2 cups sugar
2 1/2 cups pecans, chopped
6 tablespoons unsalted butter, cubed
1 tablespoon vanilla extract
1/4 teaspoon baking soda
1 teaspoon kosher salt

Steps:

  • Heat sugar in a 4-qt. saucepan over medium-high heat; cook, swirling pan often, until golden amber and completely liquefied.
  • Add pecans and butter and cook, stirring, until caramel is liquid again and butter is absorbed, about 2 minutes.
  • Combine vanilla extract and baking soda in a bowl and then add to pan along with salt; stir to combine.
  • Pour onto a baking sheet lined with foil or a silicone baking mat and spread into an even layer with a small rubber spatula; let cool completely.
  • Break into bite-size pieces and store in an airtight container between sheets of wax paper.

1/2 cup pecans (more would work if you REALLY love pecans)
1/2 cup honey
1/2 cup maple syrup
1/2 cup coconut oil, melted
1/2 cup coconut butter
2 teaspoons cinnamon
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Place a medium saucepan over medium heat.
  • Add a tablespoon of coconut oil then add your pecans to the pan. Toss around to coat in the oil and keep moving to help roast your pecans without burning them.
  • When your pecans begin to become fragrant and browned a bit, add your honey and maple syrup. Mix well.
  • Once your sugar begins to thicken just a little, add your coconut oil and coconut cream concentrate. Keep mixing with a rubber spatula to make sure your coconut cream concentrate doesn't burn.
  • Then add your cinnamon, vanilla extract, and a pinch of salt.
  • When everything is well combined, turn burner on low and let simmer for about 3-4 minutes to thicken just a bit. (it won't get super thick, so don't expect that).
  • While your mixture is thickening, line a 8×8 glass baking dish with parchment paper, pressing the paper down into the sides of the dish.
  • Then pour your mixture into the parchment-lined baking dish and use a spoon to spread out the pecans throughout the mixture.
  • Place in the freezer and let freeze for an hour or more. When you pull it from the freezer, it should be completely hardened but still have a chewyness to it.
  • Use a knife to break it into pieces.
  • Store in the freezer until serving!

This pie delivers plenty of classic flavors like brown sugar, vanilla and toasted nuts. We found that bourbon made a welcome addition. The alcohol bakes off leaving behind irresistible notes of smoke and caramel. Our all-butter crust perfectly balances the sweetness of the filling.

1 1/4 cups all-purpose flour, plus more for dusting (see Cook?s Note)
2 teaspoons granulated sugar
1/8 teaspoon fine salt
1 stick (8 tablespoons) cold unsalted butter, diced
1 large egg, lightly beaten
5 tablespoons unsalted butter
1 cup packed light brown sugar
3/4 cup light corn syrup
1/2 teaspoon fine salt
2 cups chopped toasted pecans
1 to 2 tablespoons bourbon
2 teaspoons pure vanilla extract
3 large eggs, lightly beaten

Steps:

  • For the crust: Whisk together the flour, granulated sugar and salt in a medium bowl. Using your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean-size bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
  • Alternatively, pulse the flour, sugar, and salt in a food processor fitted with the metal blade until combined. Add the butter and pulse until it resembles yellow cornmeal mixed with bean-size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade and bring the dough together by hand.
  • Form the dough into a disk, wrap with plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
  • Roll the dough on a lightly-floured surface into a 12-inch circle about 1/8-inch thick. Transfer the dough to a 9-inch pie pan and trim the edges, leaving about an extra inch hanging over the edge. Tuck the overhanging dough underneath itself to form a thick
  • edge that is even with the rim. Flute the edge as desired. Freeze the pie shell for 30 minutes.
  • Arrange the racks in the center and lower third of the oven and preheat to 400 degrees F. Put a piece of parchment paper or foil over the pie shell and fill with dried beans or pie weights. Bake on a baking sheet on the center rack until the dough is set, about 20 minutes. Remove from the oven and lift the sides of the parchment to remove the beans. Continue baking until the pie shell is lightly golden brown, about 10 more minutes. Reduce the oven temperature to 350 degrees F.
  • While the crust is baking make the filling: Combine the butter, brown sugar, corn syrup, and salt in medium saucepan. Bring to a boil over medium heat and, stirring constantly, continue to boil for 1 minute. Remove from the heat and stir in the nuts, bourbon and vanilla. Set it aside to cool slightly, about 5 minutes. (If the crust has cooled, return it to the oven for 5 minutes to warm through.) Whisk the beaten eggs into the filling until smooth. Put the pie shell on a baking sheet and pour the filling into the hot crust.
  • Bake on the lower rack until the edges are set but the center is still slightly loose, 40 to 45 minutes. (If the edges get very dark, cover them with aluminum foil half way during baking.) Cool on a wire rack. Serve slightly warm or at room temperature.

1 cup white sugar
½ cup light corn syrup
⅛ teaspoon salt
1 tablespoon butter
1 teaspoon baking soda

Steps:

  • Butter a baking sheet.
  • Combine pecans, sugar, corn syrup, and salt in a glass 4-cup measuring cup.
  • Heat in microwave for 3 1/2 minutes; stir and heat for 3 1/2 more minutes. Stir butter into pecan mixture and heat in microwave for 2 more minutes.

1/4 cup butter, melted
2 cups packed brown sugar
2/3 cup all-purpose flour
4 large eggs, room temperature
2 teaspoons vanilla extract
1/4 teaspoon baking soda
1/4 teaspoon salt
2 cups chopped pecans
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. Pour butter into a 13x9-in. baking pan. In a large bowl, combine the next 6 ingredients; mix well. Stir in pecans. Spread over butter. , Bake 30-35 minutes. Remove from oven. If desired, immediately dust with confectioners' sugar. Cool before cutting.

1 teaspoon water
1 teaspoon vanilla extract
1 ½ cups white sugar
1 cup water
1 cup light corn syrup
2 ½ cups coarsely chopped pecans

Steps:

  • Line a rimmed baking sheet with a silicone mat. Mix together baking soda, 1 teaspoon water, and vanilla in a small bowl; set aside.
  • Mix together sugar, 1 cup water, and corn syrup in a 3-quart saucepan. Cook over medium heat, stirring occasionally, until mixture reaches 240 degrees F (115 degrees C) on a candy thermometer, or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from water and placed on a flat surface, about 25 minutes.

  • Pour mixture onto the prepared baking sheet and allow to cool until hardened, 1 to 2 hours. Break into pieces.

Number Of Ingredients 7

1 cup sugar
1/2 cup light corn syrup
1/8 teaspoon salt
1 cup pecans (chopped)
2 tablespoons butter
1 teaspoon baking soda
2 teaspoons vanilla

Steps:

  • Cook first 3 ingredients in a medium size heavy saucepan over medium heat, stirring constantly, until mixture starts to boil.
  • Boil without stirring 5 minutes or until a candy thermometer reaches 310 degrees.
  • Add pecans, and cook 2 - 3 more minutes or to 280°F (mixture should be golden brown).
  • Remove from heat, and stir in butter and remaining ingredients.
  • Pour mixture onto a metal surface or onto a shallow pan.
  • Allow to stand 5 minutes or until hardened.
  • Break into pieces.
  • * If you'd like you can also add popcorn.
  • Prepare brittle as directed.
  • Stir in 1 cup popped popcorn before pouring into pan.
