Miso is a fermented soy bean paste that adds a rich flavor. This is a quick, healthy soup that is very popular in Japanese cuisine.

3 cups prepared dashi stock
¼ cup sliced shiitake mushrooms
1 tablespoon miso paste
1 tablespoon soy sauce
⅛ cup cubed soft tofu
1 green onion, chopped

Steps:

  • In a medium saucepan, bring stock to a boil; reduce heat to simmer, add mushrooms, and cook for 3 minutes. In a small bowl, mix miso paste and soy sauce together; stir into stock along with tofu. Simmer 5 minutes, and serve topped with with green onion.

4 chicken thighs, skinless and boneless cut into bite size pieces
1 tablespoon olive oil
10 mushrooms, sliced
1 tablespoon ginger, sliced into matchsticks
2 cups chicken stock
1 tablespoon soy sauce
1/2 tablespoon sake
200 g extra firm tofu, cut into small cubes
spinach, as much as you like

Steps:

  • Brown chicken thighs and mushrooms in olive oil.
  • add ginger and cook until fragrant.
  • add stock and soy sauce and sake, bring to boil and then simmer.
  • 10 - 15 minutes before serving add tofu.
  • 5 minutes before serving add spinach.

  • Previous Night: Gently clean kombu with a damp towel. NEVER wash kombu and do not remove the white powder (that’s where the umami flavor comes from!). These days kombu is pretty clean. Soak kombu in 5 cups of water overnight. If you don’t have time, skip soaking and go to the next step.
  • Heat a large pot and add sesame oil. Sauté daikon, carrot, taro (satoimo), gobo (burdock root), and konnyaku until the oil coats the ingredients.
  • Right before serving, cut the scallion. Serve the soup and garnish with scallion. Sprinkle Shichimi Togarashi and Sansho Pepper, if you like it spicy.
