CHEWY SKOR TOFFEE BITS COOKIES

Steps:

• Heat oven to 350 degrees F.
• Stir together flour, baking soda and salt.
• In a large mixer bowl, beat butter, granulated sugar, brown sugar and vanilla until well blended.
• Add eggs and blend thoroughly.
• Gradually add flour mixture, beating well.
• Stir in toffee bits.
• Drop by rounded teaspoonfuls onto a lightly greased cookie sheet (I used ungreased parchment paper).
• Bake 10 minutes or until lightly browned.
• Cool slightly, remove from the cookie sheet to a wire rack.
• Cool completely.

BROWN BUTTER TOFFEE COOKIES

Steps:

• Brown the butter: Heat the butter in a light colored skillet over medium-high heat. It will come to a boil. Continue cooking, stirring occasionally, until the solid particles at the bottom turn golden brown. Keep an eye on it carefully towards the end, it can burn quickly. Immediately pour into a large mixing bowl to stop the browning. Let cool about 10 minutes so the sugars don't melt when mixed into it.
• Whisk together the flour, cornstarch, baking soda, and salt in a bowl.
• Whisk sugars into cooled browned butter. Whisk in vanilla and eggs until thoroughly combined.
• Pour dry ingredients into bowl and stir until no streaks of flour remain.
• Stir in toffee bits.
• Cover with plastic wrap, pressing the plastic down on the surface of the dough. Chill for at least 3 hours and up to 3 days. If you chill longer than 3 hours, let dough sit at room temperature for about 30 minutes so the dough is easier to scoop.

• Preheat oven to 375°F (190°C).
• Cream together butter and sugars.
• Add eggs one at atime and mix well after each.
• Add the Vanilla and mix well.
• Measure one cup of oatmeal into a blender or food processor, and then blend to a fine powder.
• In a separate bowl, mix together flour, oatmeal, powdered oatmeal,salt, baking powder and baking soda.
• Stir dry ingredients into creamed butter and sugar.
• Add chocolate chips, crushed chocolate bars.
• Drop by rounded teaspoons onto ungreased cookie sheets.
• Bake for 6-8 minutes depending on your oven.
• Tip:.
• Line your cookie sheet with parchment paper.
• Toffee bits are a good substitute for the Skor bars.
• After the dough is made put in refrigerator for 1 hour;it is much easier to scoop and make the cookies.

SKOR COOKIES

Steps:

• Heat oven to 350°F.
• Lightly grease baking sheet.
• Stir together flour, baking soda, and salt.
• In a large bowl, beat together margarine, both sugars, and vanilla until well blended.
• Add eggs; beat well.
• Gradually add flour mixture, beating until well blended.
• Stir in Skor bits.
• Drop by rounded teaspoons onto cookie sheet.
• Bake for 9-11 minutes or until lightly browned.
• Cool slightly, then remove cookies to wire rack.
• Cool completely.

TOFFEE SANDWICH COOKIES

Steps:

• Cream butter and sugars; add eggs and vanilla.
• Combine dry ingredients and mix into butter/sugar mixture.
• Stir in toffee bits.
• Drop by teaspoon onto parchment-lined baking sheet.
• Bake at 350° for 10 minutes or until firm (do not brown).
• Cool on a rack and make little cookie sandwiches with the frosting.
• FROSTING-.
• Cream butter and add sugar and vanilla.
• Add milk to reach spreading consistency.

TOFFEE MILK CHOCOLATE CHIP COOKIES

Steps:

• In a medium to large sized bowl, add in flour, baking soda, and salt. Whisk well to combine, then set aside.
• In a stand mixer (fitted with the paddle attachment), add the butter, brown sugar, and white sugar, and beat for 3 minutes, it should look light and fluffy, and doubled in volume
• In a separate bowl, whisk together the eggs, yolk and vanilla, then add to the batter and beat on high for another 2 minutes, scraping at the edges periodically. Add in the flour mixture and mix on low until combined, scraping at the edges. Ensure it is well combined, but do not overmix. Add in the milk chocolate and Skor bits, and fold with a spatula until well dispersed.
• Prepare a baking sheet with parchment paper. Using your hands or a scoop, arrange cookies to be about 2 tbsp each. Place all the cookies onto the baking sheet (do not worry about arrangement yet), and place into the freezer for 30 minutes to rest (don't skip, see above!)
• Preheat oven to 350°F.
• Remove baking sheet from the freezer, and arrange cookies evenly onto 3 baking sheets fitted with parchment paper (I do 6-8 per sheet). Place into the oven and bake for 11-13 minutes.
• Note: If baking in batches, keep cookies cold before baking by keeping them in the fridge.

• Bake 9 to 11 minutes or until lightly browned.

• 5. Bake 9 to 11 minutes or until lightly brown.
• 6. Cool slightly. Remove from cookie sheet to wire rack.
• 7. Cool completely.
