CHICKEN BREAST STUFFED WITH SMOKED SALMON AND GOATS CHEESE
Tender chicken breasts stuffed with smoked salmon and goat's cheese make for a fabulous dinner party main. You could also make this recipe with double lamb cutlets or butterflied quail instead of the chicken.

Steps:
- Preheat oven to 200°C (180°C fan-forced).
- Combine potato, parsley, garlic and oil in medium bowl. Layer potato mixture in 2.5-litre (10-cup) ceramic baking dish, pour over milk. Roast, uncovered, about 40 minutes or until potato is just tender.
- Meanwhile, combine chives and cheese in small bowl. Cut fillets in half horizontally almost all the way through, open out each fillet. Spread each fillet with a quarter of the cheese mixture, top with one slice of salmon and a quarter of the spinach. Roll each fillet tightly to enclose filling, secure with toothpicks.
- Cook chicken in large oiled frying pan, uncovered, until browned.
- Place chicken on cooked potato, roast, uncovered, in oven about 15 minutes or until chicken is cooked through. Stand 5 minutes, remove toothpicks, slice chicken thickly.
- Serve chicken with potato and accompanied with a spinach salad.

I was served this by a friend years ago,unfortunatly i dont know where the recipe came from,and have lost contact with them so cant find out. i use skinless chicken but you could leave it on if you wish. also you can use mushroom soup instead of chicken . lovely served with new potatoes

Steps:
- pre heat oven to gas 4,350f ,180c.
- make a pocket in the chicken breasts and stuff with smoked salmon leaving a little of the salmon left over for the sauce.
- place in a ovenproof dish.
- fry onions in oil until golden,then add red pepper and cook for a further minute.
- add soup ,water, remainding salmon and sweetcorn and mix well.
- pour over the chicken .
- after 20 mins cooking in oven give the sauce a stir and baste chicken breasts with the sauce, cook for further 20 mins and serve.
CHICKEN BREAST STUFFED WITH BLUE CHEESE AND APRICOT
The blend of flavors in this recipe is amazing. I use a creamy blue cheese made by Rosenborg that has little pieces of pear in it, but you can use any blue cheese that you prefer. Make sure you thin out the chicken breast as much as possible and don't stuff them too much of you won't be able to fold them over. When you secure the chicken breasts, be sure not to leave too much of an opening, or your mixture will leak out in the oven. I served this for Valentine's Day Dinner, along with a delicious salad from another Recipe Zaar member and asparagus and couscous.

- Pound the chicken breasts until thin and even. Sprinkle a little salt and pepper on both sides.
- Place 1/2 and ounce of the blue cheese in the center of each chicken breast and top with 1 T. of the apricot preserves.
- Cut 6 of the dried apricots in half and place 3 slices in the middle of each chicken breast.
- Roll the breasts closed and secure with toothpicks or butchers twine. (I used butchers twine, it's a lot easier.
- Mix the bread crumbs, flour, oregano, rosemary and thyme together in a bowl, then moisten each chicken breast with a little water and roll in the bread crumb mixture. There's no need to completely coat the chicken breast, just a light dusting will do, unless you desire a heavier crust.
- Place chicken breasts in a baking dish and drizzle a small amount of honey on top of each breast. Bake in a 350 degree oven for 45-60 minutes.
- After you take the chicken breast out of the oven, allow it to sit for 10 minutes or so for the blue cheese and apricot mixture to firm up a little.
- Meanwhile, chop the remaining dried apricots into small pieces and place in a small sauté pan with the chicken stock and bring to a boil. Once it boils, add the butter and then allow the mixture to reduce to half. When serving the chicken breasts, pour a little of the mixture on top of each.

SMOKED CHICKEN BREAST STUFFED WITH CHEESE AND CHORIZO

Steps:
- Set smoker to 250F and start up the smoke using wood of choice (Hickory, Maple, Cherry all work well)
- Using a sharp knife, gently slice a pocket into each chicken breast. Try and slice as deep into the chicken as you can without coming through the other side.
- Stuff the chicken with some of the diced chorizo and grated cheese making sure the same amount goes into each chicken.
- Rub the spice mixture all over the chicken breasts.
- If desired, wrap 2 slices of bacon around each chicken breast.
- If you are not wrapping the chicken with bacon, tie up the chicken breast with string.
- Place chicken breasts in the smoker.
- Remove the chicken from the smoker when it reaches 160-165F, about 3 hours. Personally, I pull the chicken at 160F because it seems to climb a few more degrees even after it has been taken out of the smoker.
- Serve.

- On work surface place 2 (24-inch) sheets of Saran Wrap and place chicken on top.
- Cover with 2 more sheets of wrap.

- Place chicken breast on a large sheet of waxed or plastic; cover with another sheet; pound chicken breast to 1/4 inch thickness, remove the top sheet and season with salt and pepper.
- Combine the goat cheese, lemon rind, and apple; divide the apple mixture among the chicken breast and spread the mixture evenly over half the surface of each breast; fold each breast in half and press the edges together, forming a pocket.

- Preheat oven to 190°C.
- Make a deep cut into each chicken breast and insert a slice of smoked salmon.
- Place on greased baking tray and place in preheated oven for 30 minutes.
- When the chicken has been in the oven for about 15 minutes, start to prepare the sauce.
- Mix the flour and butter together and put in a pan on gentle heat for one minute then gradually add the milk and whisk to remove any lumps.
- When all the milk has been added and any lumps whisked out add the smoked salmon and stir till well mixed. then add the nutmeg and black pepper to taste.
- When the sauce begins to thicken to the required consistency and the cheese and stir in till melted.
- I normally serve this with only a little sauce on the plate with baby veg. taking the remaining sauce to the table so guest can help themselves, and it all goes.
- Enjoy.

- Preheat oven to 400 degrees F (200 degrees C).
- Cook bacon in a large oven-proof skillet until crisp, 5 to 7 minutes. Crumble bacon into a bowl; reserve drippings in skillet. Mix fontina cheese into bacon until combined.

- Combine chicken broth, shallots, celery, green pepper, and garlic in a small saucepan; bring to a boil over medium heat. Reduce heat, and simmer, uncovered, 5 minutes. Remove vegetables, using a slotted spoon; set aside. Reserve broth for another use. Drain salmon; remove and discard skin and bones. Flake salmon. Combine salmon, drained vegetables, egg substitute, and next 7 ingredients in a bowl, stirring well. Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4 inch thickness, using a meat mallet or rolling pin. - Step 1 The first thing is to bone out the chicken drumstick by sliding a filleting knife along and around the bone and then turning the drumstick inside out so the bone can be cut out. This is the only difficult step. The bone should be removed by cutting through the joint. Turn the drumstick back so the skin is on the outside again. This leaves a pocket for the mushroom stuffing.
- Step 2 Chop 2 mushrooms and the dried tomatoes and then stuff into the pockets created in the drumsticks where the bone was removed. Close the pocket using a cocktail stick.

- Step 5 If cooking on a large BGE cook the potatoes at the same time, if in a MiniMax alternate the cooking of the chicken and the potatoes and finish the potatoes as the chicken rests at the end of the cook).
- Step 6 Serve the chicken drumstick and half the chicken breast with the sautéed potatoes and your choice of vegetables.
