1 breast or 2 thighs of chicken per person
slices A handful of Bacon lardons or 6 of bacon., smokey is nice
1 large chopped onion
3 Cloves garlic crushed / chopped
1 courgette/ zucchini diced
1 package of frozen spinach. If you can get creamed frozen spinach, that is very delicious!
1 Chicken Stock cube - I used an OXO one., boullion
2 cups or 285 g pasta. You can use as much pasta as you wish. I chose pasta bows as the spinach and flavour sticks nicely to the shape.
2 Teaspoons sugar or honey
1 Tablespoon Olive Oil
Salt & Pepper
A handful of your favourite grated cheese. Here I used Parmesan., for the topping

Steps:

  • Peel & chop onion, garlic and zucchini, then add to a pan with 1 tablespoon olive oil.
  • Lightly fry until the onions are soft and translucent (not brown as this will make them taste bitter)
  • Add your chicken & bacon and cook, stirring in the pan with the other ingredients. Your chicken should be cut into bite sized pieces. Leave to cook gently whilst you cook your pasta in a separate pan as per the package instructions.
  • When your pasta is done, drain and run under cold water to stop it from continuing to cook. Set aside.
  • Add the remaining ingredients and stir so it is all combined. When the chicken is cooked, (test a piece), add the pasta. Stir well until the pan ingredients come back up to a hot temperature. You will hear and see it begin to bubble!
  • That's it! Ready to serve, so plate up and sprinkle as much grated cheese on the top as you like and watch it all melt. yum!

12 oz. spaghetti or angel hair
1 tbsp. extra-virgin olive oil
3 boneless, skinless chicken breasts (about 1 1/4 pounds)
Kosher salt
Freshly ground black pepper
6 slices bacon
2 cloves garlic
2 c. diced tomatoes (fresh or canned)
3 c. baby spinach
1/2 c. heavy cream
1/3 c. freshly grated Parmesan
Freshly torn basil, for garnish

Steps:

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1 cup pasta water.
  • Meanwhile, in a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook until golden and no longer pink inside, about 8 minutes per side. Let rest 10 minutes, then thinly slice.
  • Meanwhile, in same skillet, cook bacon over medium heat until crispy, 8 minutes. Drain on a paper towel-lined plate, then chop. Pour off half of fat from skillet.
  • Add garlic, tomatoes, and spinach to skillet and cook over medium heat until fragrant and slightly wilted, 2 minutes. Season with salt and pepper, then add heavy cream, Parmesan, and 1/2 cup of reserved pasta water. Simmer 5 minutes.
  • Add cooked pasta and toss until fully coated, then add chicken and bacon and toss until combined. (For a looser sauce, stir in more reserved pasta water.)

2 tablespoons olive oil
1 lb chicken ((skinless, boneless chicken breasts or tenderloins))
1 teaspoon paprika
1 teaspoon Italian seasoning ((thyme, oregano, basil - combined))
salt (to taste)
1.5 cups heavy cream
1/2 cup Parmesan cheese (shredded)
5 tomatoes ((medium, chopped in large cubes))
3 cups fresh spinach (or 1 cup cooked spinach)
5 garlic cloves (minced)
1/4 teaspoon red pepper flakes (crushed)
6 bacon strips (cooked, drained off fat, and chopped)
10 oz penne pasta ((for gluten-free version, use gluten-free brown-rice penne))
1/2 cup Parmesan cheese (shredded, for serving)

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet, on medium-high heat. Add chicken and cook on one side on medium-high heat for 4 minutes. While it cooks, sprinkle the uncooked sides of the chicken with paprika, Italian seasoning, and salt. Flip the chicken over, and cook on the other side for 3 more minutes on medium-high heat. Reduce heat to low-medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm.
  • To the same pan (but without chicken), add heavy cream and bring to boil. Only after the heavy cream starts boiling, add shredded Parmesan cheese. Immediately reduce to simmer (low-medium heat) and stir, while simmering, until the cheese melts and the sauce is creamy, for about 1 or 3 minutes.
  • To the same pan with the creamy sauce, add chopped tomatoes, fresh spinach, garlic, crushed red pepper. Stir in the sauce on medium heat just until the spinach starts to wilt and sinks into the sauce. Add 1/3 of the cooked chicken (sliced into small strips) and half the bacon (already cooked and drained of fat). Mix everything. Remove from heat.
  • In the meantime bring a large pot of water to boil, add pasta, and cook according to instructions (usually 10 to 15 minutes). Drain the pasta.
  • Add cooked pasta to the skillet with the sauce and reheat on low heat. When ready to serve, top the pasta with the remaining half of bacon (cooked, drained of fat, chopped, gently reheated) and the remaining 2/3 of the cooked chicken (sliced into small strips, gently reheated). This is done for presentation purposes.
  • When serving, top the pasta with 1/2 cup of shredded Parmesan cheese.

1 tbsp butter
1 onion, finely chopped
1 large garlic clove, finely grated
200ml double cream
100g mascarpone
75g parmesan, finely grated
1 chicken stock cube
2 cooked chicken breasts (about 210g), shredded
8 rashers cooked streaky bacon (about 25g), roughly chopped
300g tagliatelle
¼ small bunch of parsley, finely chopped
green salad, to serve

Steps:

  • Heat the oil and butter in a medium saucepan over a low heat and fry the onion for 10 mins, or until softened and translucent. Add the garlic and cook for 2 mins more. Add the cream, mascarpone, parmesan and stock cube. Give it a stir and add the cooked chicken and bacon to heat through.
  • Meanwhile, cook the pasta following pack instructions. Reserve 100ml of the pasta water. Toss the pasta in the creamy sauce and enough of the reserved water to loosen. Season with black pepper. Top with the parsley and serve with a green salad.

