This is one of my family's favorite recipes for chicken and dumplings, handed down to me from my grandmother. And the leftovers taste great, too!

2 cups all-purpose flour
½ cup shortening
1 egg
½ cup milk
1 whole chicken
2 cubes chicken bouillon
2 cups chopped celery
2 cups chopped carrots
1 small onion, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour and shortening together in a bowl until it resembles cornmeal.
  • Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
  • Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
  • Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

¼ cup butter
2 ribs celery, quartered
1 large carrot, quartered
1 small onion, chopped
1 teaspoon mashed garlic
2 large bay leaves
½ teaspoon dried thyme
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon poultry seasoning
2 pounds bone-in chicken breasts
water to cover
2 tablespoons self-rising flour (such as White Lily®)
2 cups self-rising flour (such as White Lily®)
¼ cup cold shortening
¼ cup chicken broth, slightly chilled

Steps:

  • Melt butter in a stock pot over medium-high heat. Add celery, carrot, onion, garlic, bay leaves, thyme, salt, pepper, and poultry seasoning; cook and stir until flavors combine, about 5 minutes. Push vegetable mixture to the sides and add chicken; cook until browned, 3 to 5 minutes per side.
  • Pour enough water over the chicken to cover by 3 inches; bring to a boil. Stir, scraping the browned bits off of the bottom of the pot. Reduce heat; simmer until chicken is tender, about 1 hour. Transfer chicken and carrots to a serving plate with a large slotted spoon; let cool.
  • Ladle 1/4 cup cooking liquid into a bowl; cool slightly, about 5 minutes. Mix in 2 tablespoons flour. Stir back into the pot.
  • Place 2 cups flour in a large bowl; cut in shortening with 2 knives until mixture forms pea-sized bits. Mix in chilled chicken broth until dough is combined.
  • Turn dough out onto a floured work surface. Knead 5 to 6 times; pat down to 1-inch thickness. Sprinkle lightly with flour; roll out to about 1/8-inch thickness. Cut dough into squares with a sharp knife.
  • Drop squares, in batches, into simmering cooking liquid, moving squares to the side with each addition. Partially cover pot; simmer until dumplings are firm, about 12 minutes. Separate any dumplings that stick together. Remove from heat; keep covered.
  • Bone chicken; cut into bite-sized pieces and return to the pot. Chop carrot; return to the pot. Cool chicken and dumplings, about 30 minutes, before serving.

To Cook Chicken And Make Broth:
Serves: 8 servings
1 whole chicken, thawed and cleaned (remove and discard giblets from cavity)
1/2 cup carrots, celery, and onion (OPTIONAL-to flavor the chicken broth)
Water to completely cover chicken in a large stockpot.
To Make The Dumplings:
1 cup all purpose flour
1 teaspoon salt
2 heaping Tablespoons vegetable shortening
1/2 cup HOT water
1/2 cup plus 2 Tablespoons all purpose flour
To finish soup:
Two large chicken bouillon cubes
1 Tablespoon butter
1/4 cup water mixed with 2 Tablespoons flour
Salt and Pepper, to taste (approx. 1 teaspoon salt, 1/2 teaspoon pepper)

Steps:

  • Put the chicken and the veggies (if using) in a large stockpot. Cover completely with water. Bring to a quick boil, then continue cooking chicken for one hour. When done, remove chicken to large bowl to cool. Strain broth to remove leftover veggies or other particles. Return broth to stockpot. Once chicken is cool, remove skin, then cut chicken into bite sized pieces. (At this point I divide the chicken pieces in half, and freeze half for use in another meal). Add chicken pieces (approx. 2½ cups) back into chicken broth. Heat the chicken and broth back up to boiling. Add bouillon cubes, salt and pepper (to taste). While chicken is coming to a boil, make the dumplings. In a large bowl, using a pastry blender or two knives, cut the shortening and salt into the cup of flour, until shortening is the size of small peas. Add ½ cup HOT water and ½ cup, plus 2 Tablespoons of flour to the mixture. Stir and work the mixture until a soft dough ball forms (firm enough to roll out). Divide dough into 3 equal sized balls, then let the dough rest for 10 minutes. Generously flour a work surface. Roll each dough ball out (one at a time), sprinkling with flour (if necessary) to keep dough from sticking to work surface. Roll out to about the size of a large pie crust (roll out thin). Cut dough into strips about an inch wide using a pizza cutter or knife. Repeat process for remaining dough balls. Drop dumplings a couple at a time into hot boiling chicken/broth mixture until all have been added to pot; add butter, and continue cooking. Make a slurry by mixing ¼ cup water with 2 large Tablespoons flour. Stir well to combine, then add to soup pot, and stir well. (this helps to thicken broth a bit). Cook an additional 10 minutes on high to fully cook dumplings. Taste test broth, and add additional salt and pepper, if desired. Ladle hot soup into bowls, serve, and enjoy (especially with crusty french bread on the side!) Notes If you are pressed for time, you can always start with store bought chicken broth (cook the chicken in water/drain, THEN use broth in pot), and can also use a pre-cooked rotisserie chicken to get the chicken from, BUT I prefer to make it the way I have posted it, as it is far less expensive... but, hey... whatever works, right?

