Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

1 to 1.5 pounds cooked chicken breasts, (chopped or shredded; you can also use rotisserie chicken.)
2 tablespoons olive oil
8 ounces sliced baby portobello mushrooms
4 cups small broccoli florets
3 cloves garlic, (minced)
Salt and freshly ground pepper, (to taste)
½ teaspoon dried basil
½ teaspoon dried oregano
1 cup + 1 tablespoon low sodium chicken broth
2 teaspoons cornstarch
½ cup heavy whipping cream
½ teaspoon dried thyme
Salt and freshly ground pepper, (to taste)
8 ounces shredded mozzarella cheese, (divided)
¼ cup grated parmesan cheese
red pepper flakes, (for garnish, optional)
grated parmesan cheese, (for garnish, optional)
Chopped fresh parsley, (for garnish, optional)

Steps:

  • Preheat oven to 350˚F. Lightly grease a 9x13 baking dish with cooking spray; set aside.
  • Heat olive oil in a large 12-inch skillet set over medium-high heat. Add mushrooms to the hot oil and cook for 2 minutes.
  • Stir in broccoli and garlic; season with salt, pepper, basil, and oregano, and continue to cook for 3 more minutes, or until just beginning to soften.
  • Shred or chop cooked chicken and arrange in baking dish.
  • Remove mushroom and broccoli mixture from pan and layer over the chicken. Set aside.
  • Set skillet back over medium-high heat. In a small mixing bowl combine 1 tablespoon chicken broth with 2 teaspoons cornstarch; whisk until pasty. Add 1 cup chicken broth to the hot skillet; to the skillet, whisk in the cornstarch paste, heavy cream, thyme, salt, pepper, half of shredded mozzarella, and parmesan cheese.
  • Remove from heat and pour sauce over chicken mixture inside the baking dish; using a spoon, stir and mix until thoroughly combined. Sprinkle top with remaining mozzarella cheese.
  • Cover baking dish with foil and bake for 15 minutes. Remove foil and continue to bake for 9 to 10 more minutes, or until cheese is melted and light golden brown on top.
  • Remove from oven and let stand 5 minutes. Garnish with red pepper flakes, grated parmesan cheese, and parsley. Serve.

6 Manor Farm chicken breast fillets
600 ml chicken stock
350 ml cream
100 g roux (50g butter, 50g flour cooked for 2 - 3 minutes)
1 large head of broccoli, divided into florets
15 g butter
50 g mature cheddar cheese
130 g breadcrumbs

Steps:

  • Place the chicken if using raw chicken breast fillets into a saucepan with chicken stock, bring slowly to boil, simmer for approx 20 minutes.
  • Remove cooked chicken breasts from cooking liquid; add water to cooking liquid to make up to 600ml again.
  • Add cream, bring to boil and whisk in the roux to form a think sauce. Cook for 2-3 minutes over medium heat.
  • Chop the cooked chicken into chunks or strips.
  • Cook the broccoli in water until tender, drain. Stir in the diced chicken and broccoli into the sauce, season to taste.
  • Pour the mixture into an ovenproof dish.
  • Melt butter and add breadcrumb and cheese, spread over chicken and sauce and cook in the oven for 180oC/350oF/Gas Mark 4 for 20 minutes until bubbling. Serve with jacket potatoes.

4 cups penne pasta (uncooked)
6 cups broccoli (cut into bite sized pieces)
1 tablespoon oil
3 boneless (skinless chicken breasts, cut in bite sized pieces)
1 medium onion (chopped)
½ teaspoon salt
½ teaspoon pepper
3 cups mushrooms (quartered)
2 garlic cloves (minced)
2 jars of alfredo sauce (15 oz. each)
¼ cup chicken broth
1 ½ cups mozzarella cheese (shredded and divided)
½ cup parmesan cheese (finely shredded)

Steps:

