2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced or pressed
1/2 medium onion, finely diced
1 pound peeled and deveined large shrimp (16/20 count)
2 lemons, halved
1/2 cup white wine
4 dashes hot sauce (I used tabasco), or more to taste
Salt and freshly ground black pepper
8 ounces angel hair pasta
1/2 cup grated Parmesan
Minced fresh parsley, for topping

Steps:

  • Boil water for the pasta and have it ready.
  • Melt the butter and heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook until the onions are translucent, 2 to 3 minutes. Add the shrimp, then stir and cook for a couple of minutes. Squeeze in the lemon juice. Add the wine, hot sauce, salt and pepper. Stir and reduce the heat to low.
  • Throw the angel hair pasta into the boiling water. Cook until just al dente. Drain, reserving a cup or 2 of the pasta water.
  • Remove the skillet from the heat. Add the pasta and toss, adding a splash of pasta water if it needs to be thinned. Taste for seasoning, adding salt and pepper if needed. Top with the grated Parmesan and minced parsley and serve immediately.

1 pound angel hair pasta
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 lemon, juiced, plus 1/2 lemon, zested
1/2 cup dry white wine
5 tablespoons butter
1/4 cup chopped parsley leaves

Steps:

  • Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
  • Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
  • Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

1/8 teaspoon (a big pinch) crushed red pepper flakes
1/2 cup dry white wine, such as Sauvignon Blanc, Chardonnay, or Pinot Grigio
Zest and juice of 1 lemon (about 1 tablespoon of zest and 3 tablespoons of juice)
1/4 cup chopped parsley
Lemon wedges for serving

4 boneless skinless chicken breast halves
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1/2 cup minced onion
2 tablespoons minced garlic
2 cups milk
1 lb medium shrimp, cleaned
1/3 cup grated parmesan cheese
1 teaspoon parsley
1/8 teaspoon red pepper flakes, optional

Steps:

  • Coat chicken with mixture of flour, salt, and pepper, reserve 2 T of flour mixture.
  • Heat butter in large skillet.
  • Brown chicken on both sides,turning often, about 12 minutes, until chicken tests done.
  • Remove chicken and keep warm.
  • To skillet, add onion and garlic, saute 1 minute.
  • Add reserved flour mixture, cook and stir 1 minute.
  • Add milk, cook and stir until milk boils.
  • Add shrimp, cheese, parsley and pepper flakes.
  • Simmer for 3 minutes.
  • Place chicken on plate, spoon scampi over the chicken.

6 ounces angel hair pasta
1/2 cup chicken broth
2 tablespoons soy sauce
2 teaspoons cornstarch
1/2 teaspoon ground pepper
2 tablespoons olive oil
1/2 cup green onion, chopped in 1/2 inch lengths
1 teaspoon garlic, minced
1 medium yellow squash, cut into 1/4 inch slices
1 small green pepper, cut into thin strips
6 ounces boneless chicken breasts, cut into bite-size pieces
4 ounces medium shrimp, peeled, thawed and deviened

Steps:

  • Cook pasta according to directio.
  • Whisk broth, soy sauce, cornstarch and ginger in a small bowl until well blended. Set aside.
  • Heat olive oil in large skillet over mediium-high heat for 1 minute. Add onions and garlic and cook for one minute, stirring ocassionally. Remove from the skillet and set aside.
  • Add squash to skillet- cook for 2 minutes. stirring frequently. Then, add peppers and cook for 2 more minutes, stirring frequently. Remove veggies from skillet and set aside. Add chicken and shrimp to skillet and cook for 3-4 minutes, until chicken no longer pink in center and shrimp turns pink. Push chicken and shrimp to the side of the skillet, stir broth mixture and pour into skillet. Cook 1 minute or until broth begins to thicken, stirring constantly. Mix in the cooked vegetables, cook 1-2 minutes, stirring constantly, until all is heated through.
  • Drain pasta and place on plate, topping with the mixture.
  • Enjoy.

3 boneless skinless chicken breasts
3 boneless skinless chicken thighs
1 large box seapac shrimp scampi
Olive oil
1 large onion
1 large green bell pepper
2 small cans mushrooms stems/pieces
1 can diced tomatoes
1 family size can cream of mushroom soup
1 regular size can cream of mushroom soup
1 box angel hair pasta

Steps:

  • Thaw out chicken and shrimp scampi. Cut chicken in medium size pieces. Using heavy duty Dutch oven or other heavy duty pot, cook chicken in small amount of olive oil until done without browning.
  • Remove tails from shrimp saving all scampi sauce. Saute chopped onion, chopped green bell pepper and drained mushrooms in 3 tablespoons olive oil.
  • Combine all of the above (except pasta) in the pot chicken was cooked in including scampi sauce. Add the diced canned tomatoes and simmer for 30 min.
  • Cook pasta, drain, and add to sauce mixture. Simmer another 10-15 minutes.

¾ pound Roma (plum) tomatoes, halved lengthwise
1 (16 ounce) package angel hair pasta
2 teaspoons olive oil, or more to taste
salt and ground pepper to taste
1 pound butter, cut into cubes
3 tablespoons grated red onion
6 cloves garlic, or more to taste, minced
3 tablespoons minced fresh basil, divided
2 pounds shrimp, peeled and deveined
10 fresh mushrooms, quartered
2 teaspoons garlic powder
¼ cup lemon juice
⅓ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
  • Arrange tomato halves onto prepared baking sheet. Drizzle olive oil over the tomatoes; season with salt and pepper.
  • Roast tomatoes in preheated oven until edges are crisp, about 35 minutes. Transfer to a cutting board to cool; cut into small chunks.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes; drain. Transfer to a large bowl.
  • Melt butter in a skillet over low heat. Cook and stir onion, garlic, and half the basil in the hot butter until the onion is translucent, about 5 minutes.
  • Stir shrimp, tomato chunks, mushrooms, and garlic powder into the onion mixture. Increase heat to medium-low and cook and stir until shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 6 minutes.
  • Pour shrimp mixture over the angel hair pasta; top with Parmesan cheese and lemon juice and toss to coat pasta completely. Garnish with remaining basil.
