GREEK SESAME BREAD RINGS RECIPE (KOULOURI THESSALONIKIS)

- To prepare these Greek sesame bread rings recipe, start by making the dough. In the mixer's bowl add the lukewarm water, the yeast and sugar and stir. Wrap well with plastic wrap and set aside for about 8-10 minutes, until the yeast starts bubbling. Into the same bowl, add first the flour, then the salt and olive oil. Using the dough hook, mix all the ingredients at low speed for about 7 minutes, until the dough becomes an elastic ball. When done, remove the dough from the hook and check out its texture. It should be smooth and elastic and slightly sticky. If it is too sticky, add just a little more flour (1/2 tsp), mix and check again.
- Coat lightly a bowl with some olive oil, place the dough inside and cover with plastic wrap. Let the dough sit in warm place for about 30 minutes. Knead the dough again at medium-high speed for 3-4 minutes.
- Turn the dough onto a working surface and divide into 12 pieces. Take one piece of the dough and roll out into a rope approx. 35cm long. Form a circle and join the ends pinching them together. Place the bread ring on a large baking tray, lined up with parchment paper and repeat with the rest of the dough. (You will need two large baking trays.)
- Prepare the ingredients for the garnish. In one bowl pour some water. In a separate bowl or tray place the sesame seeds. Dip the koulouria (bread rings) in water and then in sesame seeds, making sure to cover them on all sides. Place them back on your baking sheets, leaving some distance between them. Let them rise in a warm place for about 30 minutes. (For garnish you can also petimezi for extra flavour. Use 1/3 of a cup petimezi diluted in 1/4 of cup water and dip the bread rings first in the petimezi mixture and then in sesame seeds.)
- Bake in preheated oven at 200C for about 15 minutes, until nicely golden brown and crusty. Enjoy!

- Place flour into a large mixing bowl. Sprinkle yeast on one side of the flour and salt on the other side. Add milk, sugar, butter, and egg; mix to make a soft dough.
- Turn dough onto a lightly floured surface and knead until soft, smooth, and stretchy, about 10 minutes.
- Place dough into a large oiled bowl. Cover and let rise in a warm place until double the size, about 1 hour.
- Deflate the dough and divide into 16 pieces. Press each into English muffin rings. Sprinkle both sides with semolina and let rest another 30 minutes.
- Preheat a griddle to 400 degrees F (200 degrees C), or a heavy-based frying pan over low heat. Cook the muffins on the preheated griddle or pan until an instant-read thermometer inserted into the center of a muffin reaches 200 F (93 degrees C), 7 to 10 minutes per side.

- 1. Preheat oven to 350 degrees F.
- 2. Mix all ingredients together and stir until well mixed.
- 3. Pour mixture into a greased 7" by 10" by 2" baking pan. (Or something close to that size)

- Grease 2 cookie sheets.
- In a large mixing bowl, combine 1 1/2 cups flour, sugar, salt, and yeast.
- In a small saucepan, heat water, milk, and oil till very warm (120-130 degrees); add this to flour mixture.
- Blend on low speed till moistened; beat 2 minutes at medium speed.
- By hand stir in additional 3/4 to 1 1/2 cups of flour till dough pulls cleanly away from sides of bowl.
- On floured board, knead in 1/4 to 1/2 cups of flour till dough is smooth and elastic; about 5 minutes.
- Place in greased bowl; cover loosely with plastic wrap and cloth towel and let rise in warm place till light and doubled in size, about 40-50 minutes.
- Punch down and divide dough into 18 pieces.
- Roll each piece into a 8-inch rope.
- Form a ring, overlapping ends; press to seal.
- Rise is warm place till light and doubled in size--about 15 to 25 minutes.
- Brush rings with egg and sprinkle with seeds.
- Heat oven to 400 degrees.
- Place a 9x13 pan of water on lowest rack of oven.
- Place cookie sheet on middle rack over the baking pan.
- Bake at 400 degrees for 18-22 minutes until golden brown and rings sound hollow when tapped.
- Remove from oven and immediately brush with water; cool on cookie sheet.

- First thing to do when baking this bread? Decide on a timeframe. The dough is stirred together; rests for 10 hours; is put into a crock; rises for 2 hours, and bakes for 45 minutes. So that's just under 13 hours. It's a good weekend bread; stir it together Friday night at about 10 p.m.; scoop it into the crock about 8 a.m. Saturday; bake about 10 a.m., and your bread will be baked, cooled, and ready to slice by noon. ,
- Be sure you have something to bake the bread in, namely a 4- to 4 1/2-quart round, deep covered crock, Dutch oven, or casserole dish. It must be oven-safe (obviously); it really does need a lid, and it has to be deep enough (about 4") to hold the rising dough.
- To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Place all of the ingredients in a large mixing bowl. Stir to combine. At first the dough will stick to the spoon and follow it around the bowl. But once all the flour is completely absorbed (after about 10 seconds of vigorous stirring), the dough will become softer and stick to the sides of the bowl. That's it; you're done stirring.
- Cover the bowl and set the dough aside to rest at cool room temperature for 10 to 12 hours. If it's very hot and humid, do your best to find a cooler spot; about 68°F to 70°F is ideal. After its rest, the dough should be very bubbly and will have risen quite a bit.
