1/2 cup boneless chicken, cut into small cubes
1 cup mixed vegetables, thinly sliced
1/4 teaspoon black pepper
1 teaspoon salt
2 teaspoons soya sauce
1/4 cup oil
3/4 cup chicken stock
1 (150 g) package noodles

Steps:

  • Half boil the noodles and drain the water using a strainer.
  • Wash with cold water.
  • Drain the water again.
  • Heat 1/4 cup of oil in a pan.
  • Fry the veggies in it one-by-one.
  • Next fry the chicken in the same oil till the juice of the chicken dries up.
  • Add 3/4 cup of chicken stock, cover it and allow it to cook.
  • When the chicken stock is dried, add all the spices to it.
  • Quickly, wash the noodles once again, drain the water and add it to the chicken and spices.
  • Mix and saute well.
  • Cook for 5 minutes.
  • Add all the vegetables.
  • Cook for 2 minutes.
  • Serve hot.

Easy, quick and incredibly delicious, these Chinese fried noodles are street food at its best!

1/3 cup dark soy sauce ((see Note))
1/4 cup oyster sauce
vegans: use hoisin sauce
recipe for homemade hoisin sauce
2 tablespoons sugar
1 1/2 tablespoons fresh ginger (,finely minced)
1 lb pork tenderloin
1 lb thick round Chinese egg noodles (can substitute Japanese udon noodles)
2 tablespoons high heat cooking oil
4 cloves garlic (,sliced thinly)
6 green onions (,cut into 1-inch pieces and then julienned lengthwise (keep green and white parts separate))
1/2 head Napa cabbage (,thinly sliced (white and pale green parts kept separate))
1 1/2 tablespoons cornstarch dissolved in 1 cup chicken stock
1 1/2 tablespoons sesame oil
Ground white pepper to taste

Steps:

  • To make the marinade, combine the soy sauce, oyster sauce, sugar and ginger and stir until the sugar is dissolved. Place the pork in the marinade and let sit for 10 minutes. Drain and reserve the marinade for later.
  • Heat the oil in a wok or heavy skillet on high heat and fry the pork for one minute or until done. Remove the pork and set aside. Next fry the white parts of the cabbage and green onions along with the garlic for 30 seconds or until tender. Return the pork to the pan along with the reserved marinade, the sesame oil, chicken/cornstarch mixture and the green parts of the cabbage and green onions. Cook for 30 seconds. Add the noodles and stir until combined. Add white pepper to taste. Serve immediately.

200g /6 oz chicken breast or thigh fillets (, thinly sliced (Note 1 tenderise option))
4 cups green cabbage (, finely shredded (Note 3))
1 1/2 tbsp peanut oil ((or other cooking oil))
2 cloves garlic (, finely chopped)
200g /6 oz chow mein noodles ((Note 2))
1 carrot (, julienned)
1 1/2 cups bean sprouts
3 green onions (, cut into 5cm/2" pieces)
1/4 cup (65 ml) water
2 tsp cornflour / cornstarch
1 1/2 tbsp soy sauce (, all purpose or light (Note 4))
1 1/2 tbsp oyster sauce ((sub Hoisin))
1 1/2 tbsp Chinese cooking wine (OR Mirin (Note 5))
2 tsp sugar ((reduce to 1 tsp if using Mirin))
1/2 tsp sesame oil
White pepper ((sub black))

Steps:

  • Mix together cornflour and soy sauce, then mix in remaining ingredients.
  • Alternative: Use 1/3 cup Chinese All Purpose Stir Fry Sauce, if you have some in stock.
  • Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
  • Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 minute), then drain.
  • Heat oil in wok or large fry pan over high heat.
  • Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
  • Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
  • Add the cabbage, carrot, and the white pieces of shallots (i.e. from the base of the stalk). Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
  • Add the noodles, Sauce and water*. Stir fry for 1 minute, tossing constantly.
  • Add bean sprouts and remaining shallots/scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.
  • Remove from heat and serve immediately.

2 tablespoons sesame oil
2 garlic cloves, finely chopped
2 dried red chilies
1 onion, finely chopped
1 carrot, diagonally sliced
2 shiitake mushroom caps, sliced
2 cups white cabbage, cut into 3cm pieces
1 green capsicum, sliced
1 cup bean sprouts
1 tablespoon soy sauce
1/2 teaspoon rice vinegar
1/2 teaspoon caster sugar
1/4 teaspoon black pepper
1/2 teaspoon salt
400 g wheat flour noodles, cooked
chopped chives, for garnish

Steps:

  • Heat oil in saucepan and sauté the garlic, chillies and onion over high heat for 1 minute.
  • Add the carrot, shiitake, cabbage, green capsicum and bean sprouts and stir-fry, with the heat still on high for 2-3 minutes.
  • Add the soy sauce, vinegar, sugar, pepper and salt.
  • Stir in the noodles and heat through. Serve garnished with chives.
