My coconut bars are an American version of a Filipino coconut cake called bibingka. These are a crispier, sweeter take on the Christmas tradition I grew up with. —Denise Nyland, Panama City, Florida

Steps:
- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

Steps:
- Set oven to 350 degrees.
- Grease a 13 x9-inch baking pan.
- In a large bowl cream shortening, brown sugar, eggs and vanilla until well blended.
- In a small bowl mix together flour, baking powder and salt; add to the creamed mixture, mix until blended.
- Mix in the coconut & chocolate chips.
- Transfer/spread the mixture in the prepared pan.
- Bake 20-25 minutes.
- Let cool before slicing.
- Delicious!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
- Bake 20 to 25 minutes. Let cool before cutting into bars.

CHEWY COCONUT COOKIES
These cookies are so chewy and delicious! Margarine or real butter work well but the real butter I think gives it that extra flavor:) The key is to under bake them. I usually take them out once they're semi golden and put them on a cooling rack immediately. Easy to make!

Steps:
- Preheat oven at 350°F.
- Mix together dry ingredients.
- Cut butter in until the butter is completely incorporated into the dry ingredients.
- Press half the crumb mixture into a 9 x 13 well greased pan.
- Pour lemon filling ( commercial or homw made ) over the bottom crumbs.
- Gently sprinkle the remaining crumbs over the lemon filling.
- Bake for 30 - 35 minutes or until light golden brown.
- Cool completely in pan before cutting into squares
- Lemon filling.
- 1/3 cup corn starch.
- 1/3 cup cake flour.
- pinch of salt.
- 1 1/2 cups of sugar.
- 5 egg yolks, slightly beaten.
- Zest of 2 large lemons.
- Juice of 2 large lemons.
- 2 cups water.
- 2 tablespoons of butter.
- In a medium sauce pan, combine corn starch, cake flour, sugar and salt. Pour in water and stir constantly over medium low heat until mixture comes to a slow boil. Remove the pan from the heat and reduce heat to low. Pour about a cup of this mixture onto the slightly beaten egg yolks while whiosking constantly. Pour the egg mixture back into the other mixture, whisking constantly. Return to the stove and cook for an additional 3 minutes, stirring constnatly. remove from heat and stir in lemon juice and lemon rind. Whisk in butter, one tablespoon at a time.
CHEWY COCONUT-RAISIN SQUARES
There's coconut in the crust, filling and topping of these moist-and-chewy bar cookies that are laced with raisins and frosted with melted chocolate.

- Preheat oven to 350°F. Beat butter and powdered sugar in medium bowl with electric mixer on medium speed until light and fluffy. Add 1 cup flour and 2/3 cup of the coconut; mix well. Press firmly onto bottom of ungreased 9-inch square pan. Bake 20 min. or until golden brown.
- Meanwhile, beat eggs and vanilla in large bowl with electric mixer on medium speed until well blended. Gradually add brown sugar, beating well after each addition. Add 2 Tbsp. flour and the baking powder; mix well. Stir in raisins and 1 cup of the remaining coconut. Pour over crust.
- Bake an additional 30 min. Sprinkle with the chopped chocolate. Cover with foil; let stand 2 to 3 min. or until chocolate is melted. Carefully spread chocolate over dessert until evenly covered; sprinkle with the remaining coconut. Cool completely. Cut into 16 squares to serve.

AMY'S CHEWY COCONUT BARS (DIABETIC)
I was looking for a good bar cookie to add to my cookie tray that was suitable for Redneck Epicurean who was diabetic. We were partners in a holiday cookie swap and I was in awe of her cheerfulness even when she was in tremendous pain. She loved them and in her honor I am renaming this bar for her. Combining coconuts and walnuts with a faint hint of maple really appealed to me so I decided to give it a try as well as posting here for others as well as for future reference. According to the source this bar has 126 cal., 2 g pro., 10 g carbo., 9 g fat, 27 mg chol., 141 mg sodium.