Wonderful old fashioned recipe that was passed down to me by my Grandmother. These dumplings were ALWAYS a treat at holiday time or for a wonderful Sunday dinner after church.

5 cups all-purpose flour
2 eggs (well beaten)
1 teaspoon salt
1/2 cup oil
4 chicken bouillon cubes
4 (16 ounce) cans chicken broth, plus broth from boiled chicken
1 whole chicken (or preferred chicken parts)

Steps:

  • Boil chicken in enough water to cover adding the bouillon cubes when water begins boiling until chicken is fully cooked.
  • After chicken is done remove it from the broth and let cool.
  • Strain chicken broth, add canned broth and bring back to a boil.
  • Mix oil, flour and salt until crumbly, then add eggs and enough water until the dough is stiff enough to roll out.
  • Roll out thin, cut into strips, (I use a pizza cutter for this) and drop into BOILING broth immediately.
  • While dumplings are cooking, debone the chicken and add to dumplings just before dumplings are finished cooking.
  • Add salt and pepper to taste.

2 tablespoons olive oil
3 -4 lbs chicken pieces
1 small onion, chopped
2 celery ribs, thinly sliced
3 1/2 cups water, divided
1 bay leaf
3 chicken bouillon cubes (or I prefer 3 tsp Better Than Bouillon soup base)
1 teaspoon salt
pepper
5 carrots, peeled and thinly sliced
1/3 cup all-purpose flour
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon fresh parsley, chopped
2/3 cup milk
1 large egg
1 tablespoon vegetable oil

Steps:

  • For the chicken: Heat oil in a large Dutch oven or large covered skillet.
  • Add the chicken and brown for 2 minutes on each side.
  • Stir in onion and celery, sauté for a few minutes, and add 3 cups of the water, bay leaf, bouillon, salt and pepper.
  • Bring to a boil, reduce heat and simmer for 30 minutes, covered.
  • Then remove the chicken and add the carrots, cover and simmer until carrots are tender, about 10 minutes.
  • While carrots are cooking, remove the chicken from the bones.
  • Whisk together the 1/3 cup of flour and the remaining 1/2 cup water until smooth.
  • Add flour/water mixture and chicken meat back to the pan, cover and continue to simmer.
  • For the dumplings: Combine flour, baking powder, salt and parsley in a large bowl.
  • Make a well in the center of the dry ingredients and add the milk, egg and oil.
  • Stir quickly to make the batter.
  • For each dumpling, spoon a rounded tbsp of batter into the simmering broth.
  • Cover and simmer for another 13-15 minutes, but DO NOT STIR.
  • Ladle servings into big bowls and eat up!

1 (3 pound) broiler-fryer chicken, with skin removed and cut up
6 plus 1-1/4 cups water
1 tablespoon salt
1 teaspoon pepper
1 cup milk
2 tablespoons of oleo (butter or margarine)
1 cup flour,sifted
6 cups chicken broth (from cooking the chicken)
1 cup water
Black pepper, to taste
Salt, to taste
6 teaspoons baking powder
3 cups flour, sifted
3 tablespoons of chicken fat
1 cup milk
Salt, to taste
1 cup self-rising flour or all-purpose flour
1/3 cup yellow cornmeal
1/2 teaspoon salt
1/4 teaspoon pepper
1 jar sliced dill pickles (hamburger pickles)
4 cups vegetable or canola oil, to fry
1 cup buttermilk
Salt, to taste

