This trail mix is chewy not crispy like granola. It sticks to your ribs! You can tailor the fruit mix to your liking. The condensed milk is the key to the chewiness (without being brittle). This takes five minutes to stir together and bake!

2 cups granola cereal
3/4 cup coarsely chopped pecans
3/4 cup coarsely chopped walnuts
1 (3 1/2 ounce) can flaked coconut (1 1/2 cups)
1/2 cup sunflower seeds
1/2 cup wheat germ
1 teaspoon ground cinnamon
1 teaspoon salt
1 (14 ounce) can sweetened condensed milk
1/4 cup vegetable oil
1 cup banana chips
1/2 cup dark raisin
1/2 cup golden raisin
1/2 cup dried cherries
1/2 cup dried apricot, diced
1 cup M&M'

Steps:

  • In large mixing bowl, combine all ingredients except dried fruit (banana chips and raisins, cherries and apricots) and m&m's.
  • Mix well.
  • Spread evenly in an aluminum foil-lined baking sheet-spray foil with Pam (makes for easy clean-up).
  • Bake at 300 degrees for 55 to 60 minutes, stirring every 15 minutes (I like to leave some large clumps and break apart when cool).
  • Note: Check at 40 minutes. Sometimes it's done. It will harden when cooled.
  • Remove from oven. I like to immediately remove trail mix onto another pan or cookie sheet to cool.
  • When warm, stir in banana chips, raisins, cherries and apricots.
  • Cool thoroughly and add chocolate candies.
  • Store tightly covered at room temperature.

This is VERY good! I must tell you, tho, the original recipe calls for 4 sticks of butter in the sauce! To be fair, the episode she made this on WAS called "Everything's Better With Butter." LOL I read thru many reviews on the other site and almost all cut the butter back, some even to 1 and 1/4 sticks with no problems. I used 2 sticks of butter and also used bacon instead of pancetta, out of personal preference. Dried or fresh herbs, such as tarragon, thyme, basil, oregano, even an Italian seasoning can be used to season while sauteeing the chicken. I also use the artichokes packed in water, not the oil. The last time I made it, I added some minced garlic while sauteeing the veggies and a bit more lemon (to taste) to the sauce. That said, this is one helluva a good dish! oil, for sauteing chicken
2 tablespoons butter, for sauteing chicken
3 -5 chicken breasts (3 ounces each)
2 3/4 cups all-purpose flour, seasoned with salt and pepper, for dredging
1/4 cup diced pancetta, cooked
12 ounces mixed mushrooms, sliced
12 ounces artichoke hearts, sliced
1 tablespoon capers
3 tablespoons lemon juice
4 ounces white wine
4 ounces heavy cream or 4 ounces half-and-half
1/2 lb butter
1 lb linguine, cooked
salt & freshly ground black pepper
chopped fresh parsley leaves, for garnish

Steps:

  • Heat a small amount of oil and 2 tablespoons butter in a large skillet. Dredge chicken in seasoned flour and saute in pan, turning once, until brown and cooked through. Remove chicken from pan.
  • Add remaining ingredients, up to and including the capers, to the pan.
  • Heat until mushrooms soften and are cooked.
  • Add chicken back to pan to reheat on low.
  • To make Lemon Butter sauce:.
  • Heat the lemon juice and white wine in a saucepan over medium heat. Bring to a boil and reduce by one-third.
  • Add cream or half and half and simmer until mixture thickens, about 3 to 4 minutes.
  • Slowly add butter, about 2 tablespoons at a time, until completely incorporated, whisking constantly.
  • Season with salt and pepper.
  • Remove from heat and keep warm.
  • To serve:
  • Add half of butter sauce to pasta mixture and toss, then plate. Add rest of sauce to chicken mixture and toss. Place chicken mixture over pasta. Garnish with parsley.

Paula Deen made this on her show. It is the butter that sets this apart from other recipes. This milk is so thick and creamy you will want to eat it with a spoon (or at least I always do)! I have used this several times and it has worked like a charm. I am so happy to have this for the holidays, since it's usually the one ingredient I'm out of.

1/2 teaspoon pure vanilla extract
1 cup powdered milk

Steps:

  • Using an electric mixer or blender, blend together water, butter, sugar, and vanilla.

  • Store in refrigerator for one week.

1 cup butter or 1 cup margarine
1 cup sugar
1 1/4 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon vanilla
1 2/3 cups flour
1 cup very finely chopped nuts (I use brazil nuts)
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 cups old fashioned oats
2 cups trail mix

Steps:

  • Preheat oven to 350°.
  • In a large mixing bowl cream together butter, sugars, eggs, and vanilla until almost fluffy.
  • In another bowl stir together flour, very finely chopped (should almost resemble powder) nuts, cinnamon, baking soda, baking powder, and salt.
  • Slowly add your powdered ingredients to your creamed ingredients while mixing.
  • Mix well.
  • Now stir in the oats and trail mix.
  • Drop by scoop or teaspoon onto hot stone or slightly greased cookie sheet.
  • Bake for 11-14 minutes depending on cookie size.
  • Remove cookies from baking sheet or stone right away and transfer to cooling racks.
