CHICKEN ADOBO

Chicken Adobo image

Provided by Giada De Laurentiis

Time 2h57m

Yield 4 servings

Number Of Ingredients 13

1 cup white wine vinegar
1 cup soy sauce
1/2 cup light brown sugar
4 cloves garlic, crushed
3/4 teaspoon crushed red pepper flakes
2 dried bay leaves
12 chicken drumsticks
2 cups low-sodium chicken broth
3 tablespoons arrowroot
2 tablespoons fresh lime juice (from 2 large limes)
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley or cilantro
Lime wedges

Steps:

  • For the marinade: In a medium bowl, combine the vinegar, soy sauce, sugar, garlic, red pepper flakes, and bay leaves. Whisk until the sugar has dissolved.
  • Arrange the chicken in a single layer in a 9-by-13-by-2-inch glass baking dish. Pour the marinade over the chicken and refrigerate for 2 hours, turning the chicken over halfway through.
  • Place the chicken and marinade in a large, high-sided skillet or Dutch oven and add the chicken broth. Bring the liquid to a boil over medium-high heat. Reduce the heat to a simmer and cook for 45 to 50 minutes, turning the chicken every 20 minutes, until cooked through and a meat thermometer inserted into the thickest part of the meat registers 165 degrees F. Remove the chicken from the liquid and arrange on a serving platter. Discard the bay leaves and garlic cloves. Whisk the arrowroot and lime juice into the liquid and bring the mixture to a boil. Cook until the mixture thickens, about 2 minutes. Season with salt and pepper, to taste. Pour the sauce over the chicken or serve alongside as a dipping sauce. Sprinkle with chopped parsley or cilantro, if using, and garnish with lime wedges.

CHICKEN ENCHILADAS ADOBO

Chicken Enchiladas Adobo image

Chicken Enchiladas Adobo

Provided by BHG Test Kitchen

Time 3h35m

Number Of Ingredients 18

1 14.5 ounce can diced fire-roasted tomatoes, undrained
0.75 cup water
0.5 cup chopped sweet onion (1 medium)
1 canned chipotle pepper in adobo sauce
1 tablespoon canned adobo sauce (optional)
1 tablespoon snipped fresh cilantro
1 teaspoon ground cumin
0.5 teaspoon chili powder
0.5 teaspoon kosher salt or 1/4 teaspoon regular salt
1 pound skinless, boneless chicken breast halves or thighs, cut into bite-size strips
1 tablespoon vegetable oil
0.5 cup corn and black bean salsa
0.5 cup sour cream
0.5 teaspoon finely shredded lime peel
8 multigrain or whole wheat flour tortillas
0.75 cup shredded Chihuahua cheese or Monterey Jack cheese (3 ounces)
0.5 cup sliced green onions (4)
1 2.25 ounce can sliced pitted ripe olives, drained

Steps:

  • Lightly grease a 3-quart rectangular baking dish; set aside. For sauce, in medium saucepan combine tomatoes, the water, sweet onion, chipotle pepper, adobo sauce (if desired), cilantro, cumin, chili powder, and half of the salt. Bring to boiling; reduce heat. Simmer, uncovered, for 15 minutes; cool slightly. Transfer to a blender or food processor. Cover and blend or process until smooth.
  • For filling, in a large skillet cook and stir chicken in hot oil over medium-high heat until no longer pink. Drain off fat. Stir in salsa, sour cream, lime peel, and the remaining salt.
  • To assemble enchiladas, spread 1/2 cup of the sauce in the bottom of the prepared baking dish. Spoon about 3 tablespoons of the filling onto each tortilla near an edge; roll up tortilla. Place enchiladas, seam sides down, on top of sauce in dish. (To serve today, spoon the remaining sauce over enchiladas. Cover baking dish with foil. Omit Steps 4 and 5. Continue as directed in Step 6.)
  • Cover baking dish with foil. Transfer the remaining sauce to an airtight container; cover. Chill enchiladas and the remaining sauce for 2 to 24 hours.
  • To serve, let enchiladas and the remaining sauce stand at room temperature for 30 minutes. Spoon the remaining sauce over enchiladas. Re-cover baking dish with foil.
  • Preheat oven to 375°F. Bake for 15 minutes. Sprinkle with cheese. Bake, uncovered, for 10 to 15 minutes more or until heated through. Sprinkle with green onions and olives.

FILIPINO-STYLE CHICKEN ADOBO RECIPE

Filipino-Style Chicken Adobo Recipe image

Chicken adobo is a classic Filipino dish that's as savory as it is bright with acid, and it goes perfectly with a large platter of garlic fried rice.

Provided by Sho Spaeth

Categories     Mains     Quick Dinners

Time 50m

Yield 4

Number Of Ingredients 10

1 tablespoon (15ml) canola oil or other neutral oil
4 bone-in, skin-on chicken legs, separated into thighs and drumsticks (about 2 1/2 pounds; 1.15kg)
Kosher salt
8 garlic cloves, thinly sliced
2 whole fresh bay leaves (or 3 whole dried bay leaves)
1 1/2 teaspoons whole black peppercorns
1 1/4 cups (300ml) water
1 cup (240ml) soy sauce
1 cup (240ml) rice vinegar (see note)
Steamed white rice or garlic fried rice , for serving

Steps:

  • In a heavy-bottomed pot or Dutch oven, heat oil over medium heat until shimmering. Blot chicken dry with paper towels, then season lightly all over with salt.
  • To Serve : The chicken is best served after sitting overnight in the refrigerator (see notes), but it can also be served immediately, with steamed white rice or (preferably) garlic fried rice. The chicken pieces can also be briefly broiled before serving.
  • To Broil Chicken Adobo: Adjust oven rack to 6 inches below broiler element and preheat broiler to high. Transfer chicken pieces to a paper towel-lined rimmed baking sheet and blot surface with more paper towels to remove as much moisture as possible; discard paper towels. Arrange chicken skin side up on the baking sheet and broil until chicken skin is crispy and lightly charred, about 2 minutes (keep an eye on the chicken to ensure it does not burn). Serve immediately with steamed white rice or (preferably) garlic fried rice, passing adobo sauce at the table.

  • In a heavy Dutch oven or pot, mix the soy sauce, water, honey, brown sugar, ginger, and garlic together. Nestle the chicken thighs in the sauce, skin side up, submerging the meat as much as possible. Bring the mixture to a boil, add the Maui onion wedges and green onion pieces and turn the heat to medium-low. Cover the pot and simmer for 30 minutes. Using a pair of kitchen tongs, gently turn all the chicken pieces over. Cover the pot again and simmer for another 30 minutes. Check the tenderness of the meat with a fork; if you can easily insert the fork into the meat, the chicken is done. Remove the cooked thighs from the sauce, reserving it, and place them on a rimmed baking sheet.
  • In a small bowl, whisk the cornstarch with ¼ cup of the sauce until smooth, then add the cornstarch mixture back to the pot with the remaining sauce and cook over medium-low for 4 to 5 minutes, until the sauce has thickened.
  • Broil the chicken thighs for a minute or two, watching carefully to make sure you do not burn the skin. The goal is to just quickly brown the skin.