Steps:

  • Take the skin from the chicken and put in a pan with 1/4 cup of water and render. Put the chicken in a pot and cover with 6 cups of water. Bring to a boil and cook for 30 minutes. Pull the chicken from the broth and let cool. When the skin has been rendered, strain and cool until the fat has solidified. Bring the broth that is left from cooking the chicken to a light boil and add the milk, oleo, pepper and salt. Whisk in the sifted flour until the broth has thickened. Dice the chicken and add to the white sauce and let simmer. Mix the baking powder, flour, chicken fat, milk and salt in a bowl and mix. Put out onto a floured surface and knead until completely blended. Roll out thin (1/2-inch) and cut into 1 to 2 inch squares. Add to the white sauce and chicken, do not stir until the dough is set (cooked), cover and let cook for 20 minutes before stirring. Check seasoning and serve.
  • Combine flour, cornmeal, salt and pepper in a bowl. Drain the pickles. Heat the canola oil on medium high heat. Dip the pickles in buttermilk and coat with the flour/cornmeal mixture. Drop into the hot oil and fry until golden brown. Transfer to paper napkins to drain. Season with salt and serve.
  • Yield: 2 to 4 servings as a side.

3/4 cup all-purpose flour, divided
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 broiler/fryer chicken (about 3 pounds), cut up
2 tablespoons canola oil
1 large onion, chopped
2 medium carrots, chopped
2 celery ribs, chopped
3 garlic cloves, minced
6 cups chicken stock
1/2 cup white wine or apple cider
2 teaspoons sugar
2 bay leaves
5 whole peppercorns
DUMPLINGS:
1-1/3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2/3 cup 2% milk
1 tablespoon butter, melted
SOUP:
1/2 cup heavy whipping cream
2 teaspoons minced fresh parsley
2 teaspoons minced fresh thyme
Additional salt and pepper to taste

Steps:

  • In a shallow bowl, mix 1/2 cup flour, salt and pepper. Add chicken, 1 piece at a time, and toss to coat; shake off excess. In a 6-qt. stockpot, heat oil over medium-high heat. Brown chicken in batches on all sides; remove from pan., Add onion, carrots and celery to same pan; cook and stir 6-8 minutes or until onion is tender. Add garlic; cook and stir 1 minute longer. Stir in 1/4 cup flour until blended. Gradually add stock, stirring constantly. Stir in wine, sugar, bay leaves and peppercorns. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until chicken juices run clear., For dumplings, in a bowl, whisk flour, baking powder and salt. 1 large chicken (6 pounds)
2 medium carrots, chopped
2 celery ribs, sliced
1 large onion, sliced
4 quarts water
2 tablespoons white vinegar
2 teaspoons salt
DUMPLINGS:
2 cups all-purpose flour
1-1/2 teaspoons salt
1 large egg
1/2 cup reserved chicken broth
1/2 teaspoon pepper

Steps:

  • Place the chicken, carrots, celery and onion in a large Dutch oven or stockpot. Add water, vinegar and salt (adding more water, if necessary, to cover chicken). Bring to a boil. Reduce heat; cover and simmer until meat nearly falls from the bones. Remove chicken from broth; allow to cool. Strain broth, discarding vegetables and seasonings. , Remove meat from bones; discard skin and bones. Cut meat into bite-sized pieces; set aside and keep warm. Set aside 1 cup broth; cool to lukewarm., To make dumplings, combine flour and salt. Make a well in flour; add egg. Gradually stir 1/4 cup reserved broth into egg, picking up flour as you go. Continue until flour is used up, adding additional broth as needed, and dough is consistency of pie dough. 5 boneless skinless chicken breasts
1 family size cream of chicken soup
1 can milk
1 cup water
2 celery stalks, sliced
1 can carrots
2 cans chicken broth
2 packet s powered biscuits

Steps:

  • Put the chicken, cream of chicken soup, milk, water, celery, carrots, and chicken broth in a crock-pot.
  • Cook on low, usually 4-6 hours, till the chicken falls apart.
  • About 30-minutes before you are ready to eat, prepare the biscuits as the package indicates. Spoon drop the biscuits in the soup let them cook for usually 30 min-1 hour. The dumplings will look soggy at first. Once they firm up and look like dumplings, they are done.

