THE BEST CHEWY CHOCOLATE CHIP COOKIES RECIPE BY TASTY

The Best Chewy Chocolate Chip Cookies Recipe by Tasty image

There are a few secrets to the best classic, chewy chocolate chip cookies. Number one: Don't use chips; instead, opt for a mix of milk or semisweet and dark chocolate chunks. The second is to let the dough rest overnight or longer for a more complex, toffee-like flavor. Lastly, use an ice cream scooper to get even-sized cookies every time. And that's it! With these little tweaks, the result is a cookie that's textured on the outside, and soft and gooey on the inside. Absolutely perfect!

Provided by Alvin Zhou

Categories     Desserts

Time 1h5m

Yield 12 cookies

Number Of Ingredients 10

½ cup granulated sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup unsalted butter, melted
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
4 oz milk or semi-sweet chocolate chunks
4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown.
  • Cool completely before serving.
  • Enjoy!

BROWN BUTTER TOFFEE COOKIES

Brown Butter Toffee Cookies image

With crisp, caramelized edges and rich, chewy centers, these Toffee Cookies are irresistible! Made with nutty brown butter and filled with chocolate covered toffee bits.

Provided by Kelly

Categories     Dessert

Time 3h30m

Number Of Ingredients 10

1 cup (227g) unsalted butter
2 cups plus 2 tablespoons (287g) all-purpose flour ( (dip and sweep method))
2 tablespoons (14g) cornstarch
1 teaspoon baking soda
1 teaspoon salt
1/2 cup (99g) granulated sugar
1 cup (198g) packed brown sugar
2 large eggs (at room temperature)
2 teaspoons vanilla
8 oz (227g) chocolate covered toffee bits (I used Heath Milk Chocolate Toffee Bits)

Steps:

  • Brown the butter: Heat the butter in a light colored skillet over medium-high heat. It will come to a boil. Continue cooking, stirring occasionally, until the solid particles at the bottom turn golden brown. Keep an eye on it carefully towards the end, it can burn quickly. Immediately pour into a large mixing bowl to stop the browning. Let cool about 10 minutes so the sugars don't melt when mixed into it.
  • Whisk together the flour, cornstarch, baking soda, and salt in a bowl.
  • Whisk sugars into cooled browned butter. Whisk in vanilla and eggs until thoroughly combined.
  • Pour dry ingredients into bowl and stir until no streaks of flour remain.
  • Stir in toffee bits.
  • Cover with plastic wrap, pressing the plastic down on the surface of the dough. Chill for at least 3 hours and up to 3 days. If you chill longer than 3 hours, let dough sit at room temperature for about 30 minutes so the dough is easier to scoop.

TOFFEE OATMEAL CHOCOLATE CHIP COOKIES

Toffee Oatmeal Chocolate Chip Cookies image

Toffee Oatmeal Chocolate Chip Cookies are hands down the best oatmeal cookie variation there is! Perfectly balanced flavors with caramelized toffee bits and milk chocolate, and always soft & chewy on the inside while barely crisp around the edges. These cookies are impossible to resist!

Provided by Amy Nash

Categories     Dessert

Time 10m

Number Of Ingredients 11

1 cup butter (softened)
1 1/2 cups brown sugar
2 eggs
2 teaspoons vanilla
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups old fashioned oatmeal
1 1/2 cups toffee bits
1 cup milk chocolate chips

Steps:

  • Heat oven to 350 degrees. Line a large baking sheet with parchment paper.
  • In a large bowl, beat the butter and brown sugar together until creamy. Add the eggs and vanilla and beat again, scraping sides of bowl as needed, until combined.
  • Add the flour, baking soda, baking powder, and salt, stirring just to combine. Mix in oatmeal, toffee bits, and milk chocolate chips.
  • Drop dough by rounded spoonfuls onto the prepared baking sheet. I prefer making these cookies extra large with my cookie scoop, which is about 2 tablespoons of dough per cookie.
  • Bake for 12-14 minutes (if making large cookies) or 8-10 minutes (if you are making smaller ones, just until light golden brown around the edges. I prefer to underbake slightly for a chewier, softer cookie.
  • Cool cookies on the baking sheet for a few minutes before transferring to wire racks to cool completely.

