CHEWY MALL PRETZELS
I have tried tons of recipes in my quest to duplicate "Auntie Anne's" pretzels. I found this one on the net, and it really tastes VERY similar to the real thing, best one so far. I have tried experimenting with add-ins and toppings. One of my faves is adding dried italian seasoning to the dough and sprinkling with parmesan cheese, garlic powder, and coarse salt, dipping

Steps:
- Put the flour, yeast, sugar and 1 tsp salt in a large bowl and mix together to combine. In a large jug, mix together 300ml lukewarm water and the butter. Make a well in the flour mixture and pour in the water, mixing together to form a rough dough.
- Tip out onto a floured work surface and knead for 10-15 mins or until smooth and elastic. Put the dough in a lightly oiled bowl, cover with oiled cling film and set aside until doubled in size, about 1hr.
- Once risen, knock out the air bubbles in the dough and divide into 8 equal pieces. Using your hands, roll each piece into a long rope about 60cm long.
- To form into pretzels, lay the rope in a U-shape with the curve pointing towards you. Take the two ends and cross them over.
- Take the ends, lift them backwards and press them into the curve of the U-shape. Repeat with the remaining dough. Heat oven to 200C/180C fan/gas 6.
- Carefully place the pretzels on a baking tray lined with parchment and lightly greased with oil. Cover lightly with oiled cling film. Set aside for about 20 mins until puffy (not fully risen like bread dough).
- Fill a medium-sized saucepan with water, bring to the boil, add the baked bicarbonate of soda, then reduce the heat to a low simmer. One at a time, carefully lift the pretzels into the pan and cook for 20 secs per side. The pretzels will rise to the surface; flip with a slotted spoon.
- Use the spoon to gently lift the pretzels from the pan and return them to the baking tray. Once they have all been cooked in the water, lightly brush with the egg and sprinkle with flaked sea salt.
- Bake in the oven for 20-25 mins or until a rich, dark brown. Allow to cool on the baking tray for 10 mins, then transfer to a wire rack to cool completely. Best served on the day made but can be frozen for up to 1 month.

- To make the pretzels: Place the milk in a small saucepan; stir and heat until milk is about 110 degrees. Pour warmed milk into a medium bowl and sprinkle in the yeast. Let the yeast soften, about 2 minutes; stir in the brown sugar and 1 cup flour with a wooden spoon. Dice 2 tablespoons butter and soften; stir into the mix. Add the remaining 1 1/4 cups flour and the fine salt to make a sticky dough. Turn the dough out onto a lightly floured surface and knead, adding more flour if needed, until smooth but still slightly tacky, about 5 minutes. Shape into a ball, place in a lightly greased bowl and cover with plastic wrap. Let rise in a warm spot until doubled in size, about 1 hour.
- Heat the oven to 450 degrees and line two baking sheets with parchment paper Punch down the dough to deflate it, then turn out onto a lightly floured surface. Evenly divide the dough into 6 pieces. Roll and stretch each piece with the palms of your hands into a 30-inch rope, holding the ends and slapping the middle of the rope on the counter as you stretch. Form each rope into a pretzel shape.
- In a large bowl, dissolve the baking soda in 3 cups warm water in a shallow baking dish. Gently dip each pretzel in the soda solution (this will happen to brown the pretzels), then arrange on the prepared baking sheet and sprinkle with the coarse salt (or sprinkle on cheese and place jalapenos on top). Bake until golden, 10 to 12 minutes.

“DO GET IT TWISTED” – 5 FAST FACTS ON PRETZELS
From caliplate.com
Estimated Reading Time 2 mins
- The origin of the pretzel is vague at best. There are numerous, yet unreliable, accounts of when and where pretzels were created, although monks living either in Italy or Southern France are credited in most of the stories.
- The Catholic church viewed pretzels as a religious symbol. Whether due to their resemblance to praying hands or the simplicity of their ingredients at the time (just flour and water) The Catholic Church held pretzels in high esteem, a food appropriate for Lenten season.
- Pretzels get their skin thanks to the Maillard Reaction. The Maillard Reaction is non-enzymatic reaction where amino acids and reducing sugars break down to give the item a richer, more complex flavor.
- Freeport, Illinois is the Pretzel capital of the world. Freeport, Ill. bills itself as “Pretzel City USA” after Billerbeck bakery, which opened in 1869, brought Pretzels to the city.
- Any Pretzel Companies from California? Yes. Wetzel’s Pretzels is a pretzel company founded in Redondo Beach, but now Headquartered in Pasadena, in 1994.

- Melt the vegan butter in a pot on medium heat, then add the nondairy milk and heat until it is steaming and but not boiling.
- Pour into a large mixing bowl and evenly sprinkle the yeast over top. Set a timer for 10 minutes and let it sit without touching it.
- Add the flour and salt, stirring to form a soft dough ball. When it gets too hard to mix with a spoon, use your hands to incorporate it and knead for about 30 seconds. Don’t knead too much or it will get tough and not as fluffy.

- Preheat the oven to 250°F. Line a baking sheet with foil. Evenly sprinkle the baking soda over the prepared baking sheet and bake for 1 hour. Melt 2 tablespoons of the butter.
- Meanwhile, pour one cup of warm water into a large bowl. Whisk in the granulated sugar until dissolved. Sprinkle the yeast over the water and let sit until the yeast becomes frothy, about 5 minutes. Stir in the salt and the 2 tablespoons of melted better.
- Add the flour, stirring in a bit at a time, until a dough forms and loses most of its stickiness. Knead the dough until smooth, then lift from the bowl and oil the bowl with vegetable oil. Place the dough back into the bowl and cover with plastic wrap. Let sit in a warm spot until doubled in size, about 45 minutes to an hour.
- Remove the baked baking soda from the oven and set aside. (Make sure not to breathe it in or handle it with your bare hands as it can be irritating.) Preheat the oven to 450°F. Line a sheet pan with parchment paper and set aside.

- Combine first 4 ingredients in large bowl, mixing it in a little. Let sit until mixture foams. Add flour and butter. Mix until combined, by hand or stand mixer.
- Knead until dough is smooth and no longer sticks to bowl (about 5 min). Put dough into well oiled bowl and turn dough so it is oiled on all surface areas.
- Cover with damp towel and set in warm place for 1 hour, or until doubled in size. The actual time it takes to double depends, of course, on the temperature. If the room is cool, I set my dough in the oven, with only the light turned on. If you do that, just make sure you remove the dough before preheating oven.

- For the pretzel dough, in the bowl of an electric stand mixer fitted with the dough hook (or in a large bowl, if mixing by hand), combine the water, milk, oil, yeast, salt and 1-2 cups of flour. Mix until well combined. Gradually add the remaining flour until the dough clears the sides of the bowl. Knead for 3-4 minutes until the dough is soft and smooth.
- Place the dough in a lightly greased bowl and cover with saran wrap lightly coated with cooking spray. Let the dough rise until doubled, about an hour or so depending on the temperature of your kitchen.
- Gently deflate the dough and on a lightly greased or floured counter, pat the dough into a rough 9X12-inch rectangle. Using a pizza wheel or sharp knife, cut the dough into 8 equal strips, about an inch or so wide.
- One at a time, take a strip of dough and roll it into a very long, thin rope, about 24-inches long. If the long rope keeps shrinking when you let go, let the dough rest for 5-10 minutes before continuing to roll.
