Creamy Chicken and Beef image

Bacon and canned cream of Mushroom soup dress up tender chicken in Jane Thocher's recipe. "I relied on this dish often when our children lived at home," recalls the Hart, Michigan reader. "Since it cooked while I was at work, the only thing left to do was prepare noodles and fix a salad."

6 bacon strips
1 package (2-1/2 ounces) thinly sliced dried beef
6 boneless skinless chicken breast halves
1/4 cup all-purpose flour
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup sour cream
Hot cooked noodles

Steps:

  • In a large skillet, partially cook bacon over medium heat. Drain on paper towels. Place beef in a greased 3-qt. slow cooker. Fold chicken pieces in half and wrap a bacon strip around each; place over the beef. , Combine the flour, soup and sour cream until blended; spread over chicken. Cover and cook on low until chicken is tender, 8-9 hours. Serve over noodles.

Traditional meatloaf with chicken and beef. Chicken has a better texture than turkey in this recipe. Comfort food at it's best!

Number Of Ingredients 10

1 lb. ground white meat Chicken Breast
1 lb. Ground Beef 85/15
2 cups fresh bread crumbs (approx 4 slices)
1 Onion, chopped fine
2 Egg, lightly scrambled
2 Tbsp. Lea & Perrins Worcestershire Sauce
1.5 tsp. Coleman's Mustard Powder
1 - 1.5 tsp. Salt
.5 tsp. ground black pepper
1/4 cup Milk

Steps:

  • Preheat oven to 350 F. Grind bread in food processor to make crumbs. Cut up onion (or chop in food processor). Combine all ingredients. Shape into a loaf and place in 8 x 8 pan. (Or place in bread loaf pan, or shape into 2 smaller loaves, or roll into balls and place in muffin tin.)
  • For one large loaf, bake for 45 minutes until done.
  • For two small, Bake 35 minutes.
  • For muffin sized, bake at 400 F for 25 minutes.

These are so quick and tasty. You can use strips of boneless chicken breast instead of the beef. Feel free to double the marinade. The flavor is so great for such a short marination time. You can can do them up ahead of time and have the meat sit longer if you wish.

3/4 lb top sirloin steak
2 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely minced
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon hot pepper flakes
1/2 teaspoon black pepper
1/2 teaspoon salt
8 flour tortillas (8 inch/20 cm)
1 -2 onion, we usually use approx. 1-2 depending on size (however much you like,enough to make a good mix with the peppers)
2 small sweet peppers, of your choice (green, red, or yellow)
salsa
sour cream
shredded cheese
chopped tomato

Steps:

  • Slice steak into thin strips.
  • In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt.
  • Add beef strips and stir to coat, set aside.
  • Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.
  • Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
  • In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
  • Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
  • Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
  • Return onions and peppers to skillet; stir for about one minute.
  • To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.

PAELLA (BEEF, CHICKEN AND CHORIZO)

Had a similar dish at this amazing restaurant in Saint Augustine, Florida and had to recreate for home! The restaurant had the traditional paella and a land-lover's version. I'm not a lover of seafood, so here goes... As a note: Pimento, olives, a little cayenne, shrimp (I can't stand the buggers but have added them for my husband), and sliced green onions have all made lovely additions at one time or another.

1 lb boneless skinless chicken tenderloins, cut into 1 inch cubes
1/2 lb chorizo sausage, sliced diagonal
1 lb skirt steak, cut into strips
1 red bell pepper, diced
1/2 cup frozen peas
2 tablespoons minced garlic (fresh or jarred)
2 1/2 cups medium grain rice
4 cups chicken stock
1 medium red onion, diced
1/4 teaspoon saffron
1/4 teaspoon turmeric
salt, to taste
pepper, to taste
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Brown chicken with salt and pepper in separate skillet over med-high heat until cooked through (about 10 minutes). Set aside and keep warm.
  • Brown skirt steak with salt and pepper in separate skillet over med-high heat until medium rare (about 5 minutes). Set aside and keep warm.
  • Using paella pan (enamel/cast iron/dutch) with olive oil over med-high heat sauté onions, garlic, bell pepper, and chorizo until chorizo is browned (about 10 minutes).
  • Add rice, stock, turmeric, saffron and bring to a boil.
  • Add the previously set aside proteins and frozen peas, stir all ingredients combined. Immediately place into preheated 400 degree oven for 20-30 minutes (or until liquid has evaporated).
  • Serve immediately.

FRENCH CHICKEN AND BEEF SOUP

I don't know if this is really French, but my cookbook calls it that. In any case, it's a really tasty soup to be enjoyed in the cold autumn evenings. Use beef ribs or other meaty part on the bone.

1 whole chicken
1 1/2 kg beef ribs
2 1/2 liters water
2 beef bouillon cubes
2 bay leaves
2 teaspoons salt
10 white peppercorns
1 onion, roughly chopped
6 sprigs parsley
2 parsnips
50 g celery root
2 leeks, chopped to rings

Steps:

  • Cut most of the meat off the beef bones. Put the bones in a large (and I mean huge) pan, put the meat on top.
  • Boil the water, and pour it on the meat. Put in stock cubes, seasoning, onion and parsley. Bring to boil.
  • Simmer for two hours, remove the foam when needed.
  • Cut the chicken in 8-10 pieces, and put them into the pan. Let simmer for about an hour.
  • Cut the parsnips and the celery root to small pieces, and put them in the pan. Simmer for 10 minutes, then put in the leeks. Simmer another for 10 minutes.
  • Take beef and chicken bones out together with the meat. Cut the meat into small pieces and return to pan.
  • Serve with bread.
