CHICKEN SCAMPI PASTA
Chicken takes the place of shrimp in this dish inspired by the Olive Garden classic -- making it even more weeknight friendly. Serve over angel hair pasta and you'll be in and out if the kitchen in less than 30 minutes. Molto bene!

Steps:
- Bring a large pot of salted water to a boil for the pasta. Sprinkle the chicken with some salt. Heat a large skillet over medium-high heat until hot, then add the oil. Working in 2 batches, brown the chicken until golden but not cooked through, 2 to 3 minutes per batch. Remove the chicken to a plate.
- Melt 4 tablespoons of the butter in the skillet. Add the garlic and red pepper flakes and cook until the garlic just begins to turn golden at the edges, 30 seconds to 1 minute. Add the wine, bring to a simmer and cook until reduced by half, about 2 minutes. Remove from the heat.
- Meanwhile, cook the pasta until very al dente, reserving 1 cup of the pasta water. Add the pasta and 3/4 cup pasta water to the skillet along with the chicken, lemon zest and juice and the remaining 4 tablespoons butter. Return the skillet to medium-low heat and gently stir the pasta until the butter is melted, adding the remaining 1/4 pasta water if the pasta seems too dry. Remove the skillet from the heat, sprinkle with the grated cheese and parsley and toss before serving.

Steps:
- In a large skillet, heat the butter and oil over medium high until the butter melts. Add the parsley, basil, oregano and garlic and salt and mix together in the skillet. Stir in lemon juice.
- Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter can be added if needed.

- Cook linguine according to package directions. Meanwhile, heat a large skillet over medium heat. Add the butter and olive oil; cook the onion and garlic until tender. Sprinkle chicken with salt and pepper; add to skillet. Cook until a thermometer reaches 165°, 3-4 minutes on each side. Remove chicken and keep warm. , In the same skillet, combine the tomato, lemon juice and parsley; heat through. Drain linguine; toss with tomato mixture. Heavenly recipe with chicken and garlic. It is really delicious and I got the recipe from a friend I used to teach preschool with.

Steps:
- Put olive oil and butter in skillet on low heat.
- Add the green onions and minced garlic and saute.
- Add Italian seasoning, salt and pepper.
- Put chicken that has been cut into pieces in the skillet with the garlic onion and seasonings.
- Heat until chicken is no longer pink.
- I usually let the chicken sit with the other ingredients in the skillet for a few moments on low just to get the seasoning set in really well.
- I then put the tomatoes in to just heat through.
- I serve with the rice or noodles.

Steps:
- Coat chicken with mixture of flour, salt, and pepper, reserve 2 T of flour mixture.
- Heat butter in large skillet.
- Brown chicken on both sides,turning often, about 12 minutes, until chicken tests done.
- Remove chicken and keep warm.
- To skillet, add onion and garlic, saute 1 minute.
- Add reserved flour mixture, cook and stir 1 minute.
- Add milk, cook and stir until milk boils.
- Add shrimp, cheese, parsley and pepper flakes.
- Simmer for 3 minutes.
- Place chicken on plate, spoon scampi over the chicken.

This is a recipe I got from my mom, I have no idea where she got it. I have made this several times and it's always delish. If you look at what scampi is, it's shrimp, so when people say they want shrimp scampi they're being redundant....I hope you'll try this and let me know how you like it.

QUICK, CHEAP, EASY CHICKEN SCAMPI- FAMILY FRIENDLY
I wanted a copycat version of Olive Garden's chicken scampi but wanted it to be quick and easy. So I took a several different chik scampi recipes and made one of my own. Even my picky 8y/o liked this, even though he picked out the bell peppers. :) It may look like a lot of ingredients but sooooo easy!

- Cut the chicken into bite size pieces. Dip the chicken in the beaten egg, then into the bread crumbs, which have been mixed with the grated cheese, ½ tsp salt, and ¼ tsp pepper. Spread the coated chicken pieces on a rack or a platter. This can be done several hours ahead and refrigerated.
- Heat ½ cup oil in large skillet. Add 1/3 chicken pieces; sauté until golden brown. Remove chicken with a slotted spoon, and repeat with remaining chicken. Discard oil from skillet, and wipe clean.
- Cook the pasta; add garlic salt to water for extra flavor while boiling. While the pasta is cooking, melt the ½ cup butter in the skillet. Add the garlic and cook 1 minute. Add the cooked chicken, lemon juice, salt and pepper. Toss to coat the chicken pieces with the sauce. Do not allow chicken to cook further.
- Drain the pasta, and toss the remaining 2 Tbsp butter; then spoon onto platter. Spoon chicken and sauce over pasta. Sprinkle with parsley and serve with lemon wedges. I like to use more lemon juice than the recipe calls for, but I love lemon!

- In a large skillet, melt the butter with the oil over medium heat. Stir in the herbs, garlic and lemon juice.
- Add the chicken and saute about 5 minutes, until just starting to brown.

- Meanwhile, cook chicken and onions in dressing in large skillet on medium-high heat 5 min. or until chicken is no longer pink, stirring frequently. - Bring a large pot of water to a boil to cook pasta (cook according to directions on package, to al dente. I find it's best to start cooking the pasta in the boiling water when the wine is reducing just before step 7).
- Dab chicken pieces dry with paper towels. Toss with flour, Italian seasoning and salt and pepper (I use about 3/4 tsp salt 1/4 tsp pepper).
- Meanwhile melt 3 Tbsp butter with 1 Tbsp olive oil in a 12-inch non-stick skillet over medium-high heat.
- Add chicken in a single layer and let sear until browned on bottom, about 4 minutes, turn and let cook through about 2 - 3 minutes.
