CREAMED SPINACH CASSEROLE

Steps:
- Preheat the oven to 400 degrees F.
- Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg and cayenne and bring to a simmer. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Mix in the spinach, 1/2 teaspoon salt and 1/4 cup of the Parmesan. Add the cream cheese and stir until melted. Season with salt and pepper to taste.
- Transfer the mixture to a 1 1/2- to 2-quart baking dish and sprinkle with the panko and remaining 1/4 cup Parmesan. Bake until bubbling and light golden on top, about 15 minutes.

Steamed Chaya - Spinach Tree is so delicious, made with chopped chaya cooked in onions, garlic, tomatoes until tender. Serve with scrambled tofu and baked plantains for a delicious breakfast or brunch.

- Remove chaya leaves from stems of the plant, rinse under cold water.
- Cover chaya leaves with cold water in a medium saucepan. Bring the leaves to a boil on medium-high, reduce to simmer for 20 minutes. Discard water and roughly chop the boiled leaves.
- Heat oil in a saucepan on medium high, add onion, and cook until soft, about 2 minutes. Stir in garlic and tomatoes and cook until fragrant, about one minute.
- Stir in chaya leaves, 1/4 cup vegetable broth or 1/4 of vegetable bouillon plus 1/4 cup water. Cover saucepan and cook for about 5 minutes or until chaya is tender. Season with salt to taste.

- In a large nonstick skillet, cook and stir first 6 ingredients until spinach is wilted. Remove from heat; stir in cheeses., Top half of each tortilla with spinach mixture; fold other half over filling. Place on a griddle coated with cooking spray; cook over medium heat until golden brown, 1-2 minutes per side. Cut quesadillas in half; if desired, serve with sour cream.

- Preheat oven to 350 degrees F.
- Butter a shallow 1-quart baking dish.
- In a large bowl whisk half-and-half, eggs, 1 teaspoon salt, 1/8 teaspoon pepper, and nutmeg together; stir in 1 +1/2 cups of the cheese then the spinach. Spread evenly in prepared baking dish, and top with remaining 1/2 cup cheese.
- Bake until set in the middle and top is golden brown, 30 to 35 minutes.

GREEN CHILE SPINACH QUICHE
You can add other meats or veggies to suite your taste, and this quiche can be baked with or without pie shells. My whole family (ages 65 to 1) love this quiche! Sometimes I add a small package of chopped ham to the recipe.

- Preheat an oven to 400 degrees F (200 degrees C). Whisk the flour, baking powder, and salt together in a small bowl; set aside.
- Beat the eggs in a mixing bowl until smooth. Whisk in the flour mixture until no lumps remain. Stir in the Colby-Monterey Jack cheese, cottage cheese, spinach, green chiles, and melted butter until evenly blended. Divide the mixture between the pie crusts.
- Bake the quiches in the preheated oven for 15 minutes at 400 degrees F (200 degrees C), then reduce the temperature to 350 degrees F (175 degrees C). Continue baking until the quiches are lightly browned and a knife inserted into the center comes out clean, 35 to 40 minutes.

CHICASQUIL (TREE SPINACH) CASSEROLE WITH NOODLES (OR CHAYA)
This is from a garden forum about the Chicasquil (Cnidoscolus acontifolius) which is a form of tree spinach. It is an evergreen vegetable that grows like a bush. I learned of this plant recently from Guachipelin, Chef #2245414. I went to one of my favorite nurseries for something else and while the fellow was driving me around, he pointed this out as Tree Spinach. It wasn't until I got home that I realized it was on my want list for the yard. I am very lucky as this one does NOT have the stinging hairs that some have.

Steps:
- Sautee onions and garlic, then add and brown meat. Set on warmer. Cut Chicasquil leaves into about 1" pieces or chop, discarding the stems and heavy veins, then boil *15* minutes, stirring frequently. Drain and reserve water.
- Cook noodles in Chaya water and drain. Add tomato, chilies and Chaya leaves to onion/meat mixture - heat and simmer 10 minutes. Stir in egg noodles and simmer 3 minutes more. Serves 4.
- NOTE: Please observe 15 minute boiling time. This allows all the Hydrocyanic Acid to be driven off as steam. A 1 minute cooking time, seen elsewhere in this blog, is insufficient to accomplish this - undercooked Chicasquil or Chaya may cause nausea and vomiting.