3 boneless skinless chicken breasts, Sliced into strips
2 tablespoons olive oil, seperated
1/8 teaspoon salt
1/8 teaspoon pepper
1 key lime, squeezeed
10 slices bacon, crispy and crumbled, seperated
1/2 lb penne pasta
1 medium shallot, aprox 1/2 cup, chopped
4 large garlic cloves, chopped
3/4 cup plus 2 tablespoons sun-dried tomato, drained and chopped, seperated
1 teaspoon cornstarch
1 cup chicken stock
1 cup fat-free half-and-half, warmed
1/8 teaspoon cayenne pepper (optional)
3 ounces fresh Baby Spinach

Steps:

  • Drizzle chicken with 1 tbls olive oil then sprinkle with salt and pepper, squeeze key lime over chicken.
  • Flip over a few times to mix marinade with chicken -- set aside.
  • Cook bacon -- set aside.
  • Get water heating for pasta.
  • In large saute pan heat 1 tbls of the Olive Oil add Shallots and Garlic.
  • Saute for 1-2 minutes then add 3/4 cup of the Sun Dried Tomatoes.
  • Add chicken and cook till done.
  • Mix corn starch with chicken stock and slowly stir into chicken mixture then add warm half and half. Add cayenne pepper.

1 cup minced onion
3 pounds skinless, boneless chicken breast halves, cubed

6 smoked streaky bacon rashers
1 tbsp olive oil
4 boneless, skinless chicken thighs
½ tsp dried oregano
3 garlic cloves, crushed
1 chicken stock cube
1 heaped tbsp plain flour
300ml double cream
500g short pasta (we used rigatoni)
100g parmesan, grated
2 tsp Dijon mustard
100g baby spinach, roughly chopped
large handful of fresh or dried breadcrumbs
3 tomatoes, chopped

Steps:

  • Heat the grill to high. Put the bacon rashers on a baking tray lined with foil and grill for 5 mins on each side until crisp. Leave to cool, then roughly chop.
  • Heat the oil in a large saucepan or high-sided frying pan over a high heat. Season the chicken, then brown on both sides. Sprinkle over the oregano and add the garlic, then stir for another minute. Crumble in the stock cube and add 250ml water.
  • Bring to a simmer, cover and reduce the heat to low-medium. Cook until the chicken is tender, about 15-20 mins, topping up with more water if the pan looks dry. Transfer the chicken to a board using tongs, then shred using two forks. Return the shredded chicken to the pan with the sauce.
  • Whisk the flour into the cooking juices in the pan, turn up the heat and keep stirring until you have a smooth paste that clings to the chicken. Add 500ml water and the cream, then simmer, stirring occasionally for 8-10 mins, or until the sauce has thickened.
  • Meanwhile, cook the pasta in a large pan of boiling salted water for about 10 mins until it is just cooked but retains some bite. Drain.
  • Add most of the parmesan, the mustard, spinach and half the chopped bacon to the sauce, then season to taste, if needed. Stir until the spinach has wilted, then stir in the cooked pasta.
  • Tip the mixture into a large baking dish. Mix the breadcrumbs with the remaining parmesan and scatter over the top along with the tomatoes and remaining chopped bacon. The unbaked dish can now be frozen for up to two months (see below).
  • To cook straightaway, heat the oven to 200C/180C fan/gas 6. Bake for 35-40 mins, or until the top is golden and crunchy and the sauce is bubbling.

1 lb bacon, cut into 1/2-inch thick pieces
1 lb chicken, cubed
1/2 cup chopped onion
3 garlic cloves, minced
1/4 cup flour
1 tablespoon dried minced onion
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/4 teaspoon dried oregano

4 cups chicken broth

3 cups whole milk
1 lb bow tie pasta
1 (10 ounce) package frozen chopped spinach, thawed and drained
3/4 cup grated parmesan cheese, divided

Steps:

  • In a large stockpot, saute bacon over medium-high heat until crisp. Remove with a slotted spoon to a medium bowl.
  • Reduce heat to medium. Add chicken to the bacon fat and cook until center is no longer pink. Remove with a slotted spoon to the same bowl as the bacon.
  • Saute onion in bacon fat for 1 minute. Add garlic and saute for an additional minute.
  • Sprinkle in the flour, dried minced onion, salt, onion powder, garlic powder, parsley, basil, oregano and pepper. Cook and stir for 1 minute.
  • Stir in chicken broth, water and milk. Increase heat to medium-high. Bring to a boil. Add pasta. Cook for 9-11 minutes or until al dente, stirring every 1-2 minutes to prevent the pasta from sticking to the bottom.
  • Remove from heat and stir in spinach, breaking it up to spread throughout the pasta and sauce. Stir in 1/2 cup Parmesan cheese until it's incorporated. Stir in the bacon and chicken.
  • Sprinkle remaining 1/4 cup Parmesan cheese on top. Serve warm.

1 onion, chopped
3 cups chopped cooked chicken
1 (14 ounce) can Italian-style diced tomatoes