Grandma's Chicken & Dumplings (Pre 1917 Recipe) image

Grandma's Chicken and Dumplings. This is a family passed down recipe from pre 1917. We can't figure out how much farther it goes back, but we know atleast to this year. This recipe is simple and delicious. The dumplings are my favorite and have been a very requested dish from all family members and my kids friends. This can be prepared in a crock pot (which I usually do) or on top of the stove. Both ways are just as good, I just think letting it simmer in the crock pot all day makes the broth more flavorful. Plus, it cooks all day then when I get home from work I just de-bone and make the dumplings. Please if you try this let me know how you like it.

1 whole chicken (or cut up I have used both)
1/2 onion, diced (or minced onion which I use)
1/4 cup parsley
water
salt
1 cup enriched flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder (make sure it is not expired)
1/2 cup milk
2 tablespoons shortening (if using melted fat, let it cool before mixing salad oil can be used)

  • Put the chicken in a crock pot and pour water up to the top of the crock pot (or a level where it wont boil over but cover chicken completely) Add onion, parsley and salt. Cover and let cook all day on low without stirring. If you don't stir the chicken is much easier to de-bone.
  • De-bone chicken and move broth to a large stock pot. Cook on high until boiling. (making the dumplings in the meantime).
  • Add de-boned chicken to broth then add dumplings one at a time while broth is boiling so they don't clump together until all are added. The broth will froth a little but it will go back down. Stir occasionally if needed.
  • (I add 1 tbls corn starch mixed with 1/4 cup cold water to thicken when needed. It does not always require it. Depending on how much broth you have. I like it a little creamy instead of watery.)
  • Dumplings:.
  • Mix all ingredients very well. (let dough rest about 1 min before rolling out) Roll out on floured surface to desired thickness. I do it kinda thin to get more dumplings. They puff up as they cook. I use a pizza cutter and cut about 1 inch strips then the same the opposite direction. Kinda like a checkerboard pattern.

Kid approved chicken & dumplings made in the crockpot, with easy ingredients to throw into the crockpot in the morning before work. My son says this is as good as his Grandma's, so it must be pretty good! Note: Prep time does not include cooking the chicken...use already prepared chicken.

2 cups chopped cooked chicken
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 (10 3/4 ounce) can cream of chicken soup, undiluted
2 (10 3/4 ounce) soup cans water
4 teaspoons all-purpose flour
2 teaspoons chicken bouillon granules
1/2 teaspoon black pepper
1 (8 count) package refrigerated buttermilk biscuits

Steps:

  • Mix all ingredients except biscuits in the Crockpot.
  • Cut biscuits into quarters and gently stir into mixture.
  • Cover; cook on low for 4 to 6 hours.

Better Than Granny's and Easy Chicken and Dumplings image

When my Granny died, I missed her and her chicken and dumplings, because NO one made them like Granny. I tried several recipes but they were either very complicated or not very good. Then I found this one and even my Yankee husband who doesn't like dumplings tried to hide the leftovers to take to work the next day. We LOVE this recipe. They are actually better than Granny's. Even Mama agrees. (Sorry, Granny!)

2 cups rotisserie-cooked chicken (cooked, pulled off bones)
4 (14 ounce) cans chicken broth
2 (10 1/2 ounce) cans cream of celery soup
1/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1 (10 count) can buttermilk biscuits

Steps:

  • In large pot, bring chicken, broth, soup, pepper and poultry seasoning to a boil.
  • Then reduce heat and simmer 15 minutes.
  • In the meantime, lightly flour a piece of waxed paper and a rolling pin (or a round drinking glass works). Also lay out a clean piece of waxed paper to put on after rolling.
  • Take two biscuits and roll out in circle to 1/8 inch thickness. Lay them on the other piece of waxed paper.
  • Repeat with all biscuits. Then take a knife and slice the circles into one inch strips.
  • Bring pot back to a low boil. Pick up each strip and pull into 1 1/2 to 2 inch pieces and drop into broth on low boil.
  • Stir gently to prevent them sticking together.
  • Simmer for ten minutes.
