You can't eat just one of these delicious bar cookies packed with chocolate, coconut, and walnuts.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
⅔ cup shortening
2 cups packed brown sugar
1 teaspoon vanilla extract
3 eggs
1 ½ cups semisweet chocolate chips
¾ cup chopped walnuts
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
  • Bake 20 to 25 minutes. Let cool before cutting into bars.

Coconut Chocolate Chip Granola Bars (gluten-free, dairy-free) image

1/4 cup (56 grams) coconut oil
1/4 cup (80 grams) honey
1/3 cup (67 grams) brown sugar
A pinch of fine sea salt
5 cups (460 grams) rolled oats (make sure to use gluten-free, if needed)
1 cup (85 grams) unsweetened flaked coconut
1 cup crispy rice cereal
1 teaspoon vanilla
Chocolate chips to top

Steps:

  • Prep a rimmed baking sheet with a non-stick cooking spray(I prefer to use a misto which I just fill with oil). For this recipe you only need to spray half the pan.
  • Add oil, honey, sugar and salt to a medium sized pot on the stove and warm over low to medium low heat until melted.
  • While the ingredients on the stove are warming combine the rolled oats, coconut and cereal in a large bowl. Have chocolate chips ready.
  • When the ingredients on the stove have melted stir together until the sugar is dissolved then increase the heat to medium or medium high heat and cook until 260℉. Once 260℉ remove from the heat and add the vanilla. The hot mixture will bubble up so stand back! Stir together then pour over the oat mixture.
  • Stir together until everything is evenly coated then pour onto the prepared side of the baking pan. Spread out in 1/3 of the pan and sprinkle with chocolate chips as desired. Then take a soft spatula and firmly press down until the granola bars are tightly packed and smooth on top making sure they don't take up more than 1/3 of the baking sheet or they will be too thin.
  • Place in the fridge and chill for 1 hour or until chilled all the way through. To remove from the pan simple turn upside down and press on the underside of the pan. The granola bars should come away easily. Cut into small granola bars and store in an airtight container in a cool, dry location.

  • Set oven to 350 degrees.
  • Grease a 13 x9-inch baking pan.
  • In a large bowl cream shortening, brown sugar, eggs and vanilla until well blended.
  • In a small bowl mix together flour, baking powder and salt; add to the creamed mixture, mix until blended.
  • Mix in the coconut & chocolate chips.
  • Transfer/spread the mixture in the prepared pan.
  • Bake 20-25 minutes.
  • Let cool before slicing.
  • Delicious!

1/2 cup butter
1/2 cup powdered sugar
1 cup flour
2 tablespoons flour
2 2/3 cups coconut, divided
2 eggs
1 teaspoon vanilla
1 cup brown sugar, firmly packed
1 teaspoon baking powder
2/3 cup raisins
1/2 cup semi-sweet chocolate chips

Steps:

  • Beat butter till light and fluffy. Gradually beat in powdered sugar. Stir in 1 cup flour and 2/3 cup of the coconut.
  • Press into ungreased 9 inch square pan and bake at 350F for 20 minutes, or till golden brown.
  • Beat eggs and vanilla. Gradually beat in brown sugar. Stir in 2 tbsp flour and the baking powder. Stir in raisins and 1 c of the coconut.
  • Pour over crust in pan and bake @ 15 minutes longer. Sprinkle with chips.
  • Cover with foil 2-3 minutes until chips soften. Carefully spread to frost.
  • Sprinkle with remaining coconut.
  • Cool and cut into bars. Garnish with additional raisins.

½ cup (1 stick) unsalted butter, (melted)
1 cup flour
¼ cup powdered sugar
2 eggs, (beaten)
1½ cups brown sugar
2 tablespoons flour
1 cup walnuts or pecans, (chopped)
¾ cup coconut ((sweetened or unsweetened is fine))
¼ teaspoon baking powder
½ teaspoon kosher salt
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Place the melted butter, 1 cup flour, and ¼ cup powdered sugar in a large bowl. Stir until just combined.
  • Pat into a 9x12 inch pan (a 9x13 inch pan works, too). Bake in the preheated oven for 12-15 minutes, or until just golden brown.
  • Meanwhile, place the remaining ingredients in the same large bowl. Stir just until combined.
  • Spread the mixture over the partially baked crust, and return to the oven. Bake for 18-20 minutes, or until golden all over the top. Remove from the oven and allow to cool for 20 minutes.
  • Cut into squares while still slightly warm.

1/2 stick (1/4 cup) unsalted butter

3/4 cup canned coconut cream such as Coco Lopez
1/4 cup heavy cream
2 tablespoons fresh lemon juice
a 7-ounce package sweetened flaked coconut
a 7-ounce jar macadamia nuts (about 11/3 cups), large pieces halved

Steps:

  • Preheat oven to 350° F. and butter a 13- by 9-inch baking pan.
  • Make shortbread layer:
  • In a food processor pulse shortbread ingredients until mixture just forms a dough. Pat dough evenly onto bottom of pan and bake 20 minutes, or until pale golden.
  • Make topping while shortbread is baking:
  • In a large saucepan melt butter over low heat and remove pan from heat. Whisk in brown sugar until dissolved and whisk in coconut cream, heavy cream, and lemon juice until combined well. Stir in flaked coconut and nuts.
  • Pour topping over shortbread. Reduce temperature to 325° F. and bake confection until top is golden and center is bubbling, 45 to 50 minutes. Cool confection completely in pan on a rack and cut into bars. Bars may be made ahead and kept, wrapped well, chilled 4 days or frozen 3 weeks. Serve bars chilled or at room temperature.
