A copycat version of the famous chicken from Carrabba's Italian Grill®, but made with leg quarters. Full of flavor, this recipe is company-worthy.

2 tablespoons dry white wine
2 tablespoons olive oil
1 tablespoon dried oregano
1 tablespoon prepared pesto
1 lemon, zested and juiced
1 clove garlic, minced
salt and ground black pepper to taste
2 chicken leg quarters
2 tablespoons unsalted butter
1 tablespoon minced white onion
1 teaspoon minced garlic
½ cup white wine
¼ cup lemon juice
¼ cup chopped sun-dried tomatoes in oil, drained
1 teaspoon prepared pesto
salt and ground black pepper to taste
1 (4 ounce) log goat cheese, sliced into 4 rounds

Steps:

  • Whisk white wine, oil, oregano, pesto, lemon zest and juice, garlic, salt, and pepper together for marinade in a small bowl.
  • Put the chicken leg quarters in a resealable plastic bag and pour marinade over chicken. Seal the bag and shake to completely cover. Place in the refrigerator to marinate for at least 2 hours, turning over after 1 hour to ensure chicken quarters marinate evenly.
  • Preheat the oven to 425 degrees F (220 degrees C). Bring chicken to room temperature while the oven heats.
  • Drain marinade from chicken and pat dry; place in a baking dish.
  • Roast in the preheated oven for 20 minutes. Turn chicken and cook until no longer pink at the bone and the juices run clear, about 20 minutes more. An instant-read thermometer inserted near the bone of a quarter should read 165 degrees F (74 degrees C).
  • Meanwhile, during the last 20 minutes of baking the chicken, bring goat cheese to room temperature and make sauce.
  • Heat butter in a skillet over medium heat. Saute onion and garlic in the hot pan until soft and translucent, about 5 minutes. Pour in white wine and lemon juice. Add sun-dried tomatoes and pesto and season with salt and pepper. Reduce heat and let simmer until slightly thickened, about 15 minutes.
  • Remove chicken from the oven and top each chicken quarter with 2 slices of goat cheese, 1 on each thigh and 1 on each leg. Cover with equal amounts of sauce and serve immediately.

1 tablespoon minced garlic
1 tablespoon minced yellow onion
2 tablespoons butter
1/2 cup dry white wine
1/4 cup fresh lemon juice
2/3 cup cold butter, sliced
1 1/2 cups chopped sun-dried tomatoes
1/4 cup chopped fresh basil
1/2 teaspoon kosher salt
1/2 teaspoon white pepper
6 boneless skinless chicken breast halves
extra virgin olive oil, for brushing
1/2 teaspoon salt
1/2 teaspoon black pepper
8 ounces caprino goat cheese or 8 ounces other goat cheese, room temperature

Steps:

  • Saute garlic and onion in 2 Tbls. butter in a large skillet over medium heat until tender.
  • Stir wine and lemon juice into skillet, increase heat to medium high, and simmer to reduce by half.
  • Reduce heat to low and stir in cold butter, one slice at a time.
  • Stir in tomatoes, basil, kosher salt, and white pepper; remove from heat; set aside.
  • Brush chicken breasts with olive oil and sprinkle with salt and black pepper.
  • Grill chicken over hot coals 15-20 minutes, or until cooked through.
  • A couple of minutes before chicken is done, place equal amounts of cheese on each breast Spoon prepared sun-dried tomato sauce over chicken.

My hometown newspaper (The Orlando Sentinel) finally published this, my favorite chicken dish ever, in their "Thought you'd never ask" column. There are copycats on Zaar, but this is the actual recipe, as given by Carrabba's. Not for the dieter, but a divine dish perfect for company and easy to throw together!

2 boneless skinless chicken breasts
kosher salt, to taste
fresh ground pepper, to taste
olive oil
4 ounces goat cheese
6 sun-dried tomatoes, chopped
2 -4 tablespoons fresh basil, chopped
4 teaspoons onions, minced
4 teaspoons garlic, minced
8 tablespoons butter, divided
1/2 cup white wine
4 tablespoons fresh lemon juice

Steps:

  • Brush chicken on both sides with olive oil, season to taste with Kosher salt and cracked pepper.
  • Grill chicken until done (internal temp of 165F) - prepare lemon butter sauce while chicken is grilling.
  • Sautee onion and garlic in 2 Tbps butter until soft and fragrant.
  • Add white wine and lemon juice, reduce heat to medium-low and simmer 10 minutes to reduce.
  • Add remaining 6 Tbsp butter, a little at a time, until it melts and mixture is emulsified.
  • Add chopped sun-dried tomatoes and basil, heat until hot (but do not overheat or sauce may break).
  • Top nearly-done chicken breasts with 2 oz each of the goat cheese until cheese warms and softens.
  • To serve, spoon lemon butter sauce over chicken breasts.
  • Enjoy! I serve this dish with pasta tossed in butter or olive oil (the delicious lemon butter sauce will perfect it), garlic mashed potatoes and a green salad -- yummmm!

