomato sauce, lentils, and bay leaves.
- Add chicken breasts.
- Cover and simmer, stirring occasionally, until lentils are tender, about 20 minutes.
- Meanwhile, combine yogurt, cucumber, lemon juice, and a pinch of sea salt in a small bowl. Cover and chill until ready to serve.
- Remove and discard bay leaves from curry. Transfer to serving bowls. Serve with a dollop of cucumber yogurt and mango chutney (if using). Garnish with cilantro leaves (if using).