  • Preheat oven to 375℉. Spray 9x13 pan with non-stick cooking spray.
  • Cook the penne pasta in a large pot of boiling water for 9 minutes. Add broccoli to the pot and increase the heat to return to a boil. Cook for one more minute. Drain noodles and broccoli in a colander and run under cold water to stop the cooking process. Nothing is worse than mushy broccoli!
  • Heat the oil in a large skillet, and add the chicken,onion, salt and pepper. Cook for 5 minutes on medium heat and then add the mushrooms and garlic and cook for 4 more minutes. Remove from heat and stir in the alfredo sauce and chicken broth. Add the penne pasta, broccoli, ½ cup mozzarella cheese and stir gently. Pour into prepared pan.
  • Sprinkle with remaining 1 cup mozzarella cheese and parmesan cheese.
  • Cook, uncovered, for 20-25 minutes.
  • Serve warm and enjoy!

1 1/2 cups dry small shaped pasta
3 cups fresh broccoli florets
2 Tbsp. olive oil
1 lb. chicken tenders, cut into bite size pieces
1 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
3/4 - 1 cup chicken broth
4 oz. cream cheese, cut into cubes
1 1/2 cups shredded mozzarella cheese, divided
2 Tbsp. shredded Parmesan cheese
Kosher salt and fresh black pepper

Steps:

  • Cook pasta in salted water one minute shy of al dente according to package instructions. Last 2 minutes of cooking, stir in broccoli florets. Drain and set aside.
  • In a bowl, toss chicken with paprika, garlic powder, onion powder, and salt and pepper. Heat olive oil in a large sauté pan over medium-high heat and cook chicken for few minutes until no longer pink on the outside.
  • Add chicken broth and let it come to a simmer. Once simmering, add cream cheese and stir until melted. It's okay to have small speckles of cream cheese. It will incorporate when baked. Stir in 3/4 cup mozzarella until melted. The sauce will slightly thicken.
  • Turn off heat and gently fold in cooked pasta and broccoli. Transfer to a baking dish, cover with foil, and bake in a preheated 375 degree F oven for 15 minutes.
  • Top with the remaining mozzarella cheese and Parmesan cheese. Bake, uncovered, for about 3 minutes or until cheese is melted. Let rest for 5 minutes before serving.

Steps:

  • Heat the oven to 375, grease a 9 x 9 casserole dish(I use an avocado spray) and set aside.
  • Start by prepping your broccoli. Put a large saucepan with about 2 inches of water over medium-high heat. Once the water is at a rolling boil, add in the broccoli florets. Let them steam for about 2 minutes or until they are fork tender. Drain the water, return the broccoli to the sauce pan and set aside.
  • In a large mixing bowl combine the softened cream cheese with the mayo and then stir in the seasonings. Add the cheddar, then the cooked and chopped chicken. Finally, stir in the steamed broccoli and blend it all together.
  • Pour the chicken and broccoli mixture into the prepared casserole dish and sprinkle with the last 1/4 cup of grated cheese.

1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt

24 ounces fresh broccoli florets
16 ounces wide egg noodles (cooked and drained)

Steps:

  • Preheat the oven to 350°F. Spray a 9x13 casserole dish with non-stick cooking spray and set aside.
  • In a large stockpot or Dutch oven, heat butter over medium until melted.
  • Add onion powder, garlic powder, salt, pepper, and bouillon to the butter and saute for 1 to 2 minutes.
  • Whisk in water and the half and half cream.
  • Dissolve 4 tablespoons cornstarch in 4 tablespoons of water to make a slurry, and then whisk this slurry into the filling mixture in the pot.
  • Whisk and cook over medium heat until the mixture comes to a simmer and begins to thicken.
  • Stir in broccoli florets and cook 1 to 2 minutes longer.
  • Spread cooked noodles and diced chicken evenly in the prepared casserole dish.
  • Pour the broccoli/sauce mixture over the top and stir to combine everything evenly.
  • Bake, covered with aluminum foil, for 30 minutes or until broccoli is fork-tender. Remove from the oven.
  • Stir the casserole to redistribute sauce. Sprinkle with cheese. Place foil loosely over the casserole and leave to set for 5 minutes. For a browned cheese, you can return the casserole, uncovered, to the oven for 5 to 10 minutes instead of setting it for 5 minutes.

