Chicken and Broccoli Pasta Bake is a simple and delicious weeknight dinner that the whole family will love.

4 cups penne pasta (uncooked)
6 cups broccoli (cut into bite sized pieces)
1 tablespoon oil
3 boneless (skinless chicken breasts, cut in bite sized pieces)
1 medium onion (chopped)
½ teaspoon salt
½ teaspoon pepper
3 cups mushrooms (quartered)
2 garlic cloves (minced)
2 jars of alfredo sauce (15 oz. each)
¼ cup chicken broth
1 ½ cups mozzarella cheese (shredded and divided)
½ cup parmesan cheese (finely shredded)

Steps:

  • Preheat oven to 375℉. Spray 9x13 pan with non-stick cooking spray.
  • Cook the penne pasta in a large pot of boiling water for 9 minutes. Add broccoli to the pot and increase the heat to return to a boil. Cook for one more minute. Drain noodles and broccoli in a colander and run under cold water to stop the cooking process. Nothing is worse than mushy broccoli!
  • Heat the oil in a large skillet, and add the chicken,onion, salt and pepper. Cook for 5 minutes on medium heat and then add the mushrooms and garlic and cook for 4 more minutes. Remove from heat and stir in the alfredo sauce and chicken broth. Add the penne pasta, broccoli, ½ cup mozzarella cheese and stir gently. Pour into prepared pan.
  • Sprinkle with remaining 1 cup mozzarella cheese and parmesan cheese.
  • Cook, uncovered, for 20-25 minutes.
  • Serve warm and enjoy!

A delicious family chicken broccoli stilton pasta bake. Lots of taste, lots of flavour.

200 g whole wheat fusilli
150 g broccoli florets (cut into bite sized pieces)
400 ml skimmed milk
20 g corn flour mixed with 2 tbsp. cold water
70 g crumbled stilton cheese
370 g chicken breast fillets (cut into small bite sized chunks)
80 g grated low fat cheddar cheese
Freshly ground salt and pepper

Steps:

  • Pre-heat oven to 180C Fan
  • Bring a large pan of salted water to the boil, stir in the pasta and return to the boil. Turn down to simmer for 8 minutes.
  • Add the broccoli florets and cook for a further 6 minutes, then drain through a sieve and place the pasta and florets into a casserole dish.
  • In a medium sized saucepan make the stilton sauce by combining the milk and corn flour over a low heat. Bring to the boil, stirring constantly, until thickened, season to taste, then turn the heat down and add the stilton cheese.
  • Stir the chicken into the stilton sauce and allow it to cook, gently, for about 5 - 6 minutes, again stirring constantly, making sure all the chicken is well combined into the sauce.
  • Mix the chicken and stilton sauce with the pasta and broccoli together in the casserole dish, top with the grated cheddar cheese and bake for about 20 minutes until the cheese has melted on top and is golden coloured.
  • Serve with extra vegetables or a mixed leaf salad.

400g penne or macaroni
1 red onion, roughly chopped
250g head broccoli, stalks chopped and florets halved
1 vegetable stock cube
1 tsp French or German mustard
200g pot half fat crème fraîche
100g grated mature gruyère or cheddar
small handful parsley leaves, chopped
4 tbsp fresh white breadcrumbs (or put 1 slice crustless white bread through a food processor)
½ tsp dried mixed herbs or thyme

Steps:

  • Boil the pasta, onion and broccoli stalks in plenty of lightly salted boiling water for about 7 mins, then add the florets and cook for another 3 mins. Reserve about 400ml of the water, then drain the pasta and vegetables.
  • Return the reserved water to the pan and dissolve the stock cube, whisk in the mustard and crème fraîche, then season to taste. Bring to the boil. Stir in the drained pasta, vegetables and half the cheese, mixing until melted. Stir in the parsley.
  • Heat the grill for 3 mins. Tip the pasta and vegetables into a shallow, ovenproof dish. Mix together the remaining cheese, breadcrumbs and herbs, then scatter on top.
  • Stand the dish on the base of a grill pan and grill for about 3 mins, turning if it starts to brown. Keep watching so the top doesn't start to burn or the cheese will toughen. Remove and leave to stand for 5 mins before serving.

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste

¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

salt and pepper
3 cups steamed broccoli (don't overcook the broccoli cook only until firm-soft)
3 tablespoons butter
1 cup onion, chopped
3 -4 garlic cloves, fresh minced or chopped (or more or less to suit taste)
3 tablespoons flour
1 teaspoon dried thyme
1 1/2 cups good quality chicken broth
1 1/2 cups half-and-half cream or 1 1/2 cups milk
1/4 cup grated parmesan cheese
1 bay leaf
1 lb chicken breast, cut in small pieces or strips (uncooked)
1/8 teaspoon nutmeg
2 tablespoons chopped fresh parsley
1/2 cup cottage cheese
1/4 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter an 11 x 8-inch baking pan or a casserole dish.
  • In a large bowl, toss together the steamed broccoli and the cooked pasta.
  • In a heavy-bottomed saucepan, heat the butter over medium heat.
  • Add in the onion; cook for about 3 minutes, or until softened.
  • Stir in the garlic and flour; cook for 1 minute.
  • Stir in thyme, then slowly whisk in the chicken broth and the half and half cream (or milk); add in the bay leaf and the 1/4 cup Parmesan cheese, bring to a medium boil, reduce heat; cook gently for 6-7 minutes, until mixture is thickened.

350g pasta shells or quills
200g broccoli, cut into very small florets and the stems thinly sliced
2 tbsp olive oil
350g boneless, skinless chicken breasts, thinly sliced
175g chestnut mushrooms, quartered
4 tbsp sundried tomato paste
80g soft cheese with garlic and herbs (such as Boursin)
284ml carton single cream
bunch of spring onions, finely sliced
85g mature cheddar, grated
1 garlic clove, finely chopped
50g flaked almonds

Steps:

  • Heat the oven to 190C/ fan170C/ gas 5. Bring a large pan of salted water to the boil. Throw in 350g pasta shells or quills, stir well and return to the boil.
  • Cook for 6 minutes, then add 200g broccoli, cut into very small florets and stems thinly sliced, and cook for 5-6 minutes more until the pasta is just cooked. Drain well, then return to the pan.
  • Heat 2 tbsp olive oil in a wide pan, add 350g thinly sliced boneless, skinless chicken breasts and fry until lightly browned.
  • Tip in 175g quartered chestnut mushrooms and stir fry for 1 minute, then stir in 4 tbsp sundried tomato paste, 80g soft cheese with garlic and herbs and a 284ml carton single cream.
  • Gently simmer, stirring, until the cheese has melted to thicken the sauce. Season with salt and pepper.
  • Pour the sauce over the pasta, stirring gently until coated, then tip into a shallow ovenproof dish (about 1.7 litre capacity) and level the top.
  • Mix a bunch of finely sliced spring onions, 85g grated mature cheddar, 1 finely chopped garlic clove and 50g flaked almonds for the topping and sprinkle over the pasta. Bake for 20 minutes until golden.
