Steps:
- Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
- Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
- Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

CHICKEN ALFREDO
Creamy, luscious, cosy chicken alfredo for dinner please! Pasta made perfect has never been easier or more delicious. All the family will adore this recipe and it might become an all-time favourite.

- Put half the mushrooms in a food processor and pulse until finely chopped. Thickly slice the remaining mushrooms.
- Heat the oil in a large frying pan and gently fry the shallots and pancetta for 5 minutes.
- Add the garlic and all the mushrooms and stir-fry for another 2-3 minutes.
- Turn up the heat and add the chicken. Fry on a medium-high heat for 5-6 minutes, or until the chicken is almost cooked through.
- Add the mustard, then stir in the stock. Simmer and reduce for 1-2 minutes, then stir in the crème fraîche. Reduce the heat and simmer for 10 minutes, or until the chicken is cooked through and the sauce has reduced.
- Meanwhile, bring a large saucepan of lightly salted water to the boil. Add the pasta and cook according to the pack instructions, then drain.
- Taste and season the sauce, then stir in the lemon zest and juice and tarragon.
- Stir the drained pasta into the sauce. Season, garnish with extra chopped tarragon (if using) and serve immediately.
CHICKEN FETTUCCINE ALFREDO
Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

- Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
- Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
- Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
- Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
- Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.
CHICKEN ALFREDO

- Put the olive oil, Parmesan, pine nuts, oregano, garlic, basil, mint, parsley and some salt and pepper in a blender and puree. Put the chicken breasts in a resealable plastic bag, pour in the marinade and seal. Refrigerate for 30 minutes to several hours, the longer the better.
- Preheat a grill pan over medium-high heat and brush with oil. Remove the breasts from the marinade and grill until cooked through with nice char marks, about 4 minutes a side. Slice the chicken and serve over Fettuccine Alfredo. Garnish with more basil.
- Bring a pot of water to a boil and cook the pasta according to the package directions.
- Meanwhile, in a saucepan or skillet over low heat, add the cream and butter and cook until the butter melts and the mixture is warm. Season with salt and pepper.
- Put half of the Parmesan into a large serving bowl. Pour the warm butter/cream mixture over the top.
- Drain the pasta (reserving a little of the cooking water) and immediately pour it into the bowl. Toss a couple of times, then sprinkle in the other half of the Parmesan. Toss to combine, thinning with the reserved pasta water if necessary.
CHICKEN ALFREDO SUPREME
I thawed some thighs and then realized that thighs seem to be the neglected chicken part in recipes. I decided to make fettucine alfredo and throw caution to the wind and put thighs in it. The results were very tasty. I didn't add all the ingredients I anticipated because I feared there would not be enough sauce, but there was so might I suggest sweet peas and mushrooms in this.

- heat skillet over med hi heat with a tablespoon of butter.
- slice chicken thighs into strips and add to skillet, season and cook until done.
- remove chicken to a large serving bowl and cover.
- add 2 T butter to skillet and saute juliened carrots, then add juliened pepper and chopped onion.
- when tender place ontop of chicken in the bowl add parm cheese.
- prepare noodles according to package strain and put on top of chicken and veggies.
- add sauce and mix well
- I would add peas and mushrooms to this or other variations just to make it different.

- Heat oven to 350 degrees F.
- Saute chicken in butter until lightly browned.
- Place chicken in greased 8x8 baking dish.
- In skillet, saute mushrooms until lightly browned; add sour cream and soup.
- Cook and stir for 1 minute, scraping bits from bottom of pan.
- Add garlic salt and paprika.
- Pour mixture over chicken.
- Bake for 30-35 minutes, until juices run clear.

- Heat half the oil and butter in a large non-stick frying pan. Add the onion and a pinch of salt and fry for 10-15 mins or until golden brown and caramelised. Add the bacon, turn up the heat and cook for 5 mins or until golden brown. Add the garlic and cook for 1 min more. Scrape the mixture into a bowl and set aside.
- Heat the remaining oil and butter in the same pan over a medium-high heat. Season the chicken skin and fry, skin-side down, for 8-10 mins or until deep golden brown and crisp. Flip over and fry for 5 mins on the other side.
- Add the onion and bacon mixture back to the pan. Stir through the flour and cook for 2 mins. Pour in the wine, bring to the boil and simmer for a few minutes.
- Stir through the cream and mustard and simmer over a low heat, uncovered, for 5 mins with the chicken skin-side up. Season to taste. Scatter with parsley, if you like, and serve with mashed potatoes and greens.
