CHICKEN APPLE BREAKFAST SAUSAGE
This was not my favorite dish of the class, but it was a very close second. The best breakfast sausage I have ever tried! Eating raw meat is a HUGE NO NO - so to make sure you have added enough salt and/or seasoning, fry up a small piece of the sausage mixture to taste before you make the whole batch. This recipe will make 8 good sized patties or 16 small patties. These patties can be seared in a skillet, placed on a baking sheet lined with parchment paper and popped into a 400ºF oven for 10 min or so to finish the cooking.

Steps:
- In a large, heavy skillet heat 2 Tbs of olive oil over medium-high heat.
- Add the onions and apples.
- Cook, stirring for 3-4 min or until onions have softened.
- Add the garlic and cook for 30 sec to 1 minute.
- Remove from the heat and cool.
- In a large bowl combine the chicken, pork, thyme, sage, salt and pepper.
- Add the cooled onion mixture and mix well.
- At this point take a small piece of the mixture and cook in a skillet with a little vegetable oil, taste to test the salt and seasoning - add more is necessary.
- On a plastic-covered surface, form the mixture into 8 good sized patties or 16 smaller patties.
- Heat 2 Tbs of vegetabel oil in a 12-inch skillet over high heat.
- Add 4 patties (or more if smaller) to the pan and cook until golden brown, about 3-4 min per side.
- Place cooked patties in a warm oven while you cook the rest of the patties.
- Add more oil if necessary and continue cooking patties in the same manner.

- Mix the dry spices and brown sugar in a small bowl before adding to the ground chicken. Work the chicken and spices together until evenly mixed.
- Divide the ground chicken into 10 pieces (about 48 grams or 1.8 ounces each) and press between your palms to flatten.
- Heat a large skillet over medium-high heat with the olive oil. (I used a 12" cast iron skillet. If you're using a smaller skillet, you may need to cook in batches.)
- Once the oil is hot, carefully add the sausage patties to the skillet. Cook for 3-4 minutes or until the bottoms are a crispy brown. Flip each patty and cook for an additional 3-4 minutes or until the patties are cooked through and reach an internal temp of 165ºF. - In a large bowl, mix everything together well. I find that the quickest and surest way to make sure everything is well mixed is to don on my food prep gloves, and use my fingers to really mix it together.
- There are a couple different ways you can do this. I like to use a large cookie scoop. I scoop in the chicken sausage meat it so it's just nearly full, release the scoop, then flatten it with my palm. Alternatively, you can just divide the sausage meat into 15 rough balls, and shape each ball into a sausage patty.
- Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.The most reliable way to to check if a chicken sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage should be 165°F / 74°C.
