3/4 cup crumbled feta cheese (about 3 ounces)
1 teaspoon dried oregano
4 boneless, skinless chicken breast halves (6 to 8 ounces each)
Coarse salt and ground pepper
2 tablespoons olive oil
1/2 cup homemade or low-sodium store-bought chicken stock
Juice of 1/2 lemon
2 tablespoons unsalted butter

Steps:

  • In a small bowl, combine feta and oregano. Make a pocket in chicken breasts: Holding chicken flat with palm of one hand, make an incision in thicker side of each breast with a paring knife. Carefully pivot the knife to create a deep pocket, keeping the other side of the chicken breast intact. Stuff pockets with feta mixture, dividing evenly; generously season both sides of chicken with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Add chicken, and cook until browned on both sides, 6 to 7 minutes per side.
  • Cover skillet, and continue cooking until chicken is opaque throughout and an instant-read thermometer inserted into thickest part registers 160 degrees. about 5 minutes more. Remove chicken to a platter, and keep warm.
  • To the skillet, add chicken stock, and cook, stirring up brown bits with a wooden spoon until reduced slightly. Add lemon juice and butter. Reduce the heat to low, and swirl pan until butter is melted, and sauce is slightly thickened. Serve chicken drizzled with sauce.

1/4 cup reduced-fat mayonnaise
BURGERS:
1/2 cup chopped roasted sweet red pepper
1 teaspoon garlic powder
1/2 teaspoon Greek seasoning
1/4 teaspoon pepper
1-1/2 pounds lean ground chicken
1 cup crumbled feta cheese
6 whole wheat hamburger buns, split and toasted
Optional: Lettuce leaves and tomato slices

Steps:

  • Preheat broiler. Mix cucumber and mayonnaise. For burgers, mix red pepper and seasonings. Add chicken and cheese; mix lightly but thoroughly (mixture will be sticky). Shape into six 1/2-in.-thick patties., Broil burgers 4 in. from heat until a thermometer reads 165°, 3-4 minutes per side. Serve on buns with cucumber sauce. If desired, top with lettuce and tomato. Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to an airtight freezer container; return to freezer. To use, broil frozen patties as directed, increasing time as necessary.

10 oz frozen spinach, thawed and well-drained
1 lb lean ground chicken
1 egg, medium
½ cup feta cheese, crumbled
2 cloves garlic, minced
1 cup onions, diced
1 tsp oregano, dried
6 whole grain hamburger
2 tomatoes, medium, sliced
6 slices onions, sliced
1 ½ cups field or mixed salad greens

Steps:

  • Add ground chicken to large bowl. Mix in drained spinach, whole cracked egg, crumbled feta, minced garlic, diced onion and dried oregano. Mix well using clean hands. Form into six equal size patties (about ½ cup - 125 mL each). Chill for one hour to prevent sticking on the grill.
  • Preheat grill to medium-high. Place burgers on top rack, close lid and grill 15 minutes one side or until browned. Close lid and grill another 7-10 minutes or until a thermometer set in centre of burgers registers 165°F (74°C). Remove from grill.
  • Place hamburger buns cut side down on grill and toast lightly.
  • Slice tomato and onion and place on serving dish with salad greens.
  • To serve, spread salad greens over bottom of bun. Top with a feta chicken burger, sliced tomato and onion and other half bun. Serve with your favourite tzatziki sauce or condiments.

Steps:

  • Mix all ingredients in large mixing bowl, cover and let rest for at least 15mins. (You can also let rest in the fridge covered until ready to use but bring back to room temp before next step).
  • Separate into 4-6 equal parts depending on how large you want your burgers.
  • Roll each part into a ball then form into patties. (A pattie press does wonders for this step).
  • Heat grill to 275-350F internal air temperature.
  • Using a silicone brush lightly coat grill with Olive Oil to keep burgers from sticking.
  • Cook burgers to desired doneness and let rest for at least 5 minutes before serving.

500g lean turkey mince
100g feta , crumbled
1 large courgette (about 200g), ends trimmed, halved widthways and spiralized into thin noodles
2 garlic cloves , crushed
½ small pack mint , leaves picked and chopped
½ tsp chilli flakes
1 tsp sumac
zest and juice of 1 lemon (save the juice for the salad)
1 large egg , beaten
1 tsp olive oil
2 tbsp extra virgin olive oil
110g bag of rocket salad
250g pack cherry tomatoes , halved

Steps:

  • Mix all of the ingredients for the turkey burgers, bar the olive oil, together in a large bowl. Season with a generous amount of black pepper and a little salt (you won't need a lot because of the feta). Shape into 4 burgers, the mixture will be quite sticky so cover and chill in the fridge for 15 mins or until needed to firm up a little. At this point the burgers can also be frozen.
  • Preheat the grill to its highest setting then brush the burgers on both sides with the olive oil. Transfer the burgers to a non-stick baking tray and cook for 8-10 mins on each side, until cooked through and golden brown.
  • While the burgers are cooking, mix together the olive oil, lemon juice and some seasoning. Add the rocket and tomatoes to a large salad bowl, add half the dressing and toss well to combine. Serve alongside the turkey burgers and with the extra dressing on the side.

  • In a bowl combine, 1 lb ground chicken breast, 1 lb ground chicken thighs, 1/2 cup feta cheese, 1/2 cup chopped scallions, 1/4 cup chopped parsley, 1/4 cup diced bell pepper, 1½ tsp salt, 1 tsp steak seasoning, 1 tsp ground mustard, 1 tsp garlic powder, and 1/2 tsp paprika until well combined.
  • Use the same technique we used to make the Bacon Burgers to shape the burgers. Use a half cup measuring cup to make a 4 oz burger patty. Transfer the meat to a 5 inch round ramekin or other container. Rinsing the container with water right before filling with meat will help the meat release easier. Separate patties with wax or parchment paper.
  • Cook in a well oiled skillet over medium high heat with the lid on, rotating once the first side is well browned.

  • If planning to make the tzatziki sauce prepare it ahead of time so the flavors can meld together.
  • Mix all the ingredients for the tzatziki sauce in a small bowl until well combined. Cover and refrigerate. Let sit in the refrigerator for at least an hour. Taste and add more seasoning if needed. Keep chilled until ready to serve.
  • Heat a medium sized pan over medium high heat. Add ½ teaspoon of oil to the pan. Once the oil is hot add the spinach and gently wilt the spinach down. (don’t over cook the spinach so it becomes mush). Should only take a minute to wilt. Once done place in a bowl to cool. Once cool, roughly chop the spinach, so it can distribute in the meat mixture more evenly.
  • Add the remaining chicken burger ingredients (ground chicken through black pepper) to a large mixing bowl. When the spinach is fully cooled add it to the bowl as well. Gently but thoroughly mix everything together until all the ingredients are evenly distributed.
