4 boneless skinless chicken breasts
salt and pepper
1 cup plain yogurt
1 cup Dijon mustard
4 English muffins (Made into crumbs using blender or food processor)
1/2 cup grated parmesan cheese
1/4 cup chopped parsley
1 dash cayenne pepper

Steps:

  • Season chicken with salt and pepper.
  • Combine yogurt and mustard.
  • Marinate chicken in mixture for about 20 minutes.
  • Combine crushed muffins, cheese, parsley and pepper.
  • Remove chicken from yogurt mixture shaking off excess.
  • Dredge chicken in english muffin crumbs.
  • Place breaded chicken on cookie sheet and bake at 450 degrees for about 25 minutes.
  • Chicken will be golden brown.

Steps:

  • Preheat oven to 350*.
  • In medium bowl, stir together chicken, pesto and melted butter until chicken is evenly coated.
  • Place english muffin halves, cut side up, on baking sheet.
  • Divide chicken mixture smong muffins.
  • Bake about 10 minutes or until heated through.
  • Top with bacon pieces; sprinkle with mozzarella cheese.
  • Bake 2 to 3 minutes more until cheese is melted and bubly.

Steps:

  • Heat a griddle over medium-low heat.
  • Spread the butter on the outsides of the split muffins. Divide the cheese among the 4 muffin bottoms. Cover with the muffin tops, buttered sides out.
  • Griddle the muffins until deeply golden and the cheese glues the top and the bottom together, about 3 to 4 minutes on each side. Transfer to serving plates and serve hot.

3 to 3-1/4 cups bread flour
1 tablespoon sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
3/4 cup warm water (120° to 130°)
2 tablespoons canola oil
1 egg
1 tablespoon cider vinegar
1/2 cup shredded cheddar cheese
4 tablespoons cornmeal

Steps:

  • In a large bowl, combine 2 cups flour, sugar, yeast and salt. Add water and oil; beat on medium speed for 2 minutes. Add egg and vinegar; beat on high for 2 minutes. Stir in cheese and enough remaining flour to form a stiff dough. , Turn onto a floured surface; knead until dough is smooth and no longer sticky, about 2 minutes., Roll dough to about 1/2-in. thickness. Cut with a 3-in. round cutter. Roll scraps if desired. Coat baking sheets with cooking spray and sprinkle with 2 tablespoons cornmeal. Place muffins on pans; sprinkle with remaining cornmeal. Cover and let rise until doubled, about 1 hour., Heat an ungreased griddle or electric skillet to 325°. Cook muffins for 20-25 minutes or until golden brown, turning every 5 minutes. 1 onion, sliced into thin rings
1 teaspoon garlic powder
4 skinless, boneless chicken breasts
½ cup red wine
1 teaspoon dried rosemary
¼ teaspoon dried thyme
4 slices Swiss cheese
4 English muffins, split and toasted

Steps:

  • Preheat the grill for high heat.
  • Melt the butter in a skillet over medium heat. Place the onion slices in the skillet, sprinkle with garlic powder, and saute until onions are translucent. Remove from heat, and set aside.
  • Lightly oil the grill grate. Place the chicken breast halves on the grill, and sprinkle with wine, rosemary, and thyme. Cook for about 8 minutes.
