CHICKEN AND GARDEN VEGETABLE SKILLET



Chicken and Garden Vegetable Skillet image

Tender chicken nestles among colorful vegetables, enlivened with a sherry-flavored cream sauce.

3 tablespoons butter or margarine
1/2 cup Progresso™ panko bread crumbs
1 lb boneless skinless chicken breasts, cut into strips
2 large shallots, sliced (about 3/4 cup)
1 medium zucchini, cut in half lengthwise, then cut crosswise into slices (about 1 1/2 cups)
1 cup julienne (matchstick-cut) carrots (about 3 oz)
1/4 teaspoon pepper
1 tablespoon all-purpose flour
1/2 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1/4 cup medium-dry sherry or chicken broth
1/4 cup half-and-half
3 tablespoons grated Parmesan cheese

Steps:

  • In 10-inch nonstick skillet, melt 1 tablespoon of the butter over medium-high heat; add bread crumbs. Cook about 3 to 4 minutes, stirring occasionally, until bread crumbs are toasted; remove from skillet and set aside.
  • Increase heat to high. In same skillet, melt 1 tablespoon butter. Cook chicken in butter about 6 minutes, stirring occasionally, until brown on outside and no longer pink in center. Remove from skillet and keep warm.
  • Reduce heat to medium-high. In same skillet, melt remaining 1 tablespoon butter. Cook shallots, zucchini, carrots and pepper in butter about 5 minutes, stirring occasionally, until crisp-tender. Sprinkle with flour; cook 1 minute, stirring constantly. Stir in broth and sherry. Heat to boiling; boil 1 minute, stirring frequently, until slightly thickened. Return chicken to skillet. Stir in half-and-half; heat just until hot.
  • To serve, spoon chicken mixture into serving dish. Sprinkle with cheese and toasted bread crumbs.

1-1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch cubes
1 medium yellow summer squash, chopped
1 medium onion, chopped
1 medium carrot, chopped
2 tablespoons butter
3 cups fresh baby spinach
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 cup uncooked instant brown rice
1-1/4 cups water
1 tablespoon lemon juice

Steps:

  • In a large skillet, saute the chicken, squash, onion and carrot in butter for 5-6 minutes or until chicken is no longer pink; drain. Add the spinach, garlic, salt, thyme and pepper; cook 2 minutes longer., Stir in rice and water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until rice is tender. Stir in lemon juice.

I love to make this one-pan dinner on especially busy weeknights. (It's also great if you're a meal prepper.) Chicken thighs and root veggies are all cooked together in my beloved cast-iron skillet. If you don't have access to fresh herbs, feel free to use dried instead.

4 bone-in, skin-on chicken thighs
1 tablespoon Miss Brown's House Seasoning, recipe follows
2 tablespoons Dijon mustard
2 small beets (golden or red), cut into 1/2-inch chunks
1/2 bunch rainbow carrots, peeled and cut into 1-inch chunks
1/2 cup 1-inch parsnip chunks
1/2 red onion, sliced
2 tablespoons olive oil
2 sprigs fresh rosemary
2 sprigs fresh sage
2 sprigs fresh thyme
1 sprig fresh tarragon
6 tablespoons unsalted butter
2 tablespoons dry sherry, optional
2 tablespoons minced fresh parsley
1 tablespoon fresh lemon juice
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • For the chicken and veggies: Preheat the oven to 400 degrees F.
  • Sprinkle the chicken with half of the House Seasoning and brush both sides with the Dijon mustard. Drizzle the beets, carrots, parsnips and onion with 1 tablespoon of the olive oil and sprinkle with the remaining 1/2 tablespoon House Seasoning. Set aside.
  • Heat the remaining tablespoon olive oil in a large cast-iron skillet over medium-high heat. Cook the chicken until browned, about 3 minutes. Flip and cook until browned on the other side, 4 to 5 minutes more. Remove the chicken to a plate.
  • Add the beets, carrots, parsnips and onions to the skillet and cook until browned, 4 to 5 minutes. Add the herbs and nestle the chicken into the vegetables.
  • Transfer the skillet to the bottom rack of the oven. Bake until the juices from the chicken run clear and the vegetables are tender, about 40 minutes.
  • Meanwhile, make the butter sauce: Melt the butter in a small saucepan over medium heat. Add the sherry, if using, along with the parsley, lemon juice and garlic. Bring the mixture to a simmer and season with salt and pepper. Remove the skillet from the oven and pour the sauce over the chicken and vegetables.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

This delicious-looking barbecue recipe comes from the people at The Reynolds Kitchens. I'm submitting it in response to a request. I haven't tried it yet, but plan to as soon as the weather warms up. I bet it would also be fabulous drizzled with a little Italian dressing!

2 tablespoons water
1 1/2 teaspoons dried basil
1 teaspoon seasoning salt
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (1 1/2 to 2 lb.)
2 cups sliced yellow squash
2 cups sliced zucchini
2 medium tomatoes, cut in wedges
1/3 cup shredded parmesan cheese or 1/3 cup vegan parmesan cheese

Steps:

  • Preheat grill to medium-high or oven to 450 F.
  • Place bag in a 1-inch deep pan.
  • Combine flour and water; pour into bag.
  • Combine basil, seasoned salt, and pepper.
  • Arrange chicken in bag in an even layer; sprinkle half of seasonings over chicken.
  • Place vegetables over chicken; sprinkle with remaining seasonings.
  • Double fold open end of bag to seal.
  • To cook, slide bag onto grill or leave in pan and place in oven.
  • Grill 20 to 25 minutes in covered grill or bake 40 to 45 minutes in oven.
  • Using oven mitts, cut bag open with a sharp knife.
  • Carefully fold back top for steam to escape.
  • Sprinkle with cheese before serving.

1 lb boneless skinless chicken cutlet (usually 5 cutlet or fillets)
1/2 cup all-purpose flour
1 tablespoon onion powder
1 1/2 teaspoons paul prudhomme's chicken seasoning
1/4 teaspoon fresh ground pepper
2 eggs
3 tablespoons plugra butter
1 teaspoon olive oil
1 tablespoon bottled minced garlic
1 medium red onion
1 lb green beans
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 tomatoes
3 tablespoons plugra butter
1 teaspoon olive oil
2 cups water
2 knorr homestyle chicken stock
basmati rice

Steps:

  • Cut yellow, red and green peppers into thin strips.
  • Snap ends off green beans and keep long unless they are really long then snap in two.
  • Finely dice red onion.
  • Dice fresh tomato.
  • Using a fork sift flour, pepper, chicken seasoning and onion powder in a shallow dish.
  • In a separate shallow dish beat the two eggs.
  • Dredge the chicken breast through the egg then through the flour.
  • Add 3 Tbls margarine and 1 tsp olive oil and minced garlic from a jar in large deep skillet until hot.
  • Lightly brown chicken over medium heat until light brown then set aside.
  • Melt remaining margarine and olive oil.
  • Add the red, yellow and green peppers, green beans and red onion and tomato and saute until green beans and peppers are tender but not soggy about 4-10 minutes depending on your idea of tender.
  • Add 2 cups of water and the Knorr Homestyle Chicken Stock.
  • Bring to a boil
  • Turn burner to medium low and add chicken back to skillet and cover with lid.
  • Simmer until chicken is done all the way through about 3 minutes depending on the thickness of your chicken breast.
  • Prepare basmati rice using package directions.
  • Serve chicken and vegetables and "gravy" over rice.
