YUMMY CHEWY PECAN BARS
My Mother In Law made these and I "borrowed" her recipe. Hubby loves these. When the guys go hunting, they always ask for a couple of pans full of these to take with them. They don't last long!! What could be better?? Pecan Pie in a bar!!

Steps:
- 1. Preheat oven to 350 Degrees. Grease a 13 x 9 pan. In a large bowl, combine cake mix, one egg and the oil. Mix until crumbly and press into prepaired pan. Bake "crust" for 20 minutes. Meanwhile...
- 2. In the same bowl, with flat mixer blade, beat sugar, syrup, butter and the remaining eggs until well blended. Stir in the pecans and pour over the prepared "crust"
- 3. Bake 45 minutes or until set. Do not over bake as this will cause your bars to be to chewy! Let cool in pan and then cut into bars and serve.
- 4. NOTE: After my "crust" is baked, I take the back of a large wooden spoon and push it all down into the bottom of the pan. If you leave the edges uncovered, they get hard. I also line the pan with parchment paper and spray the paper lightly with cooking spray. When mine are cooled, I loosen them from the edges and turn them onto a large cutting board. Peel off the parchment and flip them back over with another board to cut. For Weight Watchers: 7 points per bar (if they are cut into 20 bars).

- Slowly add in the all purpose flour and salt and mix until combined and dough starts to come together
- Remove the dough from the mixing bowl and evenly distribute the dough onto the prepared sheet pan

- Remove from the oven and allow the crust to cool while preparing the pecan filling
- In a medium saucepan combine the butter, brown sugar, granulated sugar, honey and heavy cream
- Stir continuously until the butter is melted and the sugar is dissolved and bring the caramel to a boil until it reaches 248 degrees F on a candy thermometer

CHOCOLATE CHEWY SQUARES
This recipe was given to me by a friend many years ago. If you need something to satisfy a sweet tooth, this will do it! I prefer using a smaller pan (71/2X11) that results in a thicker bar, but they do take longer to cool!

Steps:
- Preheat the oven to 350 degrees F.
- For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
- For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

Steps:
- Preheat oven to 350F Grease and flour your 9x13 pan, or line with parchment paper for easy removal and slicing.
- Spread the nuts out on a baking sheet and toast for 10 minutes. Let cool, then chop.
- In a large mixing bowl whisk together the brown sugar and melted butter until smooth.
- Whisk in the eggs, vanilla, and salt.
- Fold in the flour until almost fully incorporated, then fold in half of the chopped pecans.
- Turn the batter into your baking pan and spread out evenly.
- Top the batter with the remaining chopped nuts, and an extra sprinkle of brown sugar.
- Bake for about 24 minutes, or until the edges are set and the center doesn't jiggle. The bars will look slightly underdone, and that's good. You don't want to over bake these.
- Cool on a rack before slicing into bars. Note: you can slice them into 12 or 16 pieces. I recommend the smaller size because they are rich.

Steps:
- Preheat the oven to 350 degrees F.
- Line a 9-by-13-inch baking pan with foil, leaving 2 inches of overhang to use as handles to remove the bars at the end of baking.
- Whisk together the flour, salt, and baking powder in a small bowl. Cream together the butter and light-brown sugar, using a hand mixer, in a separate, large bowl, until light and fluffy. Beat in the vanilla. Gradually pour in the dry mixture, and beat until the dough looks like coarse, pea-sized lumps. Use your hands to form the dough into a ball, then transfer it to your prepared baking pan and press down evenly to fill the pan. Bake for 20 minutes, or until lightly golden.
- To make the filling: Combine the brown sugar, corn syrup, flour, bourbon, vanilla, salt, eggs, pecans, and chocolate chips in a large bowl. Remove the hot half-baked dough from the oven, and spread the filling over the crust. Return the pan to the oven, and bake for another 25 minutes, or until the top is puffed and brown and cracks begin to form (like a pecan-pie topping). Let cool for 45 minutes before slicing into squares.

- Line a 9-inch square baking pan with parchment paper and then spray it with cooking spray. Set aside.
- Combine flour, baking powder, salt, brown sugar and pecans in the bowl of a food processor fitted with the chopping blade. With the lid in place, pulse mixture for five one-second bursts. The mixture should be the consistency of cornmeal. Remove the lid and add chilled butter cubes to the mixture. Return lid and pulse for an additional eight one-second bursts. The mixture should be fine, like sand. Pour the crumb mixture into the bottom of prepared baking pan and use your hand to firmly press it into an even layer. Bake for twenty minutes until the crust is golden brown and springs back when gently pressed.
- Meanwhile, combine melted butter, brown sugar, corn syrup, vanilla and bourbon in a large mixing bowl. Whisk just until combined. Add the previously slightly-beaten egg and whisk together with the sugar mixture just until incorporated.
