CHEWY DATE PINWHEELS
Whenever we'd come to see her, my grandma always had cookies for us children. Now, when I make these pinwheels for my own family, I think of her. I've taken Chewy Date Pinwheels to church potlucks and reunions, too, and the response has always been the same-Mmmmm-I need another!" My husband and I have five children, ranging in age from 8 years to 8 months. We have a strawberry patch, and we grow popcorn and lots of other crops besides for sale at a local grocery and roadside market. On my own, I enjoy quilts-I pieced 114 of them last year alone!

CHEWY DATE AND WALNUT PINWHEEL COOKIES
Different than other recipes for this type of cookie due to the addition of orange zest and vinegar which lends a nice counterbalance to the sweetness of the date filling. This cookie also freezes well for make ahead holiday treats. Cooking time is chilling and baking time.

Steps:
- Combine the flour, baking soda, and salt in a small mixing bowl and set aside.
- In a large mixing bowl, using a hand mixer, cream the butter with remaining 1/2 cup granulated sugar and 1/2 cup brown sugar. Mix on medium speed for a minute or two. Add the egg and vanilla and continue mixing until well incorporated.
- Add the dry ingredients to the butter mixture and stir with a spoon until combined. Using clean hands, work the dough until it holds together in a ball. Wrap the ball of dough in plastic wrap and refrigerate for an hour.
- Meanwhile, place the chopped dates, 1/4 cup granulated sugar and 1/2 cup water in a small saucepan over medium heat. Bring mixture to a boil then reduce heat to low and simmer for about 5 minutes, stirring occasionally. When the dates have cooked down and the mixture is paste like, mix in the chopped nuts and remove the pan from the heat. Set aside to cool.
- Roll chilled dough out on a lightly floured piece of wax paper to a 12- x 8-inch rectangle. Spread the cooled date mixture on the dough to within about 1/2-inch of the edges. Starting at one of the long ends, begin to carefully roll the dough into a log. Wrap the rolled dough in the wax paper and refrigerate for at least an hour or overnight.
- When ready to bake, preheat oven to 375 degrees F. Slice roll into 1/4-inch slices. Place on lightly greased or parchment paper lined baking sheets and bake for 10 to 12 minutes. Remove from oven and allow to cool on baking sheets for a minute or two before transferring to a wire rack to cool completely.
- Store in an airtight container.

DATE NUT PINWHEELS
Crisp brown sugar cookies spiraled with date filling. My MIL used to make these, now the tradition has fallen to me. The rolls freeze beautifully, and it's easy to cut just a few for a quick snack. Prep time includes chilling.

- Preheat oven to 400 degrees F. Lightly grease Cookie Sheets or line with Silicone Baking Mats.
- In a large mixing bowl, using your kitchen mixer on medium speed, combine butter, brown sugar, and granulated sugar together until creamy. Add eggs and beat until mixture is smooth and light yellow in color.
- In a separate bowl, sift the flour, salt, and baking soda together. Add the dry ingredients to the butter mixture, a little at a time until the mixture is creamy.
- On a lightly floured surface and using a lightly-floured rolling pin, roll the dough into an oblong shape approximately 9x13-inches or larger (dough should be about 1/8-inch thick).
- When ready to bake, remove chilled dough from the refrigerator and, using a sharp knife (I found that my serrated bread knife works the best), cut into 1/4-inch cookie slices.
- Place cookie slices on prepared cookie sheets about 1-inch apart and bake approximately 7 to 10 minutes, until light golden brown.
- Remove from oven and remove from cookie sheet onto wire cooling racks. Note: In between baking, extra dough should be returned to the refrigerator to stay firm.

- In a large mixing bowl with paddle attachment, or using an electric hand mixer, beat the butter and brown sugar until fluffy, about 3 minutes. Add the eggs one at a time, and mix until well combined. Stir in flour and salt and mix just until just combined. The dough will be quite sticky and it’s normal. Divide the dough into two equal parts and wrap in plastic wrap. Flatten into a square and refrigerate for at least an hour, or overnight.
- While the dough is chilling, let’s make the filling. First, remove the stems of the dried figs. Place cranberries, dates and stemmed dried figs and process until finely chopped, a minute or two. (Warning! The processor will be a little jumpy, since dried figs and dates are quite sticky.) In a medium saucepan, combine the chopped fruits, sugar, salt and ½ cup of water. Bring it to a boil over medium high heat. Then reduce the heat and cook until the mixture thickens, stirring occasionally, about 8-10 minutes. Stir in chopped nuts and cool completely.
- Now, once the cookie dough is chilled, it’ll be easier to work with. Unwrap the dough on floured surface and roll into 14x11in (35x28cm) rectangle. Spread half of the fruit filling evenly over the dough and roll it from the short end into tight log. Do the same thing with the other half of dough and filling. Wrap the logs with plastic wrap again and chill for another 30 minutes, or overnight.
- Preheat the oven to 350°F (175°C). Then cut the log into ¼-inch-thick (0.5cm) disks and place the cookies at least an inch apart on a baking sheet lined with parchment paper, or silicone mat. If the rolls are flattened on one side, just gently squash it to form into a round. Bake for 15 minutes. Cool the cookies on the sheets for 3-5 minutes and transfer them to a wire rack to cool completely.