CHEWY TOFFEE PECAN CHOCOLATE CHIP COOKIES

Chewy Toffee Pecan Chocolate Chip Cookies image

Absolutely the best cookies ever! I made enough to fill two gallon-size plastic bags and they were gone within a day. This recipe was a runner-up in a contest that was in the Paula Deen magazine. (Her recipe says this makes three dozen, but I came out with about eight dozen) I used chocolate covered toffee bits instead of the plain toffee bits and it was fantastic so don't worry if you can't find the plain ones. The cooking time is cumulative for all batches (and is approximate).

Provided by luvn-n-the-oven

Categories     Dessert

Time 2h

Yield 75-85 cookies

Number Of Ingredients 15

3 cups all-purpose flour
1 cup chopped pecans
2 teaspoons baking soda
2 teaspoons cream of tartar
1/2 teaspoon table salt
1/2 cup unsalted butter, softened
1/2 cup all-vegetable shortening
1 cup granulated sugar
1 cup firmly packed dark brown sugar
1/4 cup molasses
2 large eggs
2 teaspoons vanilla extract
2 cups semisweet chocolate morsels
1 (8 ounce) bag toffee pieces
1 cup turbinado sugar

Steps:

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • In the work bowl of a food processor, add flour, pecans, baking soda, cream of tartar, and salt: process until nuts are finely ground into flour.
  • In a large bowl, beat butter, shortening, white and dark brown sugars at medium-high speed with an electric mixer until fluffy, about 3 minutes.
  • Add molasses, eggs, and vanilla; beat on low speed just until blended.
  • Gradually add flour mixture, beathing just until dough forms.
  • Stir in chocolate morsels and toffee bits.
  • Roll dough into 1-inch balls; then roll balls in turbinado sugar. Do not flatten. NOTE: You may need more turbinado sugar - just use more if you need more. I ended up with probably closer to 2 cups.
  • Place 2 inches apart on prepared baking sheets. Bake 10-12 minutes, or until lightly browned and slightly flattened.
  • Let cool on pans for 15 minutes. Remove from pans, and cool completely on wire racks.
  • NOTE: you may find it useful to rinse and dry hands every so often, as that helps the dough roll into a ball more easily.

CHEWY TOFFEE PECAN BARS

Chewy Toffee Pecan Bars image

These chewy toffee pecan bars are part blondie, part cookie bar, and full on ooey-gooey delicious. The buttery pecan flavor is outrageous!

Provided by Sue Moran

Categories     Dessert

Time 39m

Number Of Ingredients 7

1 1/2 cups pecan halves
2 cups lightly packed brown sugar (plus a little more for sprinkling.)
1 cup unsalted butter, melted and slightly cooled
2 large eggs, room temperature
1 Tbsp vanilla extract. Alternatively use 2 teaspoons vanilla and 1 teaspoon almond extract.
1 tsp salt
2 cups all purpose flour

Steps:

  • Preheat oven to 350F Grease and flour your 9x13 pan, or line with parchment paper for easy removal and slicing.
  • Spread the nuts out on a baking sheet and toast for 10 minutes. Let cool, then chop.
  • In a large mixing bowl whisk together the brown sugar and melted butter until smooth.
  • Whisk in the eggs, vanilla, and salt.
  • Fold in the flour until almost fully incorporated, then fold in half of the chopped pecans.
  • Turn the batter into your baking pan and spread out evenly.
  • Top the batter with the remaining chopped nuts, and an extra sprinkle of brown sugar.
  • Bake for about 24 minutes, or until the edges are set and the center doesn't jiggle. The bars will look slightly underdone, and that's good. You don't want to over bake these.
  • Cool on a rack before slicing into bars. Note: you can slice them into 12 or 16 pieces. I recommend the smaller size because they are rich.

  • BUTTER: In a large bowl, place the butter and partially melt. There will be chunks, but it should be about 80% melted. Let the butter come back to room temperature before adding in sugars. If the butter is still hot, it will melt the sugar and cause greasy cookies. If you fully melt the butter, it's fine, it just needs an extra few minutes to cool down.
  • SUGARS: Add in the brown sugar and white sugar. Whisk together until just combined and smooth.