This is one that I adapted from Recipe #199636 after I scored 4 huge chicken leg quarters on sale. ($0.39 a pound!). I added a few things and adjusted the cooking time and temp to to what worked for me. The skin got SO crispy and the chicken was moist and retained the flavors. It also fell off the bone. 4 skin-on chicken leg quarters, with bone
1/2 cup soy sauce, divided
1 teaspoon garlic powder, divided
1 teaspoon seasoning salt, divided
1 teaspoon dill weed, divided

Steps:

  • Preheat oven to 375.
  • Line a large glass baking dish with foil. You can also add a baking rack to the pan to keep the chicken out of the grease and to help air circulate and make it crispier.
  • Remove excess fat from chicken quarters.
  • Separate the skin from the chicken, taking care that the skin stays attached at most points on the chicken. (You just want a flap. Do not remove the skin).
  • Brush the chicken (under the skin) with soy sauce.
  • Sprinkle some garlic powder, seasoned salt and dill weed on the chicken under the skin (I estimated the 1 tsp measures. Use as much or as little as you're comfortable with) and rub into the chicken.
  • Arrange the leg quarters in the pan, skin side up, taking care not to crowd. They need space to cook properly.
  • Brush both sides of the leg quarters with soy sauce.
  • Sprinkle the skin with garlic powder, seasoned salt and dill weed (to taste).
  • Place on middle rack in over and bake uncovered for an hour.
  • After an hour, increase oven temp to 400 and bake 15 minutes.
  • Chicken is done when internal temp reaches 165 (insert meat thermometer at thickest part of thigh, taking care not to touch the bone).
  • Let stand for 5 minutes before serving.

When it's too cold outside to barbecue, I drum this up in the oven for family gatherings! The dry-rub barbecue has so much flavor versus using the sauce. And when you make your own dry rub, you'll never buy it in the store again. This is a must-try, family-favorite dry rub.

5 cups water
⅓ cup white sugar
⅓ cup kosher salt
½ cup white vinegar
5 pounds chicken leg quarters
7 tablespoons dark brown sugar
4 tablespoons smoked paprika
3 tablespoons chipotle chile powder
1 ½ tablespoons kosher salt
1 tablespoon coarsely ground black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon ground cumin
½ teaspoon ground nutmeg

Steps:

  • Mix water, sugar, salt, and vinegar for brine in a food-grade, nonreactive container.
  • Rinse chicken and pat dry. Place it in the brine, cover, and let sit for 2 hours.
  • Mix brown sugar, paprika, chile powder, salt, pepper, garlic powder, onion powder, cayenne, cumin, and nutmeg for dry rub together in a small bowl.
  • Preheat the oven to 300 degrees F (150 degrees C). Line a baking dish with foil.
  • Remove chicken from the brine and pat dry. Place it on a tray and generously sprinkle dry rub all over each piece, rubbing it into the skin and meat. (You will have some dry rub remaining.)
  • Place chicken, skin-side down, in the prepared baking dish,. Cover with foil, making sure not to wrap it too tightly.
  • Bake in the preheated oven for 1 hour. Remove from the oven. Increase the temperature to 450 degrees F (230 degrees C).
  • Remove the foil cover and turn chicken over. Sprinkle more dry rub onto the skin and return to the oven.
  • Bake until skin is crispy, chicken is no longer pink in the center, and the juices run clear, about 20 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Leg quarters yield two or three extra bites, and they are visually very satisfying. Bonus: cooking with the bones included gives a lot of flavor. A simple, tasty seasoning blend makes prep a breeze.

2 teaspoons smoked paprika
2 teaspoons granulated garlic
½ teaspoon onion powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
5 (8 ounce) chicken leg quarters
⅓ cup melted unsalted butter

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C). Line a sheet pan with aluminum foil.
  • Stir together smoked paprika, granulated garlic, onion powder, salt, and pepper in a small bowl.
  • Pat chicken leg quarters dry with paper towels. Gently lift the skin and sprinkle in 1/4 to 1/2 teaspoon of the seasoning blend, using a fingertip to spread the seasoning around under the skin. Brush both sides of each leg quarter with melted butter.
  • Evenly sprinkle remaining spice mixture on both sides of each quarter and set cut side up onto the prepared sheet pan.
  • Bake in the center of the preheated oven for 20 minutes. Turn the quarters cut side down using tongs and continue baking until chicken is no longer pink at the bone and the juices run clear, about 20 more minutes. An instant-read thermometer inserted near the bone should read 160 degrees F (71 degrees C).
  • Turn on the broiler and broil each side of the chicken leg quarters until skin is nicely browned, 3 to 4 minutes per side. Test for a final internal temperature with an instant-read thermometer of 165 degrees F (74 degrees C).
  • Transfer chicken leg quarters to a serving plate. Tent with foil and let rest for 5 minutes before serving.
