- In a small bowl, combine feta and oregano. Make a pocket in chicken breasts: Holding chicken flat with palm of one hand, make an incision in thicker side of each breast with a paring knife. Carefully pivot the knife to create a deep pocket, keeping the other side of the chicken breast intact. Stuff pockets with feta mixture, dividing evenly; generously season both sides of chicken with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Add chicken, and cook until browned on both sides, 6 to 7 minutes per side.
- Cover skillet, and continue cooking until chicken is opaque throughout and an instant-read thermometer inserted into thickest part registers 160 degrees. about 5 minutes more. Remove chicken to a platter, and keep warm.
- To the skillet, add chicken stock, and cook, stirring up brown bits with a wooden spoon until reduced slightly. Add lemon juice and butter. Reduce the heat to low, and swirl pan until butter is melted, and sauce is slightly thickened. Serve chicken drizzled with sauce.

- Preheat broiler. Mix cucumber and mayonnaise. For burgers, mix red pepper and seasonings. Add chicken and cheese; mix lightly but thoroughly (mixture will be sticky). Shape into six 1/2-in.-thick patties., Broil burgers 4 in. from heat until a thermometer reads 165°, 3-4 minutes per side. Serve on buns with cucumber sauce. If desired, top with lettuce and tomato. These Mediterranean-inspired chicken patties are a light contrast to your beef burgers and complement any backyard get-together. If you use all-breast meat, add some olive oil to the meat mixture so they don't dry out. You could also use 2 tablespoons chopped Kalamata olives instead of the tapenade. - Add ground chicken to large bowl. Mix in drained spinach, whole cracked egg, crumbled feta, minced garlic, diced onion and dried oregano. Mix well using clean hands. Form into six equal size patties (about ½ cup - 125 mL each). Chill for one hour to prevent sticking on the grill.
- Preheat grill to medium-high. Place burgers on top rack, close lid and grill 15 minutes one side or until browned. Close lid and grill another 7-10 minutes or until a thermometer set in centre of burgers registers 165°F (74°C). Remove from grill.

- Mix all of the ingredients for the turkey burgers, bar the olive oil, together in a large bowl. Season with a generous amount of black pepper and a little salt (you won't need a lot because of the feta). Shape into 4 burgers, the mixture will be quite sticky so cover and chill in the fridge for 15 mins or until needed to firm up a little. At this point the burgers can also be frozen.
- Preheat the grill to its highest setting then brush the burgers on both sides with the olive oil. Transfer the burgers to a non-stick baking tray and cook for 8-10 mins on each side, until cooked through and golden brown.

- If planning to make the tzatziki sauce prepare it ahead of time so the flavors can meld together.