  • In a jug, combine soup, cream and mayonnaise. Pour over broccoli.
  • To make the topping: In a bowl, combine all ingredients.
  • Sprinkle topping evenly over casserole. Bake for 45 minutes, until chicken is cooked through and topping is crisp and golden. Sprinkle with parsley to serve.

EASY CHICKEN BROCCOLI CASSEROLE

Most of the chicken broccoli casseroles I've seen here all have mayonaisse. Ick! This recipe uses a mixture of three different soups instead for it's creamy texture. The original recipe calls for cooked chicken breasts and cooked broccoli. I don't have time to cook things before I cook them! So I've always used uncooked chicken and frozen uncooked broccoli. Seems fine to me! :) Cooking time doesn't reflect pre-cooking of the chicken or broccoli... I can't stand cheddar cheese so I substitute mozzarella because that's the only cheese I can eat. I don't like mushrooms either, so I never put them in. Feel free to experiment!

  • Preheat oven to 375°F with oven rack 6 to 8 inches from heat. Cook pasta in a large stockpot or Dutch oven according to package directions, adding broccoli for the last 2 minutes of cook time. Transfer pasta and broccoli to a colander, and drain well.
  • Add oil to the same stockpot, and heat over medium-high. Sprinkle chicken with pepper and 1 1/2 teaspoons of the salt. 350g pasta shells or quills
200g broccoli, cut into very small florets and the stems thinly sliced
2 tbsp olive oil
350g boneless, skinless chicken breasts, thinly sliced
175g chestnut mushrooms, quartered
4 tbsp sundried tomato paste
80g soft cheese with garlic and herbs (such as Boursin)
284ml carton single cream
bunch of spring onions, finely sliced
85g mature cheddar, grated
1 garlic clove, finely chopped
50g flaked almonds

Steps:

  • Heat the oven to 190C/ fan170C/ gas 5. Bring a large pan of salted water to the boil. Throw in 350g pasta shells or quills, stir well and return to the boil.
  • Cook for 6 minutes, then add 200g broccoli, cut into very small florets and stems thinly sliced, and cook for 5-6 minutes more until the pasta is just cooked. Drain well, then return to the pan.
  • Heat 2 tbsp olive oil in a wide pan, add 350g thinly sliced boneless, skinless chicken breasts and fry until lightly browned.
  • Tip in 175g quartered chestnut mushrooms and stir fry for 1 minute, then stir in 4 tbsp sundried tomato paste, 80g soft cheese with garlic and herbs and a 284ml carton single cream.
  • Gently simmer, stirring, until the cheese has melted to thicken the sauce. Season with salt and pepper.
  • Pour the sauce over the pasta, stirring gently until coated, then tip into a shallow ovenproof dish (about 1.7 litre capacity) and level the top.
  • Mix a bunch of finely sliced spring onions, 85g grated mature cheddar, 1 finely chopped garlic clove and 50g flaked almonds for the topping and sprinkle over the pasta. Bake for 20 minutes until golden.

Steps:

  • Cook the chicken breasts for 20 minutes in a deep sided large casserole at 350F or Gas 4
  • While chicken is part cooking mix throughly all the sauce ingredients
  • When the chicken has been cooking for 20 minutes arrange the frozen brocolli around the chicken in the casserole.
  • Pour the sauce evenly over the chicken breasts and brocolli and sprinkle with the grated cheese.
  • Place back into the oven for a further 40 minutes or until golden brown. Enjoy with baby new potatoes and peas and carrotts.

1/2 cup mayonnaise
1/4 teaspoon curry powder
1/2 teaspoon lemon juice
0.5 (10 ounce) package frozen chopped broccoli (cooked)

Steps:

  • Grease casserole, mix soup, lemon juice, mayonnaise well together.
  • Cook broccoli and drain it very good. Add chicken and broccoli to mixture. Blend until well coated. Place in casserole. Bake at 400 degrees for 45 minutes.
